FROZEN YOGURT AND FRUIT POPS
If a parfait and an ice cream bar got together, the logical conclusion would be this refreshing frozen treat. Greek yogurt, honey, and puréed fruit (we used strawberry, blueberry, and mango) are swirled together into molds and frozen for an all-ages treat.

Steps:
- Make the simple syrup: In a small saucepan over medium heat, stir the sugar and water together. Bring to a boil and stir until sugar is dissolved. Chill until cold, or set the pot in a bowl of ice to cool. This will make about 3/4 cup syrup; you will not use it all for this recipe. The leftover syrup can be stored in the fridge for several weeks.
- Whisk the yogurt: In a bowl, whisk the yogurt to smooth out the lumps. (If you like sweetened yogurt, add honey or simple syrup to taste.)
- Freeze the popsicles: Freeze for 1 hour. Remove the mold from the freezer and insert the popsicle sticks, leaving about 2 inches of each stick above the mold. Return to the freezer for another 3 to 4 hours, or until frozen.

Steps:
- First of all, double check that the empty yogurt pots have been thoroughly cleaned and dried.
- Take the Greek yogurt from the fridge and ask your little one to help weigh it into a small mixing bowl.
- Your assistant can carefully measure 1 level tsp of runny honey into the mixing bowl, then stir the two ingredients together.
- Mashing the banana is good fun for children so let them take the lead. They can peel off the skin and then place the banana into a little bowl. Using a fork, they can set to work, mashing the banana until it's as smooth as they can make it. You may need to help with the last little bit!
- Now your child can use a spoon to scoop up the mashed banana and mix it into the Greek yogurt and honey mixture.
- As the yogurt pots are quite small, it's best to use a teaspoon when spooning the yogurt mixture into the pots. You may end up with a messy worktop otherwise, but I suppose that's what kitchen towels and wipes are for!
- Once your pots are all equally filled with the yogurt mixture, turn your attention to the foil.
- Use scissors to cut out square pieces of foil, just a little larger than the top of the yogurt pots. Place the foil pieces over the top of each pot to cover the yogurt, then press the edges of the foil under the 'lip' of the pot to seal.
- With a sharp knife, cut a little slit into the middle of each foil lid.
- Your little helper can now place the lollipop sticks into each hole in the foil and down into the yogurt mixture.
- That's it, you've finished! All that's left to do is to place the yogurt ice pops into the freezer for an hour or two, or you could freeze overnight if need be. It depends how long your child will wait.
- When you are ready to eat your banana and yogurt ice pops, take the from the freezer and leave to stand for 10 - 20 minutes to soften. Then ease them out from the plastic yogurt pots and enjoy!

- Blend the blueberries in a food processor or blender on high speed until nearly liquified into a smoothie-like consistency. See above for a photo.
- Pour the thick blueberry liquid into a large bowl. Stir in the agave/honey. Add the yogurt and very gently mix everything together. If you want a tie-dye, swirly look to your popsicles– do not fully blend the yogurt and blueberries. You want those patches of white and blue. The mixture will be thick. Taste it. If you want it sweeter, you can add a little more agave/honey.
- Pour mixture evenly into each popsicle mold. If your popsicle mold has slots for sticks, you can insert them before freezing – if not, freeze for 2 hours, then put a wooden popsicle stick in the middle (that is what I did). Continue to freeze for an additional 4-6 hours or overnight.

- Whip the cream with a whisk until just before soft peaks start to form. In other words, you should be able to see lines in the cream as you whisk it, but it should not reach soft peak stage. (You want it to no longer be liquid, but you also don't want too much air in your cream.)
- Make sure your popsicle molds are dry (we use a thin cloth and a chopstick to push the cloth inside each popsicle mold to make sure they’re dry), or you’ll get ice crystals on your popsicles.
- Pour the mixture into dry popsicle molds, making sure there are no air pockets. A chopstick or extra popsicle stick is a great way to tamp down the yogurt mixture and fill in any holes. Finally, tap the popsicles against the counter to pop any air bubbles.
