SOUTH AFRICAN YELLOW RICE



South African yellow rice image

This easy and tasty side dish is the classic accompaniment to bobotie, but works well with much more.

Number Of Ingredients 6

1 cup basmati rice (200g)
2 tsp oil
1/2 tbsp brown sugar
1 tsp turmeric
2 tbsp raisins (or sultanas/golden raisins)
2 cup water (480ml)

Steps:

  • Rinse the rice well under running water until the water runs clear. Alternatively, put in a pot/bowl and cover with water, agitate the rice with your hands then drain. Repeat at least once.
  • Put the rinsed rice in a pot with the oil, sugar, turmeric and raisins. Pour in the water, stir to mix everything together then cover the pot.
  • Place the pot over a medium-high heat to bring to a boil, reduce to a simmer and allow to cook until all of the water has been absorbed, around 10minutes. Stir to mix before serving.

An easy side dish also known as funeral rice. Everyone's stove top produces different heat, adjust cooking temps as you normally do for rice. I like to substitute low salt chicken broth for the water. Use your favorite rice except for brown.

1 tablespoon butter
1 cup rice
1/4 cup seedless raisin
6 whole cloves
5 teaspoons salt
1/2 teaspoon turmeric
1 -2 slice fresh ginger (thin slices)
2 1/2 cups cold water
2 tablespoons butter

Steps:

  • In a medium saucepan sauté the rice in 1 tbs butter 3-5 minutes or until fragrant.
  • Add the water and bring to a boil.
  • Turn burner to lowest temp, add the raisins, cloves, salt, turmeric, and ginger.
  • Cover and simmer gently until the rice is tender and all the liquid has been absorbed, about 20 minutes, if rice isn't quite done you can add a splash more water if needed.
  • Add the butter, fluff up with a fork and discard the ginger.

4 cups water or 4 cups stock
2 1/2 cups long-grain rice
1 teaspoon turmeric
1 cinnamon stick
1/2 teaspoon ground cinnamon
1 -2 tablespoon sugar, white or brown
salt and pepper, to taste
1/2 cup raisins (sultanas are best)
butter (optional)

Steps:

  • Add the water or stock to a large saucepan and bring to a boil over medium heat. Add the remaining ingredients and return to a boil. Reduce heat to low, cover tightly and simmer for 15 minutes.
  • Remove from heat and set aside, covered, for another 5-10 minutes. Discard cinnamon stick, fluff with a fork and serve hot.
  • Optional, Stir 1-2 tablespoons of butter into the cooked rice at the end.
