2 eggs, beaten
1 1/2 cups milk
2 cups flour, sifted
1 teaspoon baking powder
1/2 teaspoon salt
2 cups cooking oil
to taste powdered sugar, sifted

Steps:

  • In mixing bowl combine eggs and milk.
  • Sift together flour, baking powder and salt. Add to egg mixture; beat smooth.
  • In deep skillet heat oil to 360 degrees.
  • Covering spout with finger, pour 1/4 cup batter into funnel.
  • Remove finger and release batter into oil in a spiral, starting in center and winding out. Fry until golden about 3 minutes.
  • Turn carefully, cook 1 minute more. Drain on paper towel, dust with powdered sugar.

8 cups vegetable oil for frying
1 ½ cups milk
2 eggs
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon ground cinnamon
½ teaspoon salt
¾ cup confectioners' sugar

Steps:

  • In a deep-fryer, or heavy skillet, heat oil to 375 degrees F (190 degrees C).
  • In a large bowl, beat milk and eggs together. Combine flour, baking powder, cinnamon and salt. Stir into the egg mixture until smooth.
  • While covering the funnel hole with one hand, pour in 1 cup of batter. Start from the center in a swirling motion to make a 6 or 7 inch round. Fry on both sides until golden brown. Remove and drain on paper towels. Sprinkle with confectioners' sugar and serve warm.

My family loves funnel cakes...that is one reason they always want to visit the travelling carnivals in our area. This recipe makes a pretty good funnel cake and the ingredients are usually handy.

2 large eggs, lightly beaten
1 1/2 cups milk
1/4 cup packed brown sugar
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
vegetable oil (for frying)
confectioners' sugar

Steps:

  • Combine the eggs, milk and brown sugar in a large mixing bowl.
  • In a separate bowl, combine the flour, powder and salt and beat into egg mixture until smooth.
  • In a chicken fryer or electric skillet, heat at least a half inch of oil to 375 degrees.
  • (I used a chicken fryer and had to keep the heat on high the whole time) Using a measuring cup or a funnel (keep your finger over the bottom of the funnel) and using a about a 1/2 cup of batter, release your finger and move the funnel or measuring cup in a spiral motion, forming the cake.
  • (Pour from several inches above the hot oil) Fry for about 2 minutes on each side or until golden brown.
  • Remove with tongs and place on paper plate or paper towels.
  • Repeat with remaining batter.
  • Dust each with confectioner's sugar and serve warm.

2 cups all-purpose flour, sifted
1 teaspoon baking powder
1/2 teaspoon salt
2 cups canola oil
1/2 cup confectioners' sugar

Steps:

  • Combine the eggs and the milk in a mixing bowl.
  • Sift together the flour, baking powder and salt.
  • Add the dry ingredients to the egg blend, and beat with an electric mixer until you have a smooth batter.
  • Test the mixture and see if it flows easily through a clean plastic funnel. If it's too thick, beat in a little milk. If it's too thin, add a little sifted flour.
  • In an 8-inch skillet, heat the canola oil to 360-degrees F.
  • Covering the bottom opening of the funnel with a finger, pour in at least 1/2 cup of batter into the top of the funnel. A partner will be very helpful.
  • Remove finger and release batter into the hot oil, moving the funnel in a spiral as you do so. Fry the funnel cake until golden brown, about three minutes. Use a wide spatula and some tongs to carefully turn the funnel cakes in the hot oil and fry the second side for about 1 minute.
  • Drain on paper towels and sprinkle with confectioner's sugar.
  • Serve the funnel cakes hot, with syrup if you wish.

1 cup 2% milk
1 cup water
1/2 teaspoon vanilla extract
3 cups all-purpose flour
1/4 cup sugar

Oil for deep-fat frying
Confectioners' sugar

Steps:

  • In a large bowl, beat eggs. Add milk, water and vanilla until well blended. In another bowl, whisk flour, sugar, baking powder and salt; beat into egg mixture until smooth. In a deep cast-iron or electric skillet, heat oil to 375°., Cover the bottom of a funnel spout with your finger; ladle 1/2 cup batter into the funnel. Holding the funnel several inches above the oil, release your finger and move the funnel in a spiral motion until all the batter is released, scraping with a rubber spatula if needed., Fry until golden brown, 2 minutes on each side. 1 teaspoon vanilla extract
2 cups flour, sifted
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup powdered sugar

Steps:

  • In a mixing bowl combine eggs and milk and vanilla.
  • sift dry ingredients together and add to egg mixture beating until smooth.
  • test batter to see if it flows evenly through funnel. If to thick add milk, if to thin add flour.
  • Pour about 2 cups cooking oil in 8 inch skillet and heat to about 360 degrees.
  • cover funnel tip with finger and add about 1/2 cup or so to funnel.
  • uncover funnel tip and release into hot oil in spiral patterns.
  • Fry until golden (about 2 or 3 mins). flip and fry other side (about 1 or 2 mins).
  • drain on paper towels and lightly dust with powdered sugar.

1/4 cup sugar
2 cups whole milk
3 2/3 cups all-purpose flour
1/2 teaspoon salt

Steps:

  • Beat together eggs and sugar. Add milk slowly and beat. Add all dry ingredients, beat until smooth. Pour batter in a funnel--hold the hole closed w/ your finger. Next, remove finger and create designs while pouring it into the hot oil. BE VERY CAREFUL! (2 inches of oil). Turn onto.
  • other side until both sides are golden brown. Drain on paper towels and sprinkle w/ powdered sugar. We also like to add cinnamon as well.

  • Pour enough oil into a skillet to completely coat the bottom and heat over medium-high heat.
