REDCLAW YABBY (CRAWFISH) PASTA SAUCE
We've been catching plenty of yabbies for the past few days and this is a recipe I came up with to use some of them. I started the sauce, then let it simmer while I cooked spiral pasta for the two of us. This sauce was really good as it didn't overpower the delicate sweetness of the yabbies.

YABBY (CRAWFISH), TOMATO AND CHILI PASTA SAUCE
We've been away catching lots of yabbies (crawfish) for the past week. I made this last night and want to make it again soon for some of the family. We tried to extract raw meat from the tails for this, but found it too hard so cooked our yabbies quickly in salted water, then went on with the recipe. You could use shrimp/prawns in this too.

Steps:
- Combine the parmesan, parsley and lemon zest in a small bowl and set aside.
- Heat the oil in a pan and cook the onion until softened, add the garlic and cook 30 seconds more, then add in the chilli flakes and white wine. Cook to reduce a little.
- Add the tomatoes and their juice and the chciken stock powder. Cook until reduced and thickened (mine took about 15 minutes over a medium-low heat).
- While this is happening, cook some pasta to serve the sauce over. We had penne, I would have preferred angel hair though!
- When the sauce is thickened to your liking, add in the capers and yabby meat and cook a further 2 or 3 minutes to heat the yabbies through.
- Serve over pasta with the parmesan, parsley zest mix sprinkled over the top.
YABBIE OR CRAYFISH FETTUCCINE
Entered for safe-keeping for ZWT. From Margaret E Walker at inmamaskitchen.com. Native to Australia is the yabbie or freshwater prawns or crayfish. If this fresh ingredient is unavailable, I would substitute prawns (shrimp). If condensed pumpkin soup is unavailable, I would substitute pureed pumpkin.

CRAWFISH FETTUCCINE
You won't believe how easy and delicious this dish is!!!! This recipe was passed down to me from my hubby grandmother. I changed the regular cheese for the spicy jalapeno kind for that kick! You can season to taste before putting it in baking pan, or just skip the baking and throw the Parmesan cheese in the pot and serve if you in a hurry.

YABBIE KABOBS
I love yabbies and this is a great way to make them go further. Very yummy. This would nearly be the first yabby recipe on Recipezaar, but I am sure that it will not be the last. You can also substitute the yabbies for prawns.

STIR FRIED YABBIES WITH GINGER
Australia loves creating fusion dishes using the best of ingredients and techniques from both East and West and the combination of garlic, shallots, ginger, sesame & hoisin sauce make this is a great expample. The name "yabby" refers to freshwater crayfish in Australia. However any types of crayfish, shrimp, or even lobster will work in this. Posted for Zaar World Tour

WHITEFISH GRENOBLE STYLE
This recipe is adapted from a cookbook entitled Best Recipes of Michigan Inns and Restaurants by Margaret E. Guthrie. This is a menu item served at Arie's Cafe in Plainwell, Michigan. If you ever find yourself in Southwest Michigan, do yourself a favor and have a meal at Arie's Cafe. It's worth going out of your way to find. My sister had her wedding rehearsal dinner there and it holds special memories for me. I hope you enjoy this dish as much as I do . . .

Steps:
- Mix the salt, pepper, and garlic with the flour in a plate or pie plate. Pour milk into a separate pie plate and dip the fillets in milk, then dredge in the seasoned flour.
- Heat saute pan over medium heat. When hot, add 1 ounce clarified butter. Place fillets in pan, skin side down (**I always use skinless fish). Cook until golden brown, turn over and cook until done.
- Remove fillets onto a plate. While pan is still hot, wipe the pan out with a clean damp rag or paper towels. Place back on the stove. Add fresh butter; when it starts to brown add the Grenoble sauce and saute until heated, approximately 1-2 minutes. Pour the warmed Grenoble sauce over the fillets** and serve.
- **After reading the first review of this recipe I wanted to add a final note. The cookbook says to serve only 1 tablespoon of the Grenoble sauce over each fillet. That may help in making the dish more balanced, as opposed to using all of the sauce.
