SPICY GARLIC HUMMUS

I have tried a lot of hummus recipes, and this one is a combination of a few of my favorites, and is now the only one I use. I grow my own little Super Hot Chili Peppers and so that is what I use, but you can substitute any pepper you like, or use hot pepper flakes. I like a lot of garlic and a bit of a kick, but this recipe is easily alterable to your own tastes so adjust it as you see fit. I like my hummus thick so I usually skip the water. Another nice variation is to add a bit of red, green, and yellow bell peppers. It makes the hummus really pretty! Any hummus lover will tell you that the spread can be used so many ways. My favorite uses for this is as a vegetable dip or as a sandwich spread in a whole wheat veggie wrap. Yum!

1 (19 ounce) can garbanzo beans, drained
2 tablespoons tahini
2 tablespoons lemon juice
1 tablespoon water, amount as needed
3 cloves garlic, crushed
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 hot chili pepper
salt, to taste
fresh ground black pepper, to taste
paprika, to taste

Steps:

  • Process garbanzo beans, tahini, chili pepper, garlic, and lemon juice in a food processor or blender (I use a mini-chopper) until smooth.
  • Add water as needed to achieve the consistency you prefer.
  • Place mixture into a glass bowl.
  • Stir in cumin, cayenne pepper, paprika, salt and black pepper.
  • Cover and refrigerate for at least a couple of hours.
  • The flavor improves greatly if given this time to develop.

ZESTY HOMINY AND CHEESE

A different sidedish using hominy, sour cream, cheese and green chilies. Friends who say they don't like hominy eat it and ask for more. It's fast and tasty. Adjust chili peppers to taste.

3 (15 ounce) cans white hominy, drained
1 (8 ounce) container sour cream
2 cups shredded Cheddar cheese
1 (4 ounce) can chopped green chile peppers
1 pinch cayenne pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a 2 quart casserole dish, mix together hominy, sour cream, cheddar cheese, chilies and cayenne pepper.
  • Bake for 25 minutes in the preheated oven, or until heated through.

  • In a food processor or a blender, combine the hominy, creamed corn, lemon juice, garlic, cumin, and cayenne.
  • Whirl until smooth.
  • Mound hummus into a bowl and serve as a dip with raw veggies, chips or pitas.

1 can (14.5 ounce size) golden hominy
1 can (8 ounce size) creamed corn
2 tablespoons lemon juice
1 clove garlic
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper
1/4 cup chopped radishes
crisp raw vegetables (see Note)

Steps:

  • NOTE: Allow 2 pounds rinsed, trimmed, raw vegetables such as bell peppers, jicama, and celery for every 8 to 10 servings. Drain the hominy. In a food processor or a blender, combine the hominy, creamed corn, lemon juice, garlic, cumin, and cayenne. Whirl until smooth. Mound hummus into a bowl. (If making ahead, cover and chill up to a day; let warm to room temperature.) Sprinkle hummus with chopped radishes and offer crisp raw vegetables to scoop up the mixture.

1 can yellow hominy (approx 16ozs)
1 can chickpeas (garbanzos)(approx 16ozs), drained
3 Tbsp Extra Virgin Olive Oil
1/2 garlic clove
1/2 small chiptole pepper in adobo (to taste)
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp curry powder
2 tsp kosher salt (to taste)
1/4 cup water

Steps:

  • Put all ingredients into a food processor and blend until smooth, approximately 20 seconds. If dip is slightly thick, add 1/4 cup water and blend again. Taste and adjust seasoning and/or chipotle pepper if needed. Garnish with a drizzle of extra virgin olive oil. Serve room temperature with grilled pita or flatbread. Will last in the fridge for 2 days.

2 tablespoons olive oil
1 large onion, cut into medium dice
½ red bell pepper, stemmed, seeded and cut into small dice
3 large garlic cloves, minced
¼ cup chili powder
1 (14.5 ounce) can diced tomatoes
1 (14.5 ounce) can chicken broth
2 cups canned hominy, drained
4 cups leftover turkey meat, pulled into large pieces
Salt and pepper, to taste
2 tablespoons minced fresh cilantro

Steps:

  • Heat oil in a large, deep saute pan over medium-high heat. Add onion and bell pepper; cook until soft and golden, about 5 minutes. Add garlic and chili powder; continue to cook until fragrant, 1 to 2 minutes longer. Add tomatoes, broth and hominy; bring to simmer. Reduce heat to low and simmer, partially covered, about 10 minutes, to blend flavors. Add turkey, salt and pepper. Simmer until heated through, about 5 minutes. Stir in cilantro. Serve with tortilla or corn chips if you like.
