1 cup of organic rolled oats
1 medium-sized banana, mashed
1/2 cup oat flour
1/3 cup goji berries
1/3 cup organic coconut oil
1/3 cup pumpkin seeds
1 tablespoon chia seeds
1 tablespoon flaxseeds ground (linseeds)
1/4 cup oat milk or a plant-based milk alternative of your choice
1 teaspoon cinnamon
1/2 teaspoon baking soda
A dash of Agave syrup (optional)

Steps:

  • Instructions Preheat the oven to 150c or 302°F. In a large bowl, mash your banana. Then add the rest of the ingredients and stir until you have a cookie cough. The dough should be a little bit wet. If it is more on the dry side, try adding some more oat milk or plant-based milk of your choice. Use a tablespoon to make small scoops of the dough, spacing them well apart on the baking trays. This dough mixture should make about 9 cookies. Bake at 150c or 302°F for 17-20 minutes, until edges, become slightly browned. Leave on the tray for a couple of minutes to set and then lift onto a cooling rack. Fluffy and delicious chocolate chip Banana Oatmeal Muffins made with wholesome ingredients like Coach's Oats, Greek yogurt, and flax. They're perfect for a quick, filling breakfast or snack on-the-go!

1 cup nonfat plain vanilla Greek yogurt
3 tablespoons unsweetened vanilla almond milk
3 ripe extra bananas, mashed
2 tablespoons olive or avocado oil (can also use melted coconut oil or melted butter)
1 large egg
1 teaspoon vanilla extract
¾ cup Coach's Oats 100% whole grain oatmeal
1 cup whole wheat pastry flour
1/2 cup flaxseed meal
1 1/2 teaspoons ground cinnamon
1 teaspoon baking soda
¼ teaspoon salt
2/3 cup dark chocolate chips
¼ cup chopped walnuts or pecans

Steps:

  • Preheat oven to 400 degrees F. Line a 12 cup muffin pan with liners and spray the inside of the liners with nonstick cooking spray. This is important to do so that the muffins do not stick to the liners. I would recommend using liners, as they can be difficult to get out of the tin since they are larger muffins.
  • In a large bowl or blender, mix together the Greek yogurt, almond milk, mashed banana, oil, egg and vanilla until smooth and well combined. Transfer to a large bowl, and stir in Coach's Oats. Allow the mixture to sit for 5 minutes to soften the oats.
  • After 5 minutes, add in the whole wheat pastry flour, flaxseed meal, cinnamon, baking soda and salt. Stir until just combined. Fold in chocolate chips and chopped nuts.
  • Divide batter evenly between the liners. Bake for 7 minutes at 400 degrees, then reduce heat in oven to 350 degrees (do not open the door!) and bake for 13-16 minutes more or until tester comes out clean or with just a few crumbs attached. Allow to cool for 5 minutes in pan before removing and transferring to a wire rack to finish cooling.

Very nice texture, chewy, not too sweet!! Full of fiber, Omega 3's, lignans, and potassium. Very yummy and so very good for you. My daughter loves these. These are very good made with natural sugar as well ( I use natural sugar for my daughter). 1/2 to 1 cup, depending on how sweet you like it.

1/2 cup butter (1 stick)
3/4 cup Splenda brown sugar blend
2 eggs
1 1/2 cups flax seed meal
1 1/2 teaspoons vanilla extract
1 1/2 cups whole wheat pastry flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon nutmeg
1/8 teaspoon clove
3 medium bananas, ripe and mashed
2 cups rolled oats (pulsed in processor or quick oats)
1/2 cup walnuts, chopped

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy.
  • Mix in flax meal.
  • Beat in eggs and vanilla.
  • Combine the flour, baking soda, salt, cinnamon, nutmeg and cloves; add to creamed mixture and mix well. Stir in bananas, and oats ( I like to process thick oats in the food processor for just a minute, it makes a nicer texture). I prefer not to use quick cooking oats.
  • Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 375° for 10-12 minutes. Immediately remove cookies to wire racks to cool.
