Best Yorkshire puddings image

The secret to getting gloriously puffed-up Yorkshire puddings is to have the fat sizzling hot and don't open the oven door!

Yield Makes 8 large puds or 24 small

Number Of Ingredients 4

140g plain flour (this is about 200ml/7fl oz)
4 eggs (200ml/7fl oz)
200ml milk
sunflower oil , for cooking

Steps:

  • Heat oven to 230C/fan 210C/gas 8.
  • Drizzle a little sunflower oil evenly into two 4-hole Yorkshire pudding tins or two 12-hole non-stick muffin tins and place in the oven to heat through.
  • To make the batter, tip 140g plain flour into a bowl and beat in 4 eggs until smooth.
  • Gradually add 200ml milk and carry on beating until the mix is completely lump-free. Season with salt and pepper.
  • Pour the batter into a jug, then remove the hot tins from the oven. Carefully and evenly pour the batter into the holes.
  • Place the tins back in the oven and leave undisturbed for 20-25 mins until the puddings have puffed up and browned.
  • Serve immediately. You can now cool them and freeze for up to 1 month.

9 ounces all-purpose flour, approximately 2 cups
1 1/2 teaspoons kosher salt
4 large eggs, room temperature
2 cups whole milk, room temperature
1/4 cup beef drippings, divided*

Steps:

  • Preheat oven to 400 degrees F.
  • Leave 2 tablespoons of drippings in the roasting pan and place in the oven.
  • Place the flour, salt, eggs, milk and remaining 2 tablespoons of drippings into the bowl of a food processor or blender and process for 30 seconds. Pour the batter into the hot roasting pan and bake for 35 to 40 minutes or until puffed and golden brown. While the pudding is cooking, carve the roast. Serve the pudding with the roast.

Here is recipe I came up with while cooking roast beef dinner. These Yorkies stay tall and have a perfect hollow centre for lots of yummy gravy.

4 eggs
2 cups all-purpose flour
2 cups milk
¼ cup vegetable oil

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • In a large bowl, whisk together the eggs and milk until well blended. Whisk in the flour one cup at a time until frothy and well blended. Set aside.
  • Distribute the oil equally among 12 muffin cups, a little over a teaspoon per cup. Place in the oven for 5 to 10 minutes, until smoking. Remove from the oven and quickly ladle about 1/4 cup of batter into each cup.
  • Bake for 30 to 35 minutes in the preheated oven. Serve immediately. I turn my oven off and leave the door partially open with the yorkies inside to keep them from deflating while waiting for everyone to ask for seconds.

1/2 teaspoon salt
3 eggs
3/4 cup milk
1/2 cup pan drippings from roast prime rib of beef

Steps:

  • Preheat the oven to 450 degrees F.
  • Sift together the flour and salt in a bowl. In another bowl, beat together the eggs and milk until light and foamy. Stir in the dry ingredients just until incorporated. Pour the drippings into a 9-inch pie pan, cast iron skillet, or square baking dish. Put the pan in oven and get the drippings smoking hot. Carefully take the pan out of the oven and pour in the batter. Put the pan back in oven and cook until puffed and dry, 15 to 20 minutes.

3/4 cup all-purpose or light spelt flour
pinch sea salt
2 large, free-range eggs
1 1/4 cups milk
8 teaspoons vegetable or light olive oil for the muffin tin

Steps:

  • Preheat the oven to 400°F.
  • Sift the flour into a medium-sized mixing bowl and add a pinch of salt. Crack the eggs in and whisk together with the flour, then gradually pour in the milk, stirring constantly. Beat all the ingredients together until the batter is the consistency of cream. Refrigerate the batter for 30 minutes.
  • Pour 1 teaspoon of oil into the bottom of each of the 8 wells in a non-stick muffin tin. Put the muffin tin in the oven to heat the oil until it's very hot-almost smoking hot (about 5 minutes).
  • Give the batter a quick stir and then pour it equally into each well in the tin (you should hear it sizzle and it should bubble). Return the tin to the oven and bake the puddings for 20-25 minutes, until they have risen and are deep golden brown. These are wonderful with Sage and Onion "Roast".

1 ¼ cups all-purpose flour
2 cups low-fat milk

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Spread shortening into a 9x13 inch baking pan and place on center rack in oven.
  • In a medium bowl, mix flour and 1 cup milk until a smooth paste is formed. Whisk in eggs one at a time, mixing thoroughly after each addition. Whisk in remaining 1 cup milk.
  • As soon as shortening in oven has begun to smoke, remove pan from oven and pour in batter. Bake in preheated oven for 20 minutes, until golden brown and fluffy. Remove and allow to sit 5 minutes. Slice and serve immediately.

1 tsp. salt
Oil for pans (or fat, beef drippings)

Steps:

  • Beat first four ingredients together to form a smooth batter and air bubbles form on the top. Stand for at least ½ hour at room temperature. Poor 1 tsp. of vegetable oil or drippings into each yorkshire muffin tin, or a regular muffin tin will also work, and place in a 425 degree oven until oil is very hot - almost smoking, being careful not to burn. Take out of oven and immediately pour batter into the tins - approx. 2/3 full and bake at 425 degrees for approximately 15-20 minutes, or when they look golden brown and have puffed right up.
