I had some cider that was getting sour (hardening?) and I always use powdered milk for cooking and thought why not give it a try? So we had pancakes made with powdered milk and apple cider instead of liquid milk. Surprisingly yummy!

2 cups all-purpose flour
¾ cup powdered milk
2 tablespoons white sugar
1 teaspoon baking powder
½ teaspoon ground cinnamon
½ teaspoon baking soda
2 cups apple cider
¼ cup vegetable oil
2 eggs
1 teaspoon vegetable oil, or as needed

Steps:

  • Sift flour, powdered milk, sugar, baking powder, cinnamon, and baking soda together in a bowl. Whisk apple cider, 1/4 cup vegetable oil, and eggs together in a separate bowl. Stir apple cider mixture into flour mixture until batter is just combined.
  • Heat 1 teaspoon vegetable oil in a griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 2 to 3 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

Apple Cider Pancakes - sweet and fluffy pancakes made with apple cider and topped with cinnamon sugar apples! Perfect fall weekend breakfast!

2 cups all-purpose flour
4 Tablespoons granulated sugar
1 and 1/2 teaspoon ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup apple cider (NOT apple cider vinegar)
1 cup buttermilk
2 large eggs
4 Tablespoons vegetable or canola oil
2 teaspoons pure vanilla extract
1 cup shredded apples
2 to 3 apples (I used gala, washed, peeled, cored and chopped into large chunks)
1/2 cup packed brown sugar
2 Tablespoons unsalted butter
1 teaspoon ground cinnamon

Steps:

  • Heat a pancake pan or a large griddle over medium heat.
  • In a mixing bowl, whisk together the dry ingredients: flour, sugar, cinnamon, baking powder, baking soda and salt. Add shredded apples and stir to coat with flour mixture. Set aside.
  • In another mixing bowl, whisk together the wet ingredients: apple cider, buttermilk, eggs, oil and vanilla.
  • Add wet ingredients to dry ingredients and stir with a wooden spoon, Do not overmix. Batter should be lumpy.
  • Using a 1/4 cup scoops (or an ice cream scoop), pour batter on a hot griddle. Cook pancakes on the first side, until you see air bubbles appearing around the edge and toward the center. Flip and cook about 2 more minutes.
  • Place pancakes on a large plate and cover with aluminum foil each time you add to the stack to keep them warm.
  • Melt butter in a large skillet.
  • Add apple chunks. Cook stirring often, until apples are soft but not mushy.
  • Add brown sugar and cinnamon and cook until sugar melts into a syrup.
  • Remove from the heat.
  • Top pancakes with topping and serve.

1 quart apple cider
2 small apples, diced
1 teaspoon cinnamon
pinch of cloves
1 cup flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
1 egg
1/2 cup milk
2 tablespoons melted butter
cinnamon sugar for serving

Steps:

  • Begin by reducing the cider. Boil the cider in a saucepan until reduced to 1/4 of the original amount. Allow to cool completely. This can be made ahead.
  • While the cider is reducing, cook the apples. Mix apples, cinnamon, and cloves. Place in a sauce pan and cover just the bottom of the pan with water.
  • Heat over medium low heat until the apples become soft.
  • Prepare the pancakes by mixing the dry ingredients together.
  • In a small bowl beat the egg, then add the milk.
  • Add the milk mixture to the flour and mix until combined.
  • Add 1/3 cup of the reduced apple cider to the mixture and stir just until combined. Do not overmix.
  • Stir in melted butter.Stir in half of the cooked apples.
  • Heat a frying pan over medium heat. Add oil or butter to prevent sticking.
  • Drop 1/4 cup of batter into the hot pan. Turn the pancakes after the pancake begins to bubble.
  • Repeat with remaining batter.
  • Reheat remaining apple cider reduction if it has become cold.
  • Stack pancakes and top with remaining cooked apples, cinnamon sugar, and remaining reduced apple cider.
