1 ⅛ cups warm milk
¼ cup white sugar
1 (.25 ounce) package active dry yeast
6 tablespoons butter, softened
1 tablespoon vanilla extract
1 pinch salt
3 large apples - peeled, cored, and sliced
1 cup white sugar
¾ cup sifted all-purpose flour
2 ounces candied lemon peel, chopped
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 pinch salt
½ cup butter

Steps:

  • Grease the bottom and sides of a 9x13-inch baking dish or a 9-inch springform pan.
  • Beat 2 1/4 cup flour, milk, 1/4 cup sugar, yeast, 6 tablespoons butter, vanilla extract, and 1 pinch salt in a large bowl with an electric mixer on high until dough is smooth, about 5 minutes; spread into baking dish and press dough up the sides. Press apple slices into dough.
  • Mix 1 cup sugar, 3/4 cup flour, candied lemon peel, cinnamon, nutmeg, and 1 pinch salt in a bowl. Cut in 1/2 cup butter with a knife or pastry blender until mixture resembles coarse crumbs; sprinkle over apples. Allow dough to rise for 30 minutes.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Bake in preheated oven until cake is golden brown and apples are tender, about 35 minutes.

Easiest Ever MOIST Apple Cake image

A very moist, perfectly spiced Apple Cake! This is incredibly easy to make - no mixer required. This must be made with fresh apples, not canned. See note 5 for information about different measures in different countries & different oven types. Also, I do not recommend substituting butter for all or part of the oil - it does not come out as moist and you can't taste buttery flavour anyway because of the spice flavourings! FREEZES great!

Steps:

  • Preheat oven to 180°C/350°F (all oven types).
  • Grease and line a 21 cm / 9" springform cake pan. (Note 4)
  • Place flour, baking soda, salt and spices in a large bowl and whisk to combine.
  • Whisk oil and sugar in a bowl, then whisk in eggs and vanilla.
  • Pour the wet ingredients into the dry and mix with a wooden spoon until JUST combined. Stir through apple (optional: add 3/4 cup chopped walnuts or other nuts).
  • Pour into cake pan. Sprinkle over almonds.
  • Bake for 50 minutes - 1 hr. Check at 50 minutes - it is cooked when a skewer inserted into the centre comes out clean.
  • Cool for 10 minutes before turning out onto a rack to cool. Dust with icing sugar if using, then serve. This cake doesn't need cream or ice cream because it is so moist, but I wouldn't turn it down!

Steps:

  • Cake:
  • Butter a 13x9" shallow baking dish. Mix yeast, 2 Tbsp. brown sugar, and 1/4 cup warm water in the bowl of a stand mixer; let sit until it foams, about 5 minutes.   • Working with several slices at a time, fan out apples slightly and arrange over dough, shingling rows in different directions; sprinkle streusel over top. Bake until apples are tender and a tester inserted into the center comes out clean, 35-45 minutes. Transfer to a wire rack and let cool.

This cake is very much like one I have enjoyed many times in the homes of my Latvian friends. I decided to experiment making the dough in my ABM and it turned out great so I am posting the instructions on how to make it that way.

1/2 cup lukewarm water
1/2 cup milk (Must be cold)
2 eggs
1/4 cup butter, melted
1/4 cup granulated sugar
3 cups all-purpose flour
1 tablespoon active dry yeast
3 apples, peeled and thinly sliced
3 tablespoons brown sugar, packed
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 pinch ground cloves
1/4 cup butter, melted
1/3 cup apple jelly, melted

Steps:

  • To make the cake dough, put all of the ingredients in the order listed in your bread machine and select the dough setting.
  • When the dough is ready, turn it out and press into a greased 9" x 13" cake pan.
  • Cover with a tea towel and let rise until doubled in bulk, about 1 hour.
  • When the dough has finished rising, top with the apple slices, overlapping to make sure the entire surface is covered.
  • Combine the sugar, cinnamon, nutmeg and cloves and sprinkle over the apples.
  • Drizzle with the melted butter.
  • Bake in a 375 degree F oven for 30 minutes.
  • Remove from the oven and brush the surface with the apple jelly.
  • Serve warm.

2/3 cup milk (warm)
3 cups all-purpose flour
2 1/2 teaspoons dry instant yeast
1/3 cup granulated sugar
1 teaspoon vanilla extract
a pinch of salt
1/3 cup butter (room temperature)
1 medium-sized egg (room temperature)
milk or water for brushing
1 cup butter
2/3 cup sugar
1 2/3 cups all-purpose flour
powdered sugar (optional)

Steps:

  • Warm the milk in the microwave or on the stove. It needs to be warm but not hot or boiling.
  • In a large mixing bowl, add the flour and the instant dry yeast (check the instructions on the package to be sure it doesn't have to be dissolved in water or milk first). Add the sugar, and then the lukewarm milk. Knead the contents of the bowl together using the spiral dough hooks of your hand mixer until everything is mixed together.
  • Then add the vanilla extract, soft butter, egg, and a pinch of salt to the bowl. Keep kneading the dough for another 5 minutes until the dough no longer sticks to the sides of the bowl. Use your hands to form it into a nice ball. If your dough is too sticky, you can add a bit more flour. If the dough is a little too dry and crumbly, add a little more milk to the mix.
  • Take a towel or a lid and place it over the bowl with the dough inside. Set the bowl in a warm place without a draft to allow the dough to rise. This should take approximately one hour.
  • Around the 55 minute mark of the dough rise timeline, get your baking pan ready by lining it with parchment paper or by greasing it.
  • Once the hour is up and the ball of dough has increased in size noticeably, remove it from the bowl. Sprinkle your countertop with flour and give the dough a quick knead with your hands. Then roll out the dough using a rolling pin to fit your baking sheet/pan. We typically use a baking pan that is around 13.5 x 9.5 inches. Once the dough is rolled to size, place the dough onto the baking sheet. Let it rest for another 15 minutes.
  • In the meantime preheat the oven to 350 degrees Fahrenheit and prepare the streusel for the topping. For this, place butter, sugar, and flour into a bowl. Using the spiral dough hooks or your hands, quickly knead the ingredients until small crumbs form. Press them together lightly with your hands, then set them aside.
  • Once the 15 minutes of rest are up, lightly brush the dough with some water or milk. This will allow the streusel to stick better.
  • Then evenly place the streusel on top of the dough.
  • Bake the cake on the middle rack of your oven for around 25-30 minutes until the crumbs are lightly golden brown.
  • Remove the cake from the oven and let it cool. You can dust the cake with powdered sugar before serving.

