STRAWBERRY BUCKLE

Strawberry Buckle image

I looked for this here but I could only find blueberry buckle. This is almost like a coffee cake. I got this out of an old fashioned cookbook from my Great Grandmother, and the description says; "Flummery, Fool, Grunt, Slump, and Buckle were variations of old English puddings made with fruit. They were also common in early America" I will post 3 of the five variations.

BLUEBERRY BUCKLE WITH STREUSEL CRUMB TOPPING RECIPE | OLD ...
Blueberry Buckle was a dessert my mom made as a kid. It was popular in the 1960s and a type of cake with lots of fruit baked right into the batter. As the cake bakes, the batter puffs up, then collapses, or “buckles,” around juicy pockets of berries! The blueberry buckle is topped with a sweet, crumbly topping. I like to top with whipping cream that has some maple syrup

Mar 4, 2014 - You don't need fancy streusel topping for this ultra moist New England cake. This simple topping is perfectly crunchy and only accents the flavor of the blueberries. And the secret to moist cake? For one, use room temperature real butter! It has more fat than margarine, which retards the production of gluten. Also, I add a bit more sugar than usual as well.
