Easy Yogurt Cake image

This is an easy yogurt cake that uses the yogurt container to measure all of the ingredients. It's ready in under an hour and the perfect not-too-sweet snack or breakfast treat. It's known in France as "Gâteau au Yaourt" and is typically the first cake that French children learn how to make. My son attends a French school and has made this with his classmates.

1 (5 ounce) container plain yogurt
3 fluid ounces 1/2 yogurt container vegetable oil
2 large eggs eggs
7 ⅞ ounces 1 1/2 yogurt containers white sugar
1 teaspoon vanilla extract
5 ⅞ ounces 1 3/4 yogurt containers all-purpose flour
2 ½ teaspoons baking powder
1 pinch salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch round springform cake pan.
  • Empty the yogurt into a mixing bowl. Measure the oil, using the yogurt container, and add to the yogurt. Set aside. Rinse yogurt container and dry with paper towel to continue using it as a measuring tool.
  • Add eggs, sugar, and vanilla extract to the yogurt-oil mixture. Beat well until thoroughly combined. Add flour, baking powder, and salt. Stir until just combined; batter will be thick. Pour into the prepared cake pan and spread to level the top.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 25 to 30 minutes.

This is a rich, moist and delicious spiced pound cake I have had since 1974 and always make it during fall and winter months. The cake needs no frosting except maybe a dusting of confectioners sugar.

2 cups white sugar
1 cup butter, softened
2 ¼ cups all-purpose flour
1 cup plain yogurt
3 eggs
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 teaspoon ground allspice
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
½ teaspoon salt
½ teaspoon baking soda

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch baking pan.
  • In a large bowl, cream the butter or margarine with the sugar until light and fluffy.
  • Beat in the flour, yogurt, eggs, vanilla, cinnamon, allspice, nutmeg, ground cloves, salt and baking soda. Mix until combined then beat at high speed for 2 minutes.
  • Pour the batter into the prepared pan and bake at 350 degrees F (175 degrees C) for 30 to 35 minutes or until a toothpick inserted near the center comes out clean. Cool cake in pan on a wire rack for 15 minutes, remove from pan and continue to cool.

Steps:

  • In large bowl, mix flour, sugar, baking soda, baking powder, cinnamon, allspice, salt and cloves.
  • Add applesauce, yogurt, egg, and oil; mix well.
  • Stir in raisins (note: I like to soften the raisins in hot water for a few minutes before adding them-they're plumper and softer that way).
  • Pour into greased and floured 12-cup Bundt or 13 x 9 inch pan.
  • Bake at 325 F.
  • for 50- 60 mins, or until toothpick inserted in center comes out clean.
  • Cool 15 mins.
  • Serve with Quick Yogurt Glaze: Glaze: In small bowl, combine Dannon Plain Nonfat Yogurt, brown sugar and vanilla.
  • Beat with fork or whisk until smooth.

2/3 cup firmly packed cup brown sugar
1 teaspoon ground cinnamon
3/4 teaspoon baking powder

1/3 cup olive oil
1/2 cup plain Greek yogurt
1/2 cup unsweetened applesauce (or homemade applesauce)
1 teaspoon vanilla extract
Powdered sugar, for dusting

Steps:

  • Preheat the oven to 350F. Grease an 8-inch square baking pan.
  • Put the flour, brown sugar, cinnamon, baking powder, baking soda, and salt into the baking pan. Use a fork to thoroughly mix the ingredients together.
  • Use your hands to make a hole in the center of the dry ingredients. Into the hole, crack the egg and add the olive oil, yogurt, applesauce, and vanilla. Use a fork to mix the ingredients together until smooth and blended. Smooth the top of the batter with the side of a butter knife.
  • Bake until the cake is fairly firm when you press lightly at its center and a toothpick inserted in the middle has no wet batter sticking to it, 25 to 30 minutes.
  • Remove from the oven and leave on the counter to cool completely, 1 hour. Leave the cake in the pan. Dust with powdered sugar. Cut into pieces and use a small spatula to lift them from the pan.
