CHICKEN SAMOSAS

4 cups all-purpose flour
1 teaspoon salt
2/3 cup canola oil
3/4 cup water
FILLING:
1 tablespoon canola oil
1 small onion
1/2 cup chopped peeled potato
2 tablespoons curry powder
2 garlic cloves, minced
2 teaspoons minced fresh gingerroot
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper
3/4 pound ground chicken
1/2 cup frozen peas
1/2 teaspoon salt
Oil for deep-fat frying
Chutney, optional

Steps:

  • In a small bowl, combine flour salt and oil until mixture resembles bread crumbs. Gradually stir in water until smooth. Turn onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes. Cover and let rest for 30 minutes., Meanwhile, in a large skillet, heat oil over medium heat. Add onion and potato; cook and stir until potato is almost tender, 5-7 minutes. Add curry, garlic, ginger, cumin, coriander and cayenne; cook 2 minutes longer. Add chicken; cook and stir until chicken is no longer pink and potato is tender, 5-6 minutes. Stir in peas an salt. Remove from heat., Divide dough into eight pieces. Roll one piece of dough into a 9x6-in. oval. Cut dough in half. Moisten straight edge with water. Bring one corner of half moon up to meet the other corner of the half moon, forming a cone. Pinch seam to seal. Fill with about 2 tablespoons chicken mixture. Moisten curved edge of dough with water; fold over top of filling and and press seam to seal. Repeat with remaining dough and filling., In an electric skillet or deep fryer, heat oil to 375°. Add samosas, a few at a time, into hot oil. Fry until golden brown, 2-3 minutes on each side. Drain on paper towels. Serve warm with chutney if desired.

Cilantro and yogurt give these samosas the Indian flavor. This is an amazing recipe that will surprise you with how easy it is to make samosas like an Indian restaurant.

1 tablespoon vegetable oil
2 onions, finely chopped
1 cup plain yogurt
1 teaspoon curry powder
½ teaspoon chili powder
2 tablespoons chopped fresh cilantro
¼ cup chopped fresh cilantro
1 (16 ounce) package frozen phyllo dough, thawed
½ cup plain yogurt
3 tablespoons half-and-half cream
¼ cup water
1 cup all-purpose flour
3 cups oil for frying, or as needed

Steps:

  • Heat one tablespoon of oil in a skillet over medium heat. Add the onion, and cook until browned. Stir in 1 cup of yogurt, curry powder, chili powder, and 2 tablespoons of cilantro. Cook and stir until most of the liquid has evaporated. Remove from the heat, and stir in the remaining cilantro.
  • Lay out one sheet of phyllo dough, and cover the rest with a damp towel. Place about 1 tablespoon of the onion mixture onto the corner, not too close to the edge of the sheet of dough, then fold up into fourths toward the opposite side to enclose the filling. Starting with the filled end, fold towards the other end in a triangle shape, pressing the edges with moistened fingers to seal. Repeat with remaining filling and dough.
  • Heat 3/4 inch of oil in a deep heavy skillet over medium-high heat to 365 degrees F (185 degrees C). In a small bowl, stir together the remaining yogurt, half-and-half, and water. Dip the samosas in the yogurt mixture, then dredge in flour, and shake off the excess.
  • Fry in small batches so they are not touching, for about 4 minutes, turning once. Drain on paper towels and serve warm.

A Indian inspired vegetarian appetizer with a delicious filling, crispy filo pastry and a cool cilantro sauce!

For the Samosas:
2 medium baking potatoes (like russet), peeled, cubed into ½" cubes
2 TBSP. sunflower (or vegetable) oil
1 small red or yellow onion, minced
2 garlic cloves, minced
1 TBSP. fresh ginger, grated
½ tsp. cumin
1 tsp. coriander, ground
½ tsp. garam masala
½ tsp. ground turmeric
¼ tsp. cayenne pepper
¾ tsp. salt
¼ cup warm water
½ cup green peas, frozen and thawed
½ cup fresh cilantro, chopped
1 box (16oz) filo pastry (I used Fillo Factory), defrosted
--- melted butter
For the cilantro-ginger sauce:
1½ cup fresh cilantro leaves, packed
1 TBSP. fresh lemon juice
1 TBSP. grated ginger
¼ - ½ cup plain, strained yogurt
¼ tsp. cumin
¼ tsp. salt
¼ tsp. sugar

Steps:

  • Remove the package of thawed filo from the refrigerator and let it come to room temperature while you work on the filling.
  • Peel and cut the potatoes into small cubes. Place them in a pot with boiling water over medium high heat and cook the potatoes for about 5 minutes, or until they are fork tender. Drain them, reserve a little of the cooking water, and set aside.
  • While the potatoes are cooking, set a medium skillet over medium high heat. Add the vegetable oil and sauté the onion until translucent, about four minutes. Then add the garlic and the ginger, and cook for a few more minutes until caramelized and fragrant. To the skillet, add the cumin seeds, the coriander, garam masala, turmeric, and cayenne pepper. This step is important-it will allow the spices to bloom and give the mixture a deep flavor.
  • Next, add the potatoes to the skillet and season everything with salt. With the back of a wooden spoon, mash the potatoes gently and add about ¼ cup of the reserved cooking water to loosen up the mixture. Gently fold in the peas, cover the skillet and turn off the heat.
  • To make the dipping sauce, place all ingredients in the bowl of a small food processor or a small blender and mix until the sauce is smooth. Taste and adjust the seasoning. Refrigerate the sauce until ready to use.
  • Preheat the oven to 375°F.
  • Melt about ⅓ cup of butter and let it cool. Place one filo sheet on a clean surface. With a pastry brush, brush the filo with some butter. Top with a second filo sheet and brush it with some butter again. Cut the filo vertically into 8 strips. Place a spoonful of the filling in the bottom right corner of the pastry strip. Fold the pastry into a triangle, rolling it all the way to the top. Repeat with the rest of the filo until the entire filling is used.
  • Place the samosa triangles on two baking sheets lined with parchment paper. Brush the tops with some of the melted butter. Bake for about 20 minutes or until crisp and lightly brown. Remove from the oven and let them cool. Serve warm or at room temperature with the dipping sauce.

