6 cups water
1 beef bouillon cube
1/2 cup rice, washed and drained
2 cups yogurt
1/2 cup milk
1 egg yolk
1/4 cup flour
2 tablespoons butter
1 tablespoon dried mint
sea salt

Steps:

  • In a large pot boil the water, rice, salt and bouillon. Cook on medium high, until the rice is done.
  • Meanwhile in a bowl, mix yogurt, milk, egg yolk and flour. After the rice is cooked, take a few spoons of liquid from the pot and mix into the bowl. Then slowly pour your mixture into the pot while stirring very slowly. Cook for 10 more minutes on low heat.
  • Place the butter in a frying pan. When it begins spitting, stir in the mint and pour into your soup.
  • Serve immediately.

Turkish yogurt soup is the perfect option for a light meal. This warm yogurt soup is simple, healthy, and naturally vegetarian.

1/2 cup white rice (washed and rinsed)
5 cups water (see notes )
1.5 cup plain Greek yogurt (room temperature)
1 egg (room temperature)
1 tbsp all purpose flour
1 tsp salt (more if needed)
2 tbsp unsalted butter (see notes)
2 tbsp dried mint (see notes)

Steps:

  • Place the rice and 3 cups of water in a large pot and bring to simmer. Cover and cook for about 40 minutes until the rice is fully cooked and has fallen apart. If after 40 minutes, the rice hasn't fallen apart, add one more cup of water and cook for 15 more minutes.
  • In a large bowl, mix yogurt, egg, flour and salt.
  • Once the rice is cooked and has broken into very small pieces, turn the heat off.
  • using ladle, slowly add about 1 1/2 cup of the rice and water to the yogurt and egg mixture and stir well after each addition.
  • Add the yogurt and egg mixture back into the pot. Stir well, turn the heat on to medium and bring to a low simmer.
  • Simmer for 15 minutes, stirring occasionally.
  • In a small pan, melt the butter and saute dried mint for about 30 seconds.
  • Add sauteed mint and butter to the simmering soup. Stir well.
  • Serve Turkish yogurt soup warm.

1 full tbsp. all purpose flour
2 tbsp. Butter
1 1/2 cup yogurt
1/2 cup baldo rice
1 egg yolk
1 tbsp. dried mints
Salt
5 cup water (you can also use chicken or meat broth)

Steps:

  • First of all wash your 1/2 cup baldo rice and boil it with 3 cup water in a medium pot until it softens.
  • When rice is cooked take it from stove, add 2 more cup of water and leave it a little to cool down.
  • We will give consistency to our soup with liaison technique. Add your 1 egg yolk, 1 1/2 cup yogurt, 1 full tbsp. All purpose flour in a medium bowl and stir until it combines for the liaison.
  • Add 8-10 tbsp. from your warm Turkish yogurt soup one tbsp. At a time to your liaison and stir it to adjust the liaison to the soup. If you skip this step your liaison can be broke.
  • Pour your liaison into your pot slowly and boil your soup for about 5-10 minutes.
  • Season your soup with salt.
  • Melt your 2 tbsp. Butter in a pan, add your 1 tbsp. Dried mints and stir until the dried mints gives its scent.
  • Pour your butter mixture into your Turkish yogurt soup and stir.
  • Your soup is ready.

A delicious Turkish dish-the rich meat is offset by the cool yogurt.

6 sheep's feet
Rind of 1/2 lemon
2 large cloves garlic
Salt and pepper
6 thin slices bread, crusts removed, toasted
2 cups plain whole-milk yogurt
2 cloves garlic, crushed
Salt and white pepper
3 tablespoons butter
1 teaspoon paprika

Steps:

  • Scrub the feet thoroughly. In a large pan, blanch them in boiling water for 5 minutes and throw out the scum with the water.
  • Cover with fresh water, and add the lemon rind, garlic, salt, and pepper. Bring to the boil and simmer for 3-4 hours, until the meat is practically falling off the bones.
  • Lay the slices of toast in one layer in a large shallow ovenproof dish, and moisten well with stock from the feet. Extract the feet and bone them, arranging the meat on top of the soaked toast. Sprinkle on more stock if the dish seems too dry (reserving some for the garnish), cover, and keep warm, or reheat when ready to serve.
  • Prepare the garnish when ready to serve. Beat the yogurt with a few tablespoons of stock, the garlic, salt, and white pepper. Melt the butter in a small saucepan and add paprika.
  • Remove the dish from the oven and serve smothered with the yogurt and sprinkled with a trickle of red paprika butter.

This is so delicious. With a sauce of garlicky yogurt and cucumber. Traditionally this dish is made with ground lamb but I make it with ground beef. A tweaked version of Recipe #131701. Great meal with a salad on the side masha Allah.

3 -4 garlic cloves (pretty large size)
1 cup balkan yogurt (thick type)
1 teaspoon of fresh mint, chopped
1 1/4 tablespoons fresh lemon juice (to taste)
1/4 English cucumber
sea salt, to taste
2 tablespoons good quality olive oil
1 medium onion
3 tablespoons butter, divided
1 1/2 tablespoons minced flat leaf parsley
3/4 lb lean ground beef (I use extra lean and add a lot of good olive oil or it will be too dry)
baharat mixed spice (Turkish Baharat Spice Mix or Baharat Aka Middle East Mixed Spices - the Real Mix)
1 1/2 teaspoons chopped of fresh mint (May not be needed, see directions.)
sea salt, to taste
170 g rice pasta (May use regular if not gluten free. I prefer macaroni or farfalle shape in this)
3/4 teaspoon sweet paprika

Steps:

  • Bring a small amount of salted water to a boil, add garlic with skin on and cook for 7 minutes. Drain, slip from skins and crush with a fork.
  • Stir yoghurt with crushed garlic, mint & freshly squeezed lemon juice until smooth, set in refrigerator.
  • Grate English cucumber and set in a sieve, sprinkle with sea salt. Let drain 15 minutes.
  • Squeeze out liquid from cucumber and mix with yogurt mixture. Add more sea salt and lemon to taste if needed.
  • Bring salted water for pasta to a boil.
  • Peel onions. Cut and chop in a food processor until a pulp.
  • Heat olive oil over medium high, add onions and reduce heat cooking until transparent.
  • Add 1 tbs butter, parsley and lean ground beef and cook until no more pink shows, stirring to break apart often.
  • Add Baharat, If using Turkish skip the fresh mint or add fresh mint now. Add sea salt to taste. Cook until done.
  • While frying the meat, cook pasta as per package directions. Drain and add lots of butter (2 tbs) & the sweet paprika. Mix.
  • Add ground beef and mix with pasta or if preferred place pasta on serving dishes and spoon ground beef over top. Serve with Cakik (yogurt sauce) and a fresh salad.
