2 lbs swiss steak or 2 lbs round steaks
1/2 cup flour
1 teaspoon salt
1/2 tablespoon black pepper
1 medium onion, sliced and separated into rings
2 large carrots, thinly sliced
2 stalks celery, thinly sliced
1 (14 1/2 ounce) can diced tomatoes, undraind
1 (8 ounce) can tomato sauce
8 ounces water
1 dash Worcestershire sauce
hot mashed potatoes

Steps:

  • Heat oil in large skillet.
  • Combine flour, salt and pepper.
  • Cut steak into 4 or 5 servings; dredge in flour mixture.
  • Brown on both sides in hot oil; remove to large baking dish.
  • Place vegetables over steak; pour tomatoes, tomato sauce, water and Worcestershire over all.
  • Cover and bake at 350 degrees for 1 1/2- 2 hours, or until meat is tender.
  • Serve with sauce spooned over the mashed potatoes.

1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 pounds beef top round steak, cut into serving-size pieces
2 tablespoons canola oil
1 medium onion, thinly sliced
2 cups water
2 tablespoons Worcestershire sauce
GRAVY:
1/4 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1-1/4 cups beef broth or water
Hot cooked noodles or mashed potatoes, optional

Steps:

  • Preheat oven to 325°. In a large shallow dish, combine flour, salt and pepper. Pound steak with a mallet to tenderize. Add meat, a few pieces at a time, and toss to coat., In an ovenproof Dutch oven, brown steak in oil on both sides. Arrange onion slices between layers of meat. Add water and Worcestershire sauce. , Cover and bake 2 to 2-1/2 hours or until meat is very tender. Remove to a serving platter and keep warm. , In a small bowl, combine flour, salt, pepper and broth until smooth; stir into pan juices. Bring to a boil over medium heat; cook and stir 2 minutes or until thickened. Serve steak and gravy with noodles or mashed potatoes, if desired. Freeze option: Freeze cooled beef mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, gently stirring and adding a little broth or water if necessary.

First had this dish at an Amish church in rural Ohio. I will never forget the delicious smell of that church kitchen! After a little questioning, a kind woman gave me the recipe. Great for a plan-ahead meal.

1 pound ground beef
1 cup milk
1 cup crushed saltine crackers
1 onion, finely chopped
1 teaspoon salt
1 teaspoon ground black pepper
1 (14.5 ounce) can cream of mushroom soup

Steps:

  • Mix ground beef, milk, saltine cracker crumbs, onion, salt, and black pepper in a bowl. Shape mixture into a narrow loaf and place onto a baking sheet; cover and refrigerate 8 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cut loaf into 1-inch-thick slices and sear the 'steaks' in the hot skillet until browned, 2 to 3 minutes per side. Insides will still be pink. Arrange slices in a roasting pan. Spread mushroom soup over steaks.
  • Bake steaks in the preheated oven until mushroom soup is bubbling and meat is no longer pink inside, about 1 hour. An instant-read meat thermometer inserted into the center of a meat slice should read at least 160 degrees F (70 degrees C).

For dinner tonight, try Alton Brown's Swiss Steak cutlets from Good Eats on Food Network, cooked in bacon drippings and smothered in an oniony beef gravy.

2 pounds beef bottom round, trimmed of excess fat
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3/4 cup all-purpose flour
1/4 cup vegetable oil or bacon drippings
1 large onion, thinly sliced
2 cloves garlic, minced
2 stalks celery, chopped
1 tablespoon tomato paste
1 (14.5-ounce) can diced tomatoes
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 tablespoon Worcestershire sauce
1 1/2 cups beef broth

Steps:

  • Preheat the oven to 325 degrees F.
  • Cut the meat with the grain into 1/2-inch thick slices and season on both sides with the salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour mixture. Tenderize the meat using a needling device, until each slice is 1/4-inch thick. Dredge the slices on both sides once more and set aside.
  • Add enough of the bacon drippings or vegetable oil to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
  • Remove the last steaks from the pot and add the onions, garlic, and celery. Saute for 1 to 2 minutes. Add the tomato paste and stir to combine. Next add the tomatoes, paprika, oregano, Worcestershire sauce and beef broth and stir to combine. Return the meat to the pot, submerging it in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.

SWISS STEAK WITH EGG NOODLES Recipe - (5/5) image

5 pounds or so 7-bone chuck roast
1 1/2 cups all purpose flour (necessary for its silky texture)
3 tablespoons butter or bacon fat
2 tablespoons pure olive oil (not extra virgin)
kosher salt and fresh cracked pepper
2 large Spanish yellow onions cut thinly
4-5 cloves garlic, minced
1 cup Spanish Amontillado or Cream Sherry (not cooking sherry)
1 cup water
2 tablespoons tomato paste
1 teaspoon. canned chipotle
10 cherry tomatoes, halved
1 bunch curly parsley, chopped for garnish
1 cup celery hearts, sliced thin on the bias
Serve with cooked egg noodles, buttered, a little chopped parsley, seasoned with salt and pepper.