Samosas are flaky pastries filled with spicy potatoes and peas. In traditional Indian cuisine, they are deep-fried (and that is still and option). But baking them works very well and is easier and more healthful. All components can be made well ahead of time. Finished samosas can be stored for days in the refrigerator or freezer. Make the Dipping Sauce while the Samosas bake. Serve samosas with any curry or as a simple supper with Gingered Carrot Soup and Raita.

2 1/2 cups flour
1/2 teaspoon salt
1 cup buttermilk or yogurt
Extra flour as needed
2 large potatoes (the size of a large person's fist)
1 tablespoon butter
1 cup finely minced onion
2 medium cloves garlic, minced
1 tablespoon freshly grated ginger
1 teaspoon mustard seeds
1 teaspoon dried coriander (if available)
3/4 teaspoon salt
1 1/2 cups uncooked green peas (frozen, thawed=fine)
2 tablespoons lemon juice
Cayenne, to taste
1/2 cup cider vinegar
1/2 cup water
3 tablespoons brown sugar
1 small clove garlic, minced
1 teaspoon salt

Steps:

  • Dough 1) Place the flour in a medium-sized bowl. Mix in the salt. 2) Make a well in the center, and add the buttermilk or yogurt. Mix first with a spoon and then with your hand, to make a smooth dough. 3) Add extra flour, as needed, to keep the dough from being sticky. The dough will be quite soft. knead in the bowl for about 5 minutes. Cover tightly and refrigerate until you are ready to assemble the pastries.
  • Filling: 1) Peel the potatoes and chop them into 1-inch pieces. Place in a saucepan, cover with water, and boil until very soft. Drain and transfer to a medium-sized bowl. Mash and set aside. 2)Melt the butter in a heavy skillet. Add onion, garlic, ginger, mustard seeds, coriander, and salt. Saute over medium heat about 8 to 10 minutes, or until onions are quite soft. Add this to the mashed potatoes, along with the remaining ingredients. Mix well, but try not to smash the peas. Cool for at least 15 minutes before filling the pastries.
  • To Assemble and Bake: 1) Preheat the oven to 425 degrees F. Generously oil a baking sheet. 2) Keep a small container of flour, a fork, a small bowl of water, and a pastry brush close at hand. Flour a clean surface, and, one by one, roll 1-inch balls of dough into 5-inch circles, using a rolling pin. 3) Place approximately 1 1/2 tablespoons filling in the center of each circle, and fold over, just like a turnover. Brush the inside edges of each circle with a little water, and fold the edges together to make a small hem. Crimp the edges firmly with a fork. Store in the refrigerator or freezer until baking time. 4) To bake: Place the samosas on the oiled baking sheet. Brush the tops with oil. Bake 15 minutes at 425 degrees F., then reduce heat to 375 degrees F. and bake for 10 minutes more. For maximum crispness, turn the samosas over when you turn the oven down. 5) Serve within 5 minutes of baking, with Dipping Sauce. A nice way to serve the sauce is in individual saucers or tiny bowls, so each person can hold both samosa and sauce directly under his or her face while eating, and the sauce bowl can catch the drips. (It does drip, but that's one of the charms of this ritual.)
  • For the dipping sauce: 1) Place all ingredients in a small saucepan. Stir until the sugar dissolves. 2) Heat to boiling, then let simmer uncovered for about 10 minutes. it will reduce slightly. 3) Serve warm or at room temperature with hot samosas.

I know there are several samosa recipes out there, but our family just loves these. They are totally worth the time it takes to make them. From The Moosewood Cookbook. Number of servings is approximate - it's plenty for 4 or 5 people. Note: I find I often have more filling than pastry, but I have also found that the filling freezes fine if you want to save it for another batch - or you can just mix up some more dough and eat it all! I've used leftover piecrust in a pinch and just thrown them in the oven to brown rather than frying and they came out just fine.

2 large potatoes, cooked and mashed
1 cup finely minced onion
2 medium garlic cloves, crushed

1/2 cup cooked green peas

4 tablespoons melted butter
1/3 cup yogurt
water

Steps:

  • Filling:.
  • Heat butter in heavy skillet.
  • Add garlic, ginger, onion, salt and mustard seeds.
  • Saute 6-8 minutes, or till onion is soft and clear.
  • Combine all ingredients, except peas, and mix well.
  • Fold in peas last, taking care not to smash them.
  • Pastry:.
  • Sift together flour and salt.
  • Add melted butter, yogurt and enough water to make a stiff dough.
  • Knead till smooth and elastic.
  • Roll out very thin (1/4 inch) on a floured board and cut into 4 inch circles.
  • Keep rolling and cutting till you've used all the dough.
  • Place a Tablespoon of filling (approximately) in the center of each circle, leaving edges free.
  • Brush edges with a little water, fold over and seal by pressing with a fork.
  • Heat a 3-inch pool of oil (vegetable, canola, or peanut oil) in a heavy skillet to about 365 degrees.
  • Make sure the oil is hot enough (it should bounce a drop of water on contact).
  • Fry samosas till golden.
  • Drain well and serve. Excellent with chutneys and raitas.
