AUTHENTIC GREEK FAVA RECIPE (YELLOW SPLIT PEAS PUREE)

Steps:
- Rinse the split peas with plenty of water.
- Heat a large pot over medium-high heat; add 2-3 tbsps olive oil, the chopped onions, garlic and some fresh thyme and sauté.
- As soon as the onions start to caramelise add the peas and blend. Pour in the warm water and the olive oil, turn the heat down to medium and season well with salt and pepper. Simmer with the lid on for about 40-50 minutes, until the split peas are thick and mushy. While the split peas boil, some white foam will probably surface on the water. Remove the foam with a slotted spoon.
- When done, pour in the lemon juice and transfer the mixture in food processor. Mix, until the peas become smooth and creamy, like a puree.
- Serve the fava with a drizzle of olive oil, a tablespoon of diced onion and some capper or chopped parsley. Enjoy!

YELLOW SPLIT PEA DIP

- Wrap carrots, celery, white onion, herbs, and peppercorns into a bundle; tie with kitchen twine.
- Combine split peas with the water, 1/2 teaspoon salt, and herb bundle in a saucepan. Bring to a boil. Reduce to a simmer; cook until split peas are tender, about 45 minutes. Discard bundle. Reserve 1/2 cup cooking liquid. Drain split peas; let cool slightly.
- Puree split peas, lemon juice, 1 teaspoon salt, and 1/4 cup reserved cooking liquid in a food processor until smooth, adding more liquid as needed. To serve, drizzle spread with oil, top with red onion and capers, and season with pepper.

- In a large saucepan, combine the split peas with the onion, bay leaf and 4 cups of water and bring to a simmer.
- Cover and cook over moderate heat until the split peas are tender, about 25 minutes. Drain the split peas and discard the bay leaf.
- In a food processor, pulse the sun-dried tomatoes with the vinegar, garlic, shallots, basil, oregano and thyme until minced.
- Add the split peas. With the machine on, slowly pour in the 1/2 cup of olive oil and process until a smooth paste forms.
- Season with salt and pepper. Transfer the dip to a bowl, drizzle with olive oil and serve with toasted pita.

- Heat a tablespoon of the olive oil in a pot over medium heat. Add the onion. Sautee the onion for 5-7 minutes, or until it's clear and soft. Add the garlic and cook for 2-3 minutes, stirring frequently, or until the garlic is very fragrant.
- Add the split peas and the water to the pot. Bring the water to a boil and reduce to a simmer. Simmer the split peas for 30-35 minutes, or until they're very tender. Most of the water should be absorbed into the split peas, but the mixture should be moist--similar to a thick soup.
- Transfer the whole mixture to a food processor fitted with the S blade and add an additional tablespoon of olive oil, the lemon juice, salt, cumin, sumac, and red pepper flakes, if using. Process until the dip retains some of its texture, but is fairly smooth (you can also continue blending until it's totally smooth, if you prefer a uniform texture that's similar to hummus). Add a few splashes of water or another tablespoon of olive oil if desired, to create a thinner dip.
- Top the dip with a drizzle of olive oil and any toppings of choice. Serve the dip warm, with pita chips, crackers, or veggies. Dip will keep in an airtight container in the fridge for up to four days.
