YUMMIEST MEAT LOVER'S BREAKFAST BURRITO
A lot of breakfast burritos out there never seem to have enough meat! Here is a recipe that I whipped up one day when I was craving a filling breakfast style burrito.

Steps:
- I find it easier to pre-cook the bacon and breakfast sausages in microwave on a plate lined with paper towels to catch the drippings. For one bacon slice and 2 breakfast sausage links, it takes about 1-3 minutes depending on microwave power. Remove and let cool, then chop sausage and bacon into small bits.
- Meanwhile, quarter-slice the hot dog lengthwise into four thin strips, then dice.
- Dice up 1/4 cup of ham.
- Next, dice the tomato and green onions.
- Break the eggs into a medium sized bowl and whisk. Add a splash of milk, and salt and pepper to taste. Whisk in the chopped tomato and scallions and put aside.
- Heat a non-stick frying skillet over medium heat. Lightly coat the bottom with oil of your choice.
- Fry the diced hot dog and ham until lightly browned. Add the cooked breakfast sausage and sliced bacon to brown.
- Pour the egg mixture over the meat in the skillet and scramble.
- Just before taking out of pan, sprinkle shredded cheese throughout. The residual heat will melt the cheese to a nice, gooey consistency.
- Serve in a warm tortilla, and with salsa or hot sauce if preferred.
- Enjoy!

- Crumble and fry pork sausage, stir and separate meat so it will fry in small little pieces. Remove from heat drain and rinse with hot water, drain water from sausage. Place drained sausage in fry pan add onion, green chili's and tomatoes, heat on medium temperature just until sausage and vegetables are heated through, stir frequently.
- Measure 2 cups of eggs and beat. Add the eggs to the pan with the sausage mixture. When cooked remove from heat. Cover and store the sausage mixture that is not used and refrigerate. It will keep for several days for your next breakfast. In the middle of one flour tortilla shell place one slice of cheese in the middle. Spoon one - two tablespoons of the egg mixture and roll up the shell. Place on platter and cover with plastic and pop in microwave just long enough to heat and melt cheese. Serve with your favorite taco or Picante sauce. You will find these are milder and relay great for breakfast. I like to place sour cream and little avocado in mine.

- Scramble the egg whites with a little Pam. Remove.
- Dice onion and saute with with a little Pam till golden brown.
- Add the hash browns, cover and cook for 10 minutes, stirring once.
- Add salt, pepper, garlic powder and Worcestershire if using.
- Add the scrambled egg white, cheese and bacon.
- Divide filling evenly between the tortillas. Roll up and place seam size down in an empty pan and heat on medium till a little brown. Flip over and brown the other side of the tortilla.

- To skillet, add sausage, canadian bacon, onions & peppers. Cook together. Once sausage is done, throw in bacon & pepperoni. Let cook until sausage is done and all is heated thoroughly. Add in red pepper flakes & seasoning.
- In another skillet, spray with Pam and scramble eggs with cheese and cook until almost done. Spoon (with a slotted spoon to eliminate some of the grease) as much of the meat mixture as you like into the egg mixture. Once well combined, spoon into tortillas. Top with salsa, avocado, etc. or whatever you enjoy on your burrito! Enjoy!

MCDONALD'S BREAKFAST BURRITOS
Years (and years) ago, while in high school, I worked at McDonald's when they first came out with these wonderful creations. After all this time, I still love to make and eat them. I think they have changed it over the years for the dollar menu but this is the ORIGINAL recipe. Sometimes when I don't have fresh tomatoes I substitute a little salsa or some drained Rotel tomatoes taste the best. If you go with the Rotel option, you can omit the diced green chilies that are called for in the recipe.

- Mix together cooked and crumbled sausage, eggs, tomatoes, onions, chillies, salt and pepper.
- In a large, buttered non-stick skillet, over medium-high heat, gently stir until eggs have reached desired doneness.
- Fill a tortilla with 1/10 egg mixture and top with 2 slices of cheese laid end to end.
- Garnish with salsa and sour cream.
- Roll up and enjoy.
OAMC- CHORIZO, BACON, EGG BREAKFAST BURRITO
I used another OAMC recipe for the base and adapted this recipe to my taste. I think the Chorizo sausage goes well with the this burrito and gives it good flavor.

- First peel and cube the potatoes and fry them in a pan with oil of your choice.
- While the potatoes are cooking fry the bacon and then the chorizo sausage.
- Crack a dozen eggs and mix them together. ( I season with pepper and add milk) opitional.
- Cook the scrambled eggs and when they are done add them and all the other cooked ingredients into a large bowl.
- Mix them thoroughly.
- Make the sauce by mixing the mayo, mustard, and dill together.
- Spoon about 2 tablespoons of mixture into center of the burrito, add a desired amount of the sauce, add some cheese and wrap tightly. (at this point I wrap them in wax paper or freezer paper and seal them with freezer tape.).
- After all have been wrapped set them on cookie sheets and flash freeze for an hour or two. Then place into Ziplock freezer bags and use as needed.

- Lightly coat a nonstick skillet with cooking spray. Cook the onion and chiles in the skillet over medium heat for 3 minutes, stirring constantly.
