EASY APPLE COBBLER FROM SCRATCH

Easy Apple Cobbler From Scratch image

Easy apple cobbler from scratch using fresh apples is super easy to make, soft, delicious apple dessert which is perfect for any occasion.

Provided by Recipe Garden

Categories     Dessert

Time 1h

Number Of Ingredients 14

6 medium sized gala apples (or other apples suitable for cobbler)
1/2 cup brown sugar
2 tablespoons butter
1 teaspoon cinnamon powder
1/4 teaspoon nutmeg (optional)
1.5 cups all purpose flour
2 teaspoon baking powder
salt (a pinch)
1 teaspoon cinnamon powder
1 cup whole milk (at room temperature)
1/2 cup butter (melted)
3/4 cup sugar
1/4 cup brown sugar
1 teaspoon vanilla extract

Steps:

  • Peel and core the apples and slice them in slightly thick slices.
  • Melt the 2 tablespoons butter in a saucepan and add the apple slices.
  • Saute the apples in the butter for about a minute. Add in the brown sugar, cinnamon powder & nutmeg for the apple filling, mix everything well and keep this mixture aside.
  • In a large bowl, mix together the dry ingredients first - flour, baking powder, cinnamon powder and salt until all ingredients are evenly mixed.
  • In another bowl add the melted butter and add the sugar, mix very well.
  • Also add the milk & vanilla extract to the butter sugar mixture, mix everything well together.
  • To make the batter, transfer the wet ingredients mixture slowly to the dry flour mixture and mix in.
  • Also add the 1/4 cup of brown sugar for the batter and mix everything well to form the batter. Do not overmix but make sure there is no dry flour in the batter and all the ingredients in the batter are well blended.
  • Preheat oven to 350 degree Fahrenheit.
  • Prepare a pan greased with little butter and layer the apple filling mixture in a single layer.
  • Pour the prepared batter over the apple filling and using a spoon, spread the batter evenly across the pan to almost cover the apples, and then gently mix in the batter a little so some of the apple slices are visible outside.
  • Bake in the preheated oven for about 50 to 60 minutes of time until the cobbler is baked and the apples look juicy and the top is golden brown in color. One tip to make the perfect apple cobbler is to check the apple cobbler after about 35 minutes of time, and if the topping begins to brown, cover the pan with a foil and bake for the remaining time which will help to retain the moisture content of the dish, making it more delicious and juicy!
  • Allow the apple cobbler to cool down slightly, then scoop out and serve the slightly warm apple cobbler with vanilla ice cream or any ice cream of your choice!

YANKEE APPLE CRISP

Yankee Apple Crisp image

This is a simple, homey, comfort food that everyone seems to love. I adapted this in the late '70s from a recipe I found in a Yankee Magazine Cookbook. If you like lots of topping add half again or double it (double is pretty sweet). This is the perfect recipe for potlucks and parties as you can make it ahead, and it travels well. I love it for breakfast with a hot cup of coffee or tea.

Provided by momaphet

Categories     Dessert

Time 1h

Yield 8 serving(s)

Number Of Ingredients 8

6 -8 granny smith apples (see note)
1/3-1/2 cup butter, melted, I use 1/2
3/4 cup brown sugar, packed
1/2 cup flour (see note)
3/4 cup rolled oats
1 -2 teaspoon cinnamon
3/4 teaspoon nutmeg
1/2 cup walnuts, coarsely chopped (optional)

Steps:

  • Preheat Oven to 375 degrees.Lightly grease or spray a 9x13 pan (pyrex is good) or any other 2 qt baking dish.
  • Melt butter in medium pot or bowl, remove from stove or microwave and stir in oats, brown sugar, flour, spices and nuts if using.
  • Peel, core and slice apples (thin or a little thicker - I use my corer/peeler/slicer which makes them pretty thin), then place in pan - I like to sprinkle the apples with a little cinnamon.
  • Sprinkle crumbs over tops of apples covering as much as possible but a few gaps are ok.
  • Bake for 45 minutes, if crumbs start to get too brown before the apples are done, you can float a piece of foil loosely over the top. Apples should be very soft when poked with a thin knife.
  • Serve warm or at room temperature, wonderful with fresh whipped cream or vanilla ice cream.
  • NOTES:.
  • You can use other apples, Granny Smiths are pretty tart but that makes a nice contrast with the sweet topping. You can add a couple of teaspoons of sugar if you think they might be too tart for you or use a combo of apples - you can use your favorites, but avoid ones the go to total mush when baked.
  • I often stir 2-3 tsp of flour into to the apples to avoid watery juice in the bottom of the pan after baking.
  • I like to use whole wheat pastry flour (not regular whole wheat) for added flavor and nutrition, or a little wheat germ in with the white flour is good too.
  • You can use this for other fruits also - sometimes I add in some frozen raspberries or sub peaches for the apples, they like blueberries and raspberries too. Peaches will probably need the extra sugar and flour added to them and a little ground ginger and/or cloves added to the topping is delish!
