1-1/2 pounds Yukon Gold potatoes (about 3 medium), cut into wedges
1 tablespoon olive oil
1/4 cup dry bread crumbs
1-1/2 teaspoons paprika
3/4 teaspoon salt
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
1/4 teaspoon ground cumin
1/8 teaspoon pepper
1/8 teaspoon cayenne pepper

Steps:

  • In a large bowl, toss potatoes with oil. Combine the remaining ingredients; sprinkle over potatoes and toss to coat. , Arrange potatoes in a single layer in a 15x10x1-in. baking pan coated with cooking spray. , Bake, uncovered, at 425° for 40-45 minutes or until tender, stirring once.

3 tablespoons butter or margarine
salt and pepper to taste

Steps:

  • Rinse potato cubes with cold water, and drain well. Melt butter or margarine in a large skillet over medium heat. Place potatoes in the skillet, and stir to coat with butter. Season with salt and pepper. Cover with a lid, and cook for 10 minutes. Remove the lid, and cook for another 10 minutes, turning frequently until brown and crisp on all sides..

Grilled Yukon Gold Steak Fries with Chile-Cheese Sauce image

6 large Yukon gold potatoes, scrubbed
1/4 cup canola oil
Kosher salt and freshly ground black pepper, for seasoning
Chile-Cheese Sauce, recipe follows
Fresh chopped cilantro leaves
Serving suggestions: Bobby's Mexican Fry Seasoning or Spanish Paprika Mayo Sauce, recipes follow
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
1 1/4 cups whole milk, heated
10 ounces grated white Cheddar
3 jalapeno chiles, grilled, peeled, seeded and finely diced
Pinch chile de arbol
Salt and freshly ground black pepper
1 1/2 tablespoons ancho chile powder
1 teaspoon ground cumin
1 teaspoon granulated onion
1/2 teaspoon dried oregano
2 teaspoons kosher salt
1 cup mayonnaise
1 tablespoon aged sherry vinegar
2 cloves finely chopped garlic
1 grilled plum tomato
2 teaspoons smoked Spanish paprika
Salt and freshly ground black pepper
2 tablespoons finely chopped flat-leaf parsley, plus leaves for garnish

Steps:

  • Place the potatoes in a large pot and cover with cold water. Bring the water to a boil, over medium heat, then reduce heat to a simmer and add 2 tablespoons of salt. Cook until potatoes are tender, but still firm, about 10 minutes. Drain, let cool and cut each potato lengthwise into 8 slices.
  • Heat grill to medium-high. Brush the potatoes with the oil and season with salt and pepper. Grill until golden brown and cooked through, about 2 to 3 minutes per side. Transfer the potatoes to a platter and drizzle with the sauce, garnish with fresh cilantro or serve sauce, on the side, as a dip.
  • Melt the butter in a small saucepan over medium heat, add the flour and cook for 1 minute. Slowly whisk in the milk and cook until thickened, about 3 minutes. Whisk in the cheese a little at a time until smooth.
  • Add the jalapenos, chile de arbol and season with salt and pepper. Keep warm.
  • Combine all ingredients in a small bowl.
  • Put mayonnaise, vinegar, garlic, tomato and paprika in food processor and process until smooth; season with salt and pepper. Scrape into a bowl and stir in the parsley.

This is a great recipe for homefries from my Dad. Reduce or increase the recipe as needed for your crowd. This feeds 6-8. I like to cook the potatoes the night before to cut down on prep time. Enjoy.

bacon drippings (from 1/2 lb. fried bacon)
6 eastern potatoes, peeled & boiled
3 tablespoons dried onion flakes
1 tablespoon sweet Hungarian paprika

Steps:

  • Slice boiled potatoes when cool. Cut to desired thickness. I cut mine up to 1/2 inch thick and not necessarily into perfect slices.
  • Fry up bacon until crisp and set aside. You will not be adding the bacon to the dish.
  • Put potatoes into pan or skillet containing bacon drippings that is heated to medium-high heat.
  • Add onion flakes and stir gently, making sure as many pieces of potato as possible are flat in the bottom of the pan.
  • Let potatoes get golden-to-medium brown on one side (five minutes?) and sprinkle paprika over potatoes.
  • Flip potatoes over and continue to cook until other side is similarly cooked.
  • Serve immediately.

2 tablespoons extra-virgin olive oil
1 onion, chopped
1 red bell pepper, seeded, deveined, and diced
1 jalapeño pepper, seeded and diced
4 to 5 Yukon Gold potatoes, peeled and cut into 1­inch dice
1 sweet potato, peeled and cut into 1 ­inch dice
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon sea salt
Freshly ground black pepper

Steps:

  • In a sauté pan over medium heat, heat 1 tablespoon of the oil. Add the onion and peppers and cook until the onion is softened, about 5 minutes. Add the remaining oil, then add the potatoes, oregano, thyme, salt, and pepper to taste. Lower the heat and continue to cook, stirring often, until the potatoes are nicely browned, 20 to 25 minutes. Serve at once.

We used small potatoes for this recipe. If your potatoes are larger, adjust the cooking time.

Number Of Ingredients 9

2 1/2 pounds small Yukon Gold potatoes
Coarse salt
3/4 pound thick-sliced bacon, cut into 1/2-inch pieces
1 small red bell pepper, cut into 1/2-inch dice
1 small yellow bell pepper, cut into 1/2-inch dice
1 red onion (about 10 ounces), cut into 1/2-inch dice
1 tablespoon fresh thyme leaves
2 tablespoons roughly chopped fresh flat-leaf parsley
Freshly ground black pepper

Steps:

  • Place the potatoes in a medium saucepan. Cover with water; bring to a boil over high heat. Salt the water. Reduce heat to medium-high; cook until the potatoes have softened but are still slightly firm, 12 to 15 minutes. Drain in a colander. When cool enough to handle, peel the potatoes; cut into 1-inch pieces. Set aside.
  • Cook the bacon in a large skillet set over medium heat until all the fat has been rendered and the bacon is crisp and brown, about 15 minutes. Remove the bacon with a slotted spoon; set aside on a paper towel to drain. Pour off all but 2 tablespoons of the bacon fat. Add the reserved potatoes; cook over medium heat, stirring occasionally, until golden on all sides, about 10 minutes. Add the reserved bacon, peppers, onion, and thyme; cook until the vegetables have softened, 5 to 7 minutes. Stir in the parsley, and season with salt and pepper. Remove from heat, and serve.
