REDCLAW YABBY (CRAWFISH) PASTA SAUCE

We've been catching plenty of yabbies for the past few days and this is a recipe I came up with to use some of them. I started the sauce, then let it simmer while I cooked spiral pasta for the two of us. This sauce was really good as it didn't overpower the delicate sweetness of the yabbies.

2 teaspoons oil
1 small onion, finely chopped
1 garlic clove, crushed
3 tablespoons tomato paste
1/2 cup wine
3/4 cup light cream
1/2 cup water
1 teaspoon chicken stock powder (or a cube)
1 teaspoon dried basil
fresh ground black pepper
400 g raw crawfish meat (yabby)
1/4 cup sun-dried tomato, sliced
1/4 cup grated parmesan cheese
2 tablespoons snipped fresh chives

Steps:

  • heat the oil and cook the onion and garlic gently until softened-about 5 minutes.
  • Add the tomato paste and stir for about 30 seconds, then add the wine and cook about a minute more.
  • Add the cream, water, stock powder, basil and black pepper.
  • Bring to the boil then reduce the heat and simmer about 10 minutes.
  • Add the yabby meat and sundried tomatoes and cook for 2-3 minutes-or until yabbies are just cooked through.
  • Remove from the heat and stir through the parmesan cheese and chives.
  • Serve over pasta with extra parmesan if you like.

We've been away catching lots of yabbies (crawfish) for the past week. I made this last night and want to make it again soon for some of the family. We tried to extract raw meat from the tails for this, but found it too hard so cooked our yabbies quickly in salted water, then went on with the recipe. You could use shrimp/prawns in this too.

20 g parmesan cheese, finely grated (I use my microplane)
2 tablespoons finely chopped parsley
zest of a small lemon
3 teaspoons olive oil
4 tablespoons finely diced red onions
2 garlic cloves, crushed
1 teaspoon chili flakes (to taste)
200 ml white wine
1 (400 g) can tomatoes, chopped
1 teaspoon chicken stock powder (to taste)
1 tablespoon capers
300 g crawfish meat (yabby)

Steps:

  • Combine the parmesan, parsley and lemon zest in a small bowl and set aside.
  • Heat the oil in a pan and cook the onion until softened, add the garlic and cook 30 seconds more, then add in the chilli flakes and white wine. Cook to reduce a little.
  • Add the tomatoes and their juice and the chciken stock powder. Cook until reduced and thickened (mine took about 15 minutes over a medium-low heat).
  • While this is happening, cook some pasta to serve the sauce over. We had penne, I would have preferred angel hair though!
  • When the sauce is thickened to your liking, add in the capers and yabby meat and cook a further 2 or 3 minutes to heat the yabbies through.
  • Serve over pasta with the parmesan, parsley zest mix sprinkled over the top.

If this fresh ingredient is unavailable, I would substitute prawns (shrimp). If condensed pumpkin soup is unavailable, I would substitute pureed pumpkin.

1 tablespoon olive oil
1 onion, finely chopped
3/4 lb sweet potato, diced (400 grams)
2 cups water
1 (10 1/2 ounce) can condensed pumpkin soup
1 teaspoon curry powder
salt and pepper, to taste
2 tablespoons cilantro, chopped
3/4 cup light coconut cream
1 cup milk
1 tablespoon cornflour
1 lb fettuccine
1 lb crawfish meat, poached (500 grams) or 1 lb prawns, cooked (500 grams)
herbs, sprigs for garnish

Steps:

  • Heat olive oil in a large pot. Stir in onion and cook over medium heat until translucent, but not brown.
  • Add diced sweet potato, and stir over low heat for about 4 minutes.
  • Add 2 cups water and simmer for a further 4 minutes. Add can of pumpkin soup. Add curry powder and seasoning, together with chopped herbs. Add coconut cream. Lastly, add cup of milk, mixed with cornflour. Simmer together for five minutes.
  • Remove from heat. Can either be served with vegetable chunks in sauce, or pureed in a blender.
  • Bring a saucepan of water to the boil and add the fettuccine. Boil for 10 minutes or until al dente. Drain and toss with yabbies or prawns. Serve in a deep bowl with a generous ladle of sauce mixture and serve.
  • Garnish with a sprig of fresh herbs.

