ONE-BOWL VANILLA CAKE RECIPE



One-Bowl Vanilla Cake recipe image

A fluffy and moist cake with the best easy vanilla frosting! All you need is one bowl and a whisk to make it!

1.25 cup all-purpose flour
3/4 cup granulated sugar
1/2 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 large egg
1/2 cup vegetable oil
1/2 cup buttermilk (see note)
1/2 cup hot water
2 teaspoons pure vanilla extract
1/2 cup unsalted butter (softened)
1.5 cup powdered sugar (sifted)
1 teaspoon pure vanilla extract
1 tablespoon heavy cream

Steps:

  • Preheat oven to 350 degrees F. Grease and flour or line with parchment paper, an 8" square or round pan. Set aside.
  • In a large mixing bowl, whisk together flour, sugar, baking soda, baking powder and salt.
  • Add egg, buttermilk, vanilla and oil. Whisk together. Add hot water and whisk well until the batter is smooth. It will be runny but that's okay.
  • Pour batter into prepared pan. Tap the pan gently against the counter to release any air bubbles.
  • Bake cake for 25 to 28 minutes or until golden on top and a toothpick inserted in a few places comes out clean.
  • Cool cake completely before frosting.
  • To make frosting: place butter in a medium mixing bowl and beat for 7 minutes. Add powdered sugar, 1/2 cup at a time and beat in well. Add heavy cream and beat in for 1 minute. Add vanilla and mix in. The frosting should be very fluffy. Spread over cooled cake. Decorate with sprinkles.

I usually frost the cake right in the pan but you can double this recipe using two cake pans for a double-layer cake. Only line the pan with parchment if you plan to remove the cake from the pan. It's best to have all your ingredients at room temperature and I highly recommend using a cake strip. Be sure to aerate your flour before measuring.- Jenny Jones

3/4 cup sugar (the recipe also works using 2/3 cup sugar)
2 eggs
1 teaspoon vanilla
1/3 cup vegetable oil
1/2 cup milk (low fat or whole milk)
1 1/4 cups all-purpose flour
1 1/4 teaspoons baking powder
1/4 teaspoon salt (optional)

Steps:

  • Preheat oven to 350° F.
  • Grease an 8 or 9-inch round cake pan.
  • With an electric mixer on high, beat sugar, eggs, & vanilla for one minute to thicken.
  • On low speed add remaining ingredients (in the order listed) but do not over-mix. This should take less than a minute.
  • Pour into pan and bake for 25-30 minutes until a toothpick inserted in the center comes out clean. I like to frost it with my 2-minute chocolate frosting.

1/3 cup shortening
1/2 cup sugar
1 egg
1/2 teaspoon vanilla extract
3/4 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup 2% milk
PENUCHE FROSTING:
2 tablespoons butter, cubed
1/4 cup packed brown sugar
3 tablespoons 2% milk
1/2 cup confectioners' sugar

Steps:

  • In a small bowl, cream shortening and sugar. Add egg; beat well. Stir in vanilla. Combine the flour, baking powder and salt; add to the creamed mixture alternately with milk. Beat on medium speed for two minutes. Pour into a 9x5-in. loaf pan coated with cooking spray. , Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. , Meanwhile, in a small saucepan, melt butter. Stir in brown sugar. Bring to a boil. Reduce heat; cook and stir for two minutes. Stir in milk. Bring to a boil, stirring constantly. Cool to lukewarm. Gradually stir in confectioners' sugar. Place pan in a bowl of ice water; stir until mixture reaches desired spreading consistency. Spread frosting over top of cake.

FROSTING I USE
2 cup(s) heavy whipping cream
1 teaspoon(s) vanilla
2 tablespoon(s) sugar

Steps:

  • Preheat oven to 350 degrees F. Grease and flour two 8-inch cake pans. In a large mixing bowl sift together flour, sugar, baking powder and salt.
  • Add butter, milk and vanilla. Beat with a hand mixer on medium speed for 3-4 minutes, occasionally scraping sides of bowl.
  • Add eggs, beat for 3 more minutes. I also started adding a few drops of yellow food coloring, just an option...gives it a bit more yellow hue...
  • Pour batter into prepared pans, dividing equally among both.
  • Bake 30 to 35 minutes or until toothpick comes out clean. Cool in pans on wire racks 10 minutes. Turn out and cool thoroughly on wire racks.I frosted with whip cream frosting. If using whip cream frosting the cake must be refrigerated. You can use chocolate frosting, which is usually the frosting of choice for yellow cake. I just wanted to be able to taste the moist cake, not just frosting.

2 teaspoons baking powder
4 eggs
1 cup vegetable oil
¾ cup orange juice
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  • In a large bowl, mix together the flour, sugar and baking powder. Make a well in the center and pour in the eggs, oil, orange juice and vanilla. Mix well and pour into prepared pans.
  • Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
