Healthier Deviled Eggs Without Mayo image

These healthy deviled eggs made with Greek yogurt are full of flavor and oh so creamy. Transformed with beautiful pastel colors, they make the perfect secretly healthy appetizer for Easter, baby showers, and birthday parties.

6 hard boiled eggs (shells removed)
⅓ cup nonfat Greek yogurt
½ tbsp yellow mustard
1 tsp white vinegar
½ tsp salt
½ tsp black pepper
All Natural Food Coloring (any colors you like! Pink, Purple, Orange and Blue were the colors I chose.)

Steps:

  • Slice each egg in half and remove the yolk.
  • Place the yolks of the eggs in a bowl. Use a fork to mash the yolks. Add the Greek yogurt, mustard, vinegar, salt, and pepper to the bowl and stir until well combined.
  • To dye the egg whites, fill four small bowls with ½ cup of water. Add two to three drops of food coloring to each bowl and stir to combine. Place one egg white in each bowl and allow to soak for at least five minutes. The longer the egg is left in the water, the brighter the color will be.
  • When you're satisfied with the color, remove the egg and place it on a plate to dry. Continue adding more egg whites until all the eggs have been dyed
  • When the eggs are dry, spoon or pipe the egg yolk mixture back in and serve.

These deviled eggs are made with Greek yogurt instead of mayonnaise. They are well-seasoned, mildly spicy, creamy and delicious!

6 large hard boiled eggs
1/2 cup plain whole-milk Greek yogurt
1 tablespoon smooth Dijon mustard
1/4 teaspoon sea salt
1/8 teaspoon black pepper
1/4 teaspoon smoked paprika (plus more for topping)
1/8 teaspoon cayenne pepper

Steps:

  • Cut each egg in half lengthwise. Remove the yolks into a small bowl. Arrange the whites on a serving plate.
  • Use a fork to mash the egg yolks.
  • To the egg yolks, add Greek yogurt, Dijon mustard, sea salt, black pepper, smoked paprika, and cayenne pepper.
  • Mix well, until smooth. If the mixture seems too dry, add more Greek yogurt.
  • Spoon the mixture back into the egg whites. Sprinkle smoked paprika on top. Serve immediately, or refrigerate. Remove from fridge 30 minutes before serving.

6 hard-boiled eggs
1/4 cup plain low-fat yogurt
1 teaspoon minced onion
1 teaspoon parsley flakes or 1 teaspoon dried chives
1 teaspoon lemon juice
3/4 teaspoon prepared mustard
1/4 teaspoon salt (optional)
1/4 teaspoon Worcestershire sauce
1/8 teaspoon pepper
1 dash paprika

Steps:

  • Cut eggs in half lengthwise.
  • Remove yolks and set aside.
  • Mash yolks with fork and blend in remaining ingredients.
  • Refill whites using about 1 tablespoon yolk mixture for each egg half.
  • You can also mix everything up by placing the yolks in a plastic storage bag.
  • Add remaining ingredients except egg white halves to the bag.
  • Close bag and knead the bag until everything is well blended and smooth.
  • Push the contents toward the corner.
  • Snip about 1/2 inch off the corner of the bag.
  • Squeezing the bag gently, fill the reserved whites with yolk mixture.
  • Chill to blend flavors.

6 large eggs
2 tablespoons full-fat plain Greek yogurt
1 teaspoon prepared yellow mustard
1 teaspoon white vinegar
½ teaspoon Worcestershire sauce
¼ teaspoon white sugar
¼ teaspoon everything bagel seasoning, or to taste
1 teaspoon sliced scallion greens

Steps:

  • Place eggs in a saucepan and cover with water. Bring to a boil, remove from heat, and let eggs stand in hot water for 15 minutes. Remove eggs from hot water, cool under cold running water, and peel.
  • Slice eggs in half lengthwise and set the whites aside. Place yolks in a mini blender or food processor; pulse several times until finely chopped. Add yogurt, mustard, vinegar, Worcestershire sauce, and sugar and blend until smooth.
  • Transfer yolk mixture to pastry bag fitted with a large star tip and pipe filling into the egg whites (or stuff filling into egg whites with a spoon). Sprinkle with everything bagel seasoning and garnish with sliced scallions. Chill in the refrigerator until ready serve.
