KETO NOODLES - LOW CARB EGG NOODLES
Looking for a new keto noodles recipe? And one that doesn't call for spaghetti squash as the main ingredient? Well, most people don't know that you can make delicious low carb egg noodles easily.

- In a bowl, beat egg yolks and cream cheese. Add parmesan and mozzarella. Continue beating with a mixer. Sprinkle spices. Continue mixing well.
- In a parchment lined sheet pan, evenly spread egg and cheese mixture. Flatten with a spatula or back of a spoon.
- Place sheet pan in a preheated oven at 475°F and lower heat to 350°F. Bake for 5 to 8 minutes. Watch closely as you need to avoid overcooking. If small bubbles start to appear, lower heat to 300°F and continue baking for 2 to 3 minutes until all sides and center are done. (You can test for doneness just like testing a cake with a toothpick, if you wish).
- Allow to cool at room temperature for 10 to 15 minutes before slicing. Slice according to desired size, using a knife or pizza cutter. Serve with sauce, if desired.

These addicting stir fried noodles are also known as Filipino Pancit Canton. With shrimp, vegetables, and deliciously simple flavors.

- Mince the garlic and onion. Heat 1 tablespoon of oil in a large skillet. Add garlic and onion and stir-fry until soft, about 3 minutes. Add shrimp and cook, stirring frequently, until no longer translucent, about 3-5 minutes. Remove from heat and set aside.
- Chop the cabbage and peel and grate the carrot. Add another tablespoon of oil into the skillet and stir fry the vegetables until tender-crisp, about 5 minutes. Remove from heat and set aside.
- In a large pot, bring the chicken stock, soy sauce, and fish sauce to a boil. Add the pancit noodles and boil until the noodles are soft, about 5 minutes. Add the shrimp and vegetables to the pot and stir to combine.
- Add the remaining tablespoon of oil to a large skillet and add the contents of the pot. Stir fry the mixture for about 10 minutes. When most of the liquid has been absorbed, remove from heat and stir in the calamansi juice. Top with sliced green onions.

YUM YUM NOODLES
I received this from someone I don't even know in a recipe exchange. . too funny. . .but it's truly yummy as the title represents. Kids love it (and so do grownups). This recipe is made kid-friendly and mild, so if you prefer, feel free to jazz it up with spices such as garlic, onion, Italian Spices, Spike, Mrs. Dash or any other seasonings you like. You can also substitute out sausage for the beef. Bacon bits is another nice addition!

Steps:
- Cook noodles as per directions on the package (in the past, I have tried whole wheat noodles and they tend to fall apart in the oven).
- Brown meat in butter (I like to season with garlic, onion and italian seasonings). Add in tomato sauce. Simmer on low for 10 minutes.
- In a separate bowl, combine cottage cheese, sour cream, and noodles. Season with salt and pepper.
- In 9x13 pan layer 1/2 of noodle mixture, all of meat sauce and then remaining 1/2 of noodles. Top with shredded cheese (use as much as you like, but 1 cup is usually a good amount) and bake at 350 degrees for 25 minutes.