Steps:

  • 1. Preheat oven to 300°F. 2. Pat dry the chunk of meat with paper towels - important as the salt and pepper won't stick to the meat if it is not dry and you won't be able to get a good sear on it. Be very generous with your salt and freshly ground black pepper. Make sure the meat is covered. Put your flour in a large bowl and roll the entire piece of meat in the flour to coat it. Take the meat out of the bowl, place it on your cutting board and LITERALLY pound the flour left in the bowl INTO the meat. Yes, it may sound strange but this is Swiss Steak! Good Swiss Steak is dependent on this rather large amount of flour cooking for hours and absorbing the fat from the meat as it renders itself in the oven for approximately 3 hours or so. 3. Place the oil and butter or bacon fat in a heated large Dutch oven or any baking pan you have with a cover that fits well. Put your sliced onions into the hot pot and slowly cook until caramelized, about 6-8 minutes. Salt and pepper the onions. During the last few minutes add the garlic. Cook another 2 minutes. Transfer onion mixture to bowl and set aside. 4. Using same pot, add a little more olive oil and place on high heat. When hot, lower the meat into the pot carefully to brown (don't splash yourself with the hot fat). Don't move the meat until you are sure the first side is brown and has developed a crust, about 8-10 minutes. With tongs, flip over the meat. Again lower meat gently and brown this side, another 6-8 minutes. You may have to regulate the heat turning it down a tad. You don't want to blacken the flour, just a deep golden brown. 5. Add the onions on top of the beef. Immediately deglaze with a cup of sherry around the perimeter of the pan so as not to "wash away" all the seasoning and maintain crust. Add 1 more cup of water around the perimeter, but do not cover the meat. The liquid should only come half way up to the top of the meat. And if there was any flour left in your first bowl, just throw it in. Add the tomato paste and a teaspoon (or to taste) of canned chipotle, again around the perimeter. Lastly add the tomato halves on top. 6. Place cover on the pot and put into oven. Slowly braise for at least 2- 3 hours, checking your liquid level and whether you can easily pierce the meat with a skewer. 7. Transfer to a heated platter spoon the remaining sauce from the pan over the meat. Garnish with chopped parsley and celery leaves. Serve immediately with seasoned egg noodles.

2 lb beef round steak
3/4 c flour
1 tsp salt and pepper
3 Tbsp vegetable oil
1 1/2 c chopped celery
1 medium green pepper, chopped
1 large onion, chopped
1 can(s) 16 oz. tomato sauce
2 c beef broth
1 tsp kitchen bouquet

Steps:

  • 1. Cut steak into serving size peices. Pound steak with a meat mallet until tenderized. Dredge each peice in flour, salt and pepper. In a large skillet, heat vegetable oil. Add peices of steak and brown on both sides. Place browned steak in a large shallow baking dish. In the skillet with drippings from meat add remaining flour from dredging. Stir until lightly brown. Add celery, onions and green pepper and stir until tender. Add beef broth and stir to thicken. Pour over steaks. Add can of tomato sauce and kitchen bouquet. Stir well. Cover with foil and bake in 325 degree oven for 1 1/2 to 2 hours.

This is being posted in response to a request for a Swiss Steak that doesn't contain tomato. This was my mom's recipe and is still my favorite. Lots of gravy, no tomato.

2 lbs round steaks, cut into serving pieces and pounded thin
1/2 cup flour, for dusting steaks
1 medium onion, cut in quarters and sliced
1 teaspoon salt
1 teaspoon pepper
3 tablespoons vegetable oil
2 (10 3/4 ounce) cans cream of mushroom soup
1 (10 3/4 ounce) can condensed beef broth
8 ounces sliced fresh mushrooms (optional)

Steps:

  • Put flour, salt, and pepper in large ziploc baggie.
  • Add pounded steak pieces and shake well.
  • Do not remove from bag.
  • In large dutch oven, heat oil over medium high heat until shimmering.
  • Shake baggie to recoat steak pieces, shake each piece to remove excess flour, and add to skillet.
  • Fry until browned on each side, approximately 2 minutes per side.
  • (This will have to be done in batches. Remove each browned piece to a plate.).
  • Add onions to dutch oven, cover and cook for one minute.
  • Add soup and broth, stir well, add steak pieces, cover, and place in 325 oven for 90 minutes.
  • If using mushrooms, add after 60 minutes and replace in oven.
  • This makes a lot of gravy that doesn't usually have to be thickened and is wonderful on boiled or mashed potatoes.

  • Place flour on a large plate and set aside. Cut round steak into serving pieces. Salt & pepper as desired. Dredge steak in flour (really press in well), then use the edge of a sturdy plate to pound the meat. Repeat this pounding process on both sides until the meat is about 1/2 inch thick and noticeably more tender. Add a bit more flour if it becomes sticky. A meat mallet may be used instead, the large pointed side.
  • Heat vegetable oil in a large ovenproof skillet (or Dutch oven) over medium heat; cook the onions & floured beef in the hot oil until the meat is golden brown, turning once. This will likely have to be done in batches, but the onions are best done in the first batch, then left in the pan to slowly brown and color through as the second batch cooks.
  • Return all meat to pan, strew with onions. Strew the bell pepper slices across the top. If you need to layer the meat, make sure each layer contains onion & pepper. Mix tomatoes with salt and pepper, pour over the top. Check the bottom of the pan. Liquid should come up nearly to the top but not over the first layer of meat. Add a little water if needed.
