LAYERED RAINBOW JELLO (VINTAGE RECIPE)
Layers of vibrant colors and flavors make this this vintage rainbow Jello ribbon salad recipe a total crowd pleaser!

Steps:
- You will be making two layers from each box of jello. Once you do the first one, you'll have the technique down.
- Use a clear Pyrex dish. The 9X14 size works great for six colors. If your dish is a little smaller, use 5 colors like I did this time.
- I use a 2-cup Pyrex measuring cup to boil my water and a second one for pouring off part of the jello.
- Put one cup of water in your Pyrex measuring cup and boil the water in your microwave. I used the two-minute setting for this.
- Carefully remove the measuring cup from the microwave and add one package of gelatin. Stir until it is completely dissolved.
- Then measure out ¾ cup of the jello into a second container. To this container, add 1/3 cup of sour cream and whisk until it is smooth.
- To the remaining jello, add 2 TB of cold water and mix.
- Pour this into a 9X13 clear baking dish and refrigerate until set.
- After 30 minutes, pull your dish out of the refrigerator and pour the sour cream mixture over the first layer.
- Place the dish back into the refrigerator for another 30 minutes to set.
- Wash your measuring cups and prepare the next layer of jello the same way you made the first layer -- one cup of solid color jello and one mixed with sour cream.
- Pour the clear jello mix over the top of the set layers. Then half an our later, add the sour cream mixture.
- Keep repeating this process until you have all the layers done.
- Cover with foil and refrigerate.

Steps:
- Prepare strawberry jello.
- Pour into 3 qt rectangular baking dish.
- Chill until almost set, about 1 hour.
- In large mixing bowl, dissolve lemon jello in 1 c.
- boiling water.
- Add marshmallows, whisk until marshmallows are almost melted.
- Whisk in cream cheese and mayonnaise until combined.
- Stir in UNDRAINED pineapple, set aside.
- In small mixing bowl, beat whipping cream until soft peaks form.
- Gently fold into lemon mixture, spoon on top of chilled strawberry jello.
- Spread over top evenly.
- Chill until almost firm, about 1 hour.
- Prepare lime jello.
- Chill until partially set, about 45 minutes.
- Pour over chilled lemon mixture.
- Cover and chill 4 hours or more.
- Cut into squares and serve.

- Add drained fruits.
- Add sour creme.
- Mix.
- Add cool whip.
- Mix all this together, gently, and freeze (YES FREEZE).

Looking through my recent gem of an older community cookbook found in one of my favorite antique stores, I found this delightful salad. It will go with almost any meal and could even be used as a dessert!

- In a medium saucepan, over medium heat, bring the crushed pineapple with its juice to a boil.
- Remove from the heat.
- Stir in the lemon jello followed by the cream cheese.
- Use a mixer, if needed, to get any lumps of the cream cheese out.
- Chill about 20 minutes.
- Fold in the whipped cream and spoon into a large pretty glass bowl.

- In a bowl, dissolve lime gelatin in 2 cups boiling water. Add 2 cups cold water; stir. Pour into a 13-in. x 9-in. dish coated with cooking spray. This was given to me by a dear friend who had gotten it from her mother-in-law. I was recently told I could share so I have because I have enjoyed this so often over the years. Really great at potlucks. Hope you enjoy it as much as I have.

Steps:
- 1. Combine crushed pineapple and sugar in medium sauce pan and bring to boil.
- 2. Add 4 envelopes knox gelatin dissolved in 1 cup of water. Stir until well mixed and remove from heat. Pour into large heat resistant bowl.
- 3. Set in refrigerator. When starting to gel (this takes approx. 1 1/2 hours) add 2 packages of cheddar cheese. I prefer the finely grated cheese. Mix well.
- 4. Fold in heavy whipping cream, whipped.
- 5. Return to refrigerator to set.
- 6. Once set, decorate top. I add m. cherries and mandarin oranges.