You won't believe how easy and delicious this dish is!!!! This recipe was passed down to me from my hubby grandmother. I changed the regular cheese for the spicy jalapeno kind for that kick! You can season to taste before putting it in baking pan, or just skip the baking and throw the Parmesan cheese in the pot and serve if you in a hurry.

2 medium onions, chopped
3 green onions, chopped
1 medium bell pepper, chopped
2 celery ribs, chopped
3/4 cup butter
1 tablespoon all-purpose flour
1 teaspoon parsley
2 lbs crawfish tails
1 garlic clove, minced
1 lb Velveeta Mexican cheese, cubed
1 lb fettuccine, cooked
1 pint half-and-half
1/4 cup parmesan cheese

Steps:

  • Saute onions, peppers, celery, garlic, and green onions in butter.
  • Add flour and craw-fish when onions are soft.
  • Cook 15 minutes over medium heat.
  • Add half and half and cheese.
  • Lower heat to low and stir until cheese is melted.
  • Fold in noodles and pour into baking pan.
  • Sprinkle with Parmesan cheese and bake at 350 F for 15 minutes.
  • Best served hot from oven!

YABBIE KABOBS

I love yabbies and this is a great way to make them go further. Very yummy. This would nearly be the first yabby recipe on Recipezaar, but I am sure that it will not be the last. You can also substitute the yabbies for prawns.

1/2 red capsicum, cut into squares
24 yabbies, peeled (crayfish)
2 slices pineapple, cut into pieces
1 lemon, sliced thinly
herbs (of your choice)

Steps:

  • On a skewer place (see picture) in order; yabbie, pineapple, yabbie, lemon, capsicum, yabbie, pineapple etc.
  • Sprinkle herbs over the kabobs and spray with olive oil.
  • Place under a grill on medium heat for a couple minutes on each side.

2 lbs cooked yabbies or 2 lbs tiger shrimp, shelled
1 tablespoon olive oil
1 teaspoon sesame oil
2 ounces fresh gingerroot, cut into very thin strips
2 garlic cloves, crushed
5 shallots, sliced
8 ounces fish stock or 8 ounces chicken stock
1 teaspoon oyster sauce
1 teaspoon hoisin sauce
1/2 teaspoon sugar
2 teaspoons cornflour (mixed with 1 tbsp cold water)
1 fresh chili pepper, very thinly sliced

Steps:

  • Heat the oils in a large saucepan or wok until very hot, add the ginger, garlic and shallots and stir fry 2 minutes.
  • Add the stock, sauces and sugar, stir well, cover and cook over medium heat 5 minutes.
  • Add cornflour mixture, stirring constantly and cook for 1-2 minutes, until sauce thickens.
  • Add the Yabbies, stir well and cook for 2-3 minutes or until heated through.
  • Serve immediately garnished with the thinly sliced chilli.

If you ever find yourself in Southwest Michigan, do yourself a favor and have a meal at Arie's Cafe. It's worth going out of your way to find. 2 (6 -8 ounce) white fish fillets
1 cup milk
1 cup flour
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon granulated garlic
1 ounce clarified butter
1/2 cup diced lemon
1/4 cup diced fresh tomato (avoid using canned)
1/4 cup capers
1 ounce fresh butter

Steps:

  • Mix the salt, pepper, and garlic with the flour in a plate or pie plate. Pour milk into a separate pie plate and dip the fillets in milk, then dredge in the seasoned flour.
  • Heat saute pan over medium heat. When hot, add 1 ounce clarified butter. Place fillets in pan, skin side down (**I always use skinless fish). Cook until golden brown, turn over and cook until done.
  • Remove fillets onto a plate. While pan is still hot, wipe the pan out with a clean damp rag or paper towels. Place back on the stove. Add fresh butter; when it starts to brown add the Grenoble sauce and saute until heated, approximately 1-2 minutes. Pour the warmed Grenoble sauce over the fillets** and serve.
  • **After reading the first review of this recipe I wanted to add a final note. The cookbook says to serve only 1 tablespoon of the Grenoble sauce over each fillet. That may help in making the dish more balanced, as opposed to using all of the sauce.
