½ cup sour cream
1 teaspoon lemon juice
1 teaspoon prepared yellow mustard, or to taste
¼ teaspoon ground paprika
1 dash hot pepper sauce

Steps:

  • Whisk mayonnaise, sour cream, lemon juice, mustard, paprika, and hot pepper sauce together in a small saucepan over medium heat until warmed through, 2 to 3 minutes.

1 cup low-fat plain yogurt, plain
2 teaspoons lemon juice
3 egg yolks
1/2 teaspoon salt
1/2 teaspoon Dijon mustard
1 pinch fresh ground pepper
optional 1 tbsp fresh dill or parsley

Steps:

  • Use double boiler or like me - place a strainer/sieve over a sauce pan of water and place a bowl in the sieve.
  • Beat yogurt, lemon juice, egg yolks well
  • Heat over simmering water, stirring frequently, until sauce has thickened, approx 15 min (sauce will become thinner after about 10 min and then thicken again).
  • Remove from heat and stir in salt, mustard, pepper and dill/parsley (if using).

½ cup unsalted butter
2 large egg yolks
1 tablespoon warm water
1 tablespoon fresh lemon juice
¾ teaspoon coarse salt
1 pinch ground cayenne pepper

Steps:

  • Melt butter in a small saucepan over medium heat until bubbly; do not let brown.
  • Combine egg yolks, water, lemon juice, salt, and cayenne in a blender; blend until frothy. With blender running, pour in hot butter in a very thin stream and blend until sauce is thick and emulsified. Promptly pour sauce into a serving bowl.

1 cup plain yogurt
3 egg yolks
2 teaspoons lemon juice
1 tablespoon chopped dill or 1 tablespoon parsley
1/2 teaspoon salt
1/2 teaspoon Dijon mustard
fresh ground pepper

Steps:

  • Beat eggs, yogurt, lemon juice in double boiler.
  • cook for about 15 min or until thickened.
  • Note: Sauce will become thinner after 1o min of cooking, then will thicken again.
  • Remove from heat and stir in dill, salt, pepper and mustard.
  • Serve warm.
  • Can be refrigerated for up to 1 week.
  • Reheat over hot not boiling water.

This sauce is absolutely wonderful on steamed broccoli. You won't miss traditional hollandaise. You may want to double this recipe.

  • Turn burner to low to keep warm. Serve over steamed broccoli.

  • Whisk lemon juice and egg yolks in the top of the double boiler or metal bowl. Adjust heat under the double boiler so the water is at a gentle simmer. Set bowl over the simmering water in the double boiler or saucepan and whisk. Lift bowl occasionally to allow the trapped steam to escape so the bowl doesn’t get too hot. Cook, whisking constantly until the egg mixture is steaming hot and thickened, but not curdling along the edge, 1 to 2 minutes.
  • Remove the egg mixture from the heat and whisk in melted butter. Whisk in yogurt, a little at a time until smooth. Whisk in Tabasco, salt, pepper and lemon zest. Keep warm until ready to serve. Do not keep warm for longer than 4 hours.

  • Fill a medium (about 4 quart) saucepan with a few inches of water. Choose a stainless steel bowl that will sit partially inside of the saucepan without touching the water to create a double boiler. Fill the pan without about two inches of water and bring to a boil, then turn down to a simmer.
  • In the bowl, whisk the yogurt and egg yolks together until smooth. Whisk in lemon juice, mustard, melted butter, salt, pepper and hot sauce. Place the bowl over the simmering water and cook the Hollandaise until thick and creamy, about 6-8 minutes. When it is ready, it will coat the back of a spoon. To test, dip the back of a spoon into the sauce and draw your finger across it. If the line holds its ready.
  • You may want to whisk in a teaspoon or two of warm water to achieve the consistency you prefer. Without water the sauce will be quite creamy and thick. Water will thin the sauce and make it more pourable.
  • To serve, pour a tablespoon or two over Eggs Benedict. This sauce is also great over asparagus and other dishes suggesting Hollandaise.
