CANADIAN YELLOW SPLIT PEA SOUP WITH HAM
Creamy yellow pea soup studded with bits of ham, carrots, celery, and thyme. There is nothing like this one on a cold day! I am a Canadian now living in the US. and cannot get Habitant® soup anymore, so I came up with this version. I think it is as good as the real thing, if not better, because it is homemade.

Steps:
- Place split peas, ham bone, carrots, onion, celery, thyme, bay leaf, salt, and pepper into a large pot; pour in water. Bring mixture to a boil and skim off any foam with a spoon. Reduce heat; place a lid on the pot slightly ajar to allow some evaporation. Simmer, stirring occasionally, until peas are tender and soup is thick, about 3 hours.
- Remove ham bone from soup; strip meat from ham bone, chop meat, and return it to the pot.

QUEBEC-STYLE YELLOW SPLIT PEA SOUP
Steps:
- Trim off and discard skin from ham hocks.
- In a large soup pot or Dutch oven, melt butter over medium heat. Add carrots, celery and onion. Cook, stirring regularly, until softened, about 10 minutes.
- Stir in dried split peas, bay leaf ,savory and thyme. Cook, stirring, for about 2 minutes.
- Stir in chicken broth and water. Add the ham hock. Bring to a boil, then reduce heat to medium-low, cover the pot and simmer, stirring occasionally, until the peas are very soft and soup is thickened, about 1 1/2 - 2 hours. *NOTE: You may need to add additional water or stock if soup gets too thick.
- PICK OUT AND DISCARD BAY LEAF and remove the ham hock to a plate. *Note: I prefer a thicker soup, so I blend just a bit of the soup with an immersion blender or blender. Just do a quick blend (or blend just a cup of the soup. You don't want a completely pureed soup. You want it to retain most of it's texture, but the bit of pureed soup will incorporate with the broth for a thicker soup.)
- Let ham hock cool slightly, then remove any meat on the hock and add it back to soup. Discard the fat and bone from the hock.
- Stir to combine meat with soup. Taste and generously season with salt and pepper, to taste.

- In a 5-quart Dutch Oven cook bacon crisp. Remove bacon and chop into bits. Reserve 2-tablespoons bacon grease.
- Add bay leaves, onion, carrot and Serrano pepper. Saute 3-4 minutes or until vegetables are tender.
- Add garlic, fresh herbs, salt, celery salt, pepper, Linguica Smoked Sausage and sauté 1-2 minutes.
- Add Portuguese Wine (Vinho Verde) and reduce by one-half.
- Add ham stock, yellow split peas and bacon bits. Bring soup to a full boil and reduce to a simmer for 1-hour or until peas are done.
- The last 5-mimutes add chopped cilantro, chives and stir in crème fraiche.
- Remove the soup from stove and discard bay leaves. Puree with a hand blender or a food processor. Season soup with sea salt and white pepper to taste.
- Garnish soup with fresh chopped chives.

- In a large saucepan, saute onion and celery in oil and butter until tender. Add broth; bring to a boil. Add peas; return to a boil. - In a large stockpot on medium-high heat, dry fry the bacon until golden brown (you can add a bit of oil if it starts to stick to the bottom of the pan.
- If needed, add one-two tablespoons of olive oil, add the onions to the pan and with the garlic until the onions are translucent, 5-10 minutes.
- Add the carrots, celery, split peas, chicken stock, smoked paprika, and bay leaf.
- Bring to a boil, then simmer uncovered (Skimming off any foam that forms foam while cooking) for 1 - 2 hours or until the peas start to break down. Check often and stir frequently to keep the soup from burning on the bottom.
- Taste for salt and pepper. Serve hot.

YELLOW SPLIT PEA SOUP
This is a wonderful recipe for yellow pea soup. You can use about 1/2 pound salt pork, rinsed if covered with salt in place of the smoked ham bone. Just a tip, don't throw away the bone from your cooked ham, wrap tightly in foil and freeze, it is wonderful to use in pea soups, make certain to leave some meat on the bone to shred into the soup. If you have any dried savory, then add in about 1/2 teaspoon to the soup along with the chives. I sometimes add in a couple of potatoes that are cut into small cubes into the soup the last hour of cooking, but that is optional. This soup will take around 2-3 hours to cook.

