A combination of shortbread and macaroons, but not quite.

Number Of Ingredients 10

1 cup all-purpose flour
½ cup butter
2 teaspoons brown sugar
3 tablespoons strawberry jam
2 eggs
1 ½ cups packed brown sugar
2 tablespoons all-purpose flour
1 cup chopped walnuts
½ teaspoon salt
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 325 degrees F (170 degrees C).
  • To make Crust: Mix together first three ingredients and pack into the bottom of an 8 x 8 inch pan. Dot with strawberry jam.
  • To make Topping: Beat together the rest of the ingredients and pour over the crust.
  • Bake till firm for 30-35 minutes.

1 cup margarine
⅞ cup superfine sugar
1 egg, beaten
2 ¼ cups self-rising flour
2 ¼ cups cornflakes cereal

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • In a medium bowl, cream together the margarine and sugar until light and fluffy. Stir in the egg alternately with the flour until well blended. If it is a hot day, cover and refrigerate for a few minutes. Wet hands and roll the dough into small balls. Roll the balls in cornflakes to coat completely and place 2 inches apart onto the prepared cookie sheets.
  • Bake for 20 to 25 minutes in the preheated oven, until cornflakes are toasted.

  • Pour the water and milk into a jug and add the egg. Whisk together. Put the flour, yeast, sugar and salt into the bowl of the food processor and whizz once to mix. Then add the cold butter and whizz briefly to just cut up the chunks a tiny bit.