These are best on the day they are made, but they freeze beautifully if you can't eat them all up right away. A deep fryer is recommended or alternately, at least, a thermometer so you can monitor oil temperature to ensure good results.

1 1/2 Tbsp active dry or instant yeast
1/2 cup warm water
2 tsp white sugar
2 cups bread flour (plus more, as needed (can use all purpose flour. See Note 1))
1/4 cup white sugar
1/4 tsp baking powder
1/4 tsp mace ((can substitute nutmeg))
1 tsp salt
2 Tbsp shortening or lard ((can use vegetable oil. See Note 2))
1 large egg
1/4 tsp vanilla
2 medium tart apples (peeled, cored and chopped into 1/2-inch pieces *see Note 3)
1/4 cup white sugar
2 tsp freshly squeezed lemon juice
4 tsp cinnamon
1 Tbsp bread flour
2 cups confectioners/icing sugar
1 1/2 tsp light corn (or golden syrup)
1/4 tsp salt
1/4 tsp vanilla
1 Tbsp white sugar
1/3 cup water
vegetable oil (for frying (or similar, neutral-tasting oil))

Steps:

  • For the dough: In a large bowl or the bowl of a stand mixer fitted with the paddle attachment, add the yeast to the warm water. Add the sugar, stir and let stand 5 minutes.
  • Meanwhile, in a large bowl, whisk together the flour, sugar, baking powder, mace and salt. Set aside.
  • When yeast is ready, add the shortening, egg and vanilla and mix with the PADDLE attachment on low speed for 1 minute (to break up the shortening). Add about 1/3 of the flour mixture and mix until combined. Add a second third of the flour mixture and again, mix until combined. Switch to the dough hook and add the remaining flour mixture. Knead with the hook until all that flour is incorporated. If dough is sticky, start adding flour in 1 Tbsp. increments, until the dough comes together, clears the bottom of the bowl and is becoming smooth. Knead on medium for about 2 minutes more. The dough should be smooth and but still a bit moist (but not sticky).
  • Place the dough in an oiled bowl, cover with plastic wrap and set-aside to rise until doubled in size (about 1 hour).
  • Meanwhile, make the apple filling. Place the diced apples, sugar and lemon juice into a skillet over medium heat. Cook, stirring often, until all the liquid has evaporated and the apples are softened, about 5 minutes. Remove to a bowl to cool completely before using.
  • *See the video above this Recipe Card for a complete demonstration of the following shaping and cutting process.
  • When bread has finished it's first rise, remove to a lightly floured surface and roll into a 10-inch x 10-inch square. Sprinkle the apples over one half of the dough. Sprinkle all the cinnamon evenly over the apples and then sprinkle with the 1 Tbsp. flour. Fold the empty side of the dough over the side with the apples. Using a sharp knife or a bench scraper, cut the dough into 1/2-inch wide strips from top to bottom. Repeat cutting 1/2-inch strips from side to side, so you end up with small chunks of dough. Gather up the dough bits and cut some more, from different directions, until it is in small chunks and evenly mixed with cinnamon/apples/dough etc.
  • Using floured hands, roughly shape into a 12-inch long x 3-inch wide log. Cut the log into 1 inch slices. With each slice, roughly pat into a disc, about the size of your palm (use some additional flour, as needed, if your dough is sticky). Place the dough discs onto a parchment lined or floured baking sheet, leaving a couple of inches of room around each. Repeat with all 12 dough pieces. Cover with plastic wrap or a clean tea towel and set-aside to rise until doubled again, about 30-45 minutes (approximately. Will vary depending on room temperature. The fritters should double in size and look puffy).
  • When the fritters are almost risen, prepare the glaze. Add the icing sugar, corn syrup, salt and vanilla in a large bowl. Set aside.
  • In a small saucepan, bring the water and white granulated sugar to a boil over high heat then reduce heat to medium and simmer for 1 minute. Add this mixture to the bowl with the icing sugar and whisk until all the sugar and has been incorporated and the mixture is smooth. (You don't want any lumps :) Cover with plastic wrap and set aside until needed.
  • When dough is about ready to cook, heat oil in a deep fryer to 370° (alternately, use a heavy deep pot and a thermometer to monitor temperature). Fry each donut until deep golden on the underside (1 1/2 - 2 minutes), flip over and fry the other side. (*time and temperature may need to vary. Watch closely the first few to determine timing. If they seem to be browning too quickly, lower temperature slightly or likewise, if they seem to be taking too long to brown, raise the temperature slightly). Remove to a cooling rack placed over a baking sheet. If there are any loose apples in the frying oil, scoop out between batches so you don't have any apple pieces burning in the oil and causing bitter flavours.
  • While the fritters are still quite warm (as soon as they are cool enough to handle), dip into prepared glaze and return to cooling rack to cool completely. *Stir the glaze mixture regularly during the process, to keep it nice and smooth.