- Rinse the peas under cold water very well. Pick out any discoloured peas and discard.
- Fill a large pot with water and chicken broth.
- Add in the ham bone or salt pork and half of the onions; bring to a boil (skim off any froth or scume that gathers on top) simmer partially covered until the peas are tender but not falling apart (about 1 - 1-1/2 hours).
- Cook the leeks and the remaining onions in butter in a large skillet over medium heat, stirring until softened (about 10 minutes).
- Add to the soup with the chives, salt and pepper; continue to simmer (partially covered) until the peas are falling apart and the soup is thickened (about 1 - 1-1/2 hours).
- Remove the ham bone, then shred any meat on the bone and return the meat to the pot.
- Ladle hot soup into bowls and drizzle a small amount of whipping cream on top of the soup if desired.

SWEDISH YELLOW SPLIT PEA SOUP
Swedish style yellow split pea soup is comfort for the soul.

- Rinse and pick through the peas. Watch for any small pea-sized rocks that might be there. I know you don't want to visit the dentist for a chipped tooth.
- Fill a large pot with the chicken stock, add the peas, the chopped onion, the ham hock, and the onion studded with cloves, thyme, and grated ginger.
- Bring to a boil then reduce the heat to medium-low and simmer for 90 minutes (uncovered).
- Remove the studded onion and discard it. Remove the ham hock and transfer it on a cutting board. When the ham hock gets cool enough to handle, remove and discard the fat, bone, and tough gristle. Chop the lean ham and return it to the soup pot. You will probably have about one cup of ham.
- Continue to simmer the soup for an additional 30 minutes stirring it often. It will thicken up and if you prefer a thinner soup you can add additional chicken stock.
- Taste the soup and season with salt and pepper if needed. Serve with a nice crusty whole-grain bread and a dollop of brown mustard. Enjoy!

- I like to pick over the peas to ensure there aren’t any bad ones or debris, and rinse them before using. Add the peas to a large pot along with the water, and bring to a boil. The impurities will form a scum (charming!) and foam to the top. I like to skim that off with a large spoon. Once the foam starts rising, keep an eye on it because it can spill over before you know it. Simmer the peas for a few minutes, then turn off the heat, cover the pot and let it stand for an hour.
- In a skillet, heat the oil over moderate heat. Add the vegetables, herbs (except the bay leaf), salt and pepper. Cook, stirring from time to time, until the vegetables are softened (about 8 to 10 minutes).
- Add the vegetable mixture to the pot of water and peas, along with the smoked pork chop and the bay leaf. Bring the mixture to a boil, then turn down to a simmer. Cook for at least 2 hours, stirring occasionally. The peas will start to break down and thicken the soup. About 10 or 15 minute before it’s ready, check for seasoning and add more pepper to your taste, and some salt if you feel it’s needed. Remove the bay leaf and the pork chop from the pot. Trim the fat from the chop and remove the bone. Using a fork, shred the meat, then return it to the pot.
- Cool and keep in the refrigerator for up to three days or so. The soup will thicken as it chills and the flavour will continue to develop. Once it's cooled, you can transfer it to freezer containers and keep it for a few months. I like to freeze mine in single portions for easy lunches and dinners.

- Make the cashew cream. Combine the cashews, water, and salt in a blender and process until very smooth. Set 3/4 cup aside.
- Heat the oil in a large pot over medium heat. Add the onion and celery and cook, stirring occasionally, for 5 to 7 minutes, until the onion is tender and translucent. Add the garlic and cook, stirring constantly, for 1 minute.
- Stir in the broth, split peas, potato, corn, paprika, and salt and bring to a boil over high heat. Lower the heat, cover, and simmer, stirring occasionally, for about 45 minutes, until the split peas are completely tender.
- Use an immersion blender to partially puree the soup, or puree about half of it in a regular blender and return it to the pot. Stir in the Cashew Cream and apple cider vinegar. Taste and adjust the seasonings if desired. (I added up to 1 teaspoon more sea salt here). Serve piping hot, with any desired toppings.
