YUMMY YAM CASSEROLE
I call this the 'recipe with legs' because every time I serve it, the recipe is requested. Even those who dislike yams and sweet potatoes love this tasty dish! This dish can be frozen, but freeze it without the pecan topping. Defrost before baking.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Poke yams in several places with a fork, then cook them on high power in microwave oven until heated through and soft, about 20 minutes. When cooled, remove skins and place the yams in a large bowl.
- Beat yams until smooth. Then beat in one egg at a time, blending after each addition. Stir in 1/4 cup brown sugar, 1/8 cup melted butter, salt, cinnamon, allspice and nutmeg; beat until the mixture is light and fluffy.
- Transfer mixture to an ungreased 3 quart casserole dish. Arrange the pecans in a single layer on top. Sprinkle with remaining brown sugar and drizzle 1/4 cup melted butter over the top.
- Bake for 25 minutes in the preheated oven, or until browned and bubbly.

BREAKFAST SAUSAGE CASSEROLE

Steps:
- Heat a large skillet over medium-high heat; cook and stir the sausage in the hot skillet until crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Grease a 9x13 inch baking dish. Spread the bread cubes into the prepared dish; sprinkle the browned sausage and Cheddar cheese overtop.
- Beat the eggs in a mixing bowl until smooth; add the salt, mustard powder, and 2 cups of milk and whisk until evenly blended. Pour the egg mixture over the bread cubes. Cover and refrigerate overnight.
- Preheat an oven to 300 degrees F (150 degrees C). Whisk together the cream of mushroom soup and 1/2 cup milk; pour over the casserole.
- Bake in the preheated oven until firm and golden brown, about 1 1/2 hours.

- Preheat oven to 350 degrees F (175 degrees C).
- Cook corn according to package directions. Drain water, then mix in butter, cream cheese, garlic, sugar, salt, and parsley. Spoon into a casserole dish and bake in preheated oven for 30 minutes, until lightly browned on top.

Steps:
- 1. Preheat oven to 375 degree F. Grease a 9 × 13 casserole dish. In a medium skillet, over medium heat cook sausage, breaking apart as it cooks. When almost cooked, add the onions, pepper and garlic, continue cooking and occasionally stirring until vegetables are tender. Drain well and cool.
- 2. Mix eggs, milk, salt and pepper. Set aside. In a large bowl, toss together the potatoes, sausage mixture and 1 1/2 cup of cheese. Pour the eggs over potato mixture and stir to combine.
- 3. Spread into prepared casserole and top with remaining cheese. Cover and bake for 25 minutes. Remove foil and continue baking another 15 - 20 minutes or until starting to brown and eggs are cooked.
- 4. I leave it set up for a few minutes, then serve. Salt and pepper if desired. Enjoy, sure is yummy!
