This is a very spicy meal I learned from a friend of mine who came here from Thailand when she was 21.

1 tablespoon vegetable oil
4 garlic cloves, chopped
5 Thai chiles, chopped with seeds
1/2 cup fresh ginger (julienne)
1 lb ground pork
3 tablespoons fish sauce
1 bunch green onion, sliced 1/2 inch lengths
1 bunch cilantro, cut up 1/2 inch
1 large yellow onion, cut into wedges

Steps:

  • Heat oil in wok.
  • Add first 3 ingredients till fragrant.
  • Add ground pork; cook till no pink.
  • Add yellow onion cook about 2 minutes.
  • Add green onions; cook another 2 minutes.
  • Add cilantro and fish sauce; cook 1 more minute.
  • When cooking last 3 ingredients, use your judgment on how you like the firmness of them--you might want to cook more or less. I like mine a little firmer.
  • Serve with jasmine rice.

14 ounces bamboo shoots, cut in thin strips
2 garlic cloves, minced
1 fresh red chile, seeded and finely chopped
1/2 teaspoon dried chili pepper flakes
3 ounces ground pork (or substitute any ground meat such as turkey,beef or even veggie crumbles)
1 teaspoon shaoxing wine or 1 teaspoon sherry wine
salt, to taste
2 teaspoons rice vinegar
2 teaspoons light soy sauce
3 tablespoons chicken stock or 3 tablespoons water
3 thinly sliced scallions, green parts only
1 teaspoon sesame oil
3 tablespoons peanut oil

Steps:

  • Heat a wok over medium heat with just a smear of peanut oil; add the bamboo shoots and stir-fry for a few minutes until they are dry and a little fragrant; set aside.
  • Increase the temperature to high and add the remaining peanut oil; add the garlic and fresh and dried chiles and stir-fry briefly until fragrant. Tip in the pork and continue to stir-fry until it's cooked through and chages color, splashing in the wine as you go and adding salt to taste.
  • Return the bamboo shoots to the wok, and when everything's hot and sizzly, add the vinegar, soy sauce and more salt to taste. Add the stock or water and stir for 1-2 minutes longer to allow the flavors to penetrate the shoots. Toss in the scallions at the end of the cooking time.
  • Turn off the heat, stir in the sesame oil and serve.

My boyfriend and I frequent this thai restaurant in Aurora Ontario. I once ordered their Bamboo Squid, and when I got home, I made some revisions and came up with my own version. I am not so good at cooking with measurements, The way I cook is by tasting, adding a lil here and there ;-) Enjoy!

1 medium onion, sliced thinly
3 garlic cloves, minced
1 fresh ginger, sliced into strips
400 g squid
600 g frozen shrimp, head on
400 ml coconut cream
1 tablespoon fish sauce
2 tablespoons olive oil
1 piece chicken bouillon
1 pinch sugar
1 teaspoon curry powder
1 pinch dried chili pepper flakes
1 (580 ml) can bamboo shoots
200 g string beans, ends snapped

Steps:

  • Heat oil in wok, and saute garlic, onion and ginger.
  • Add frozen squid and saute, then add shrimps and fish sauce; set aside.
  • In the same wok, add string beans and bamboo shoots.
  • Add coconut cream, and if you want a thinner consistency, you can dilute with water.
  • Let it boil and add chicken bouillon.
  • Adjust to taste, add curry powder, chili flakes and add a pinch of sugar to balance the taste.
  • Place on top of hot jasmine rice and serve.

This is anothe recipe from Australian Women's Weekly - Easy Thai Style Cookery. A beautiful dish with lots of flavours and crunch. We like extra curry and the below curry recipe is doubled from the original. Prep time does not include extra time needed to prepare curry

5 dried red chilies (or 1 1/2 tbsp red pepper flakes)
1 tablespoon dried galangal, chopped
1 tablespoon kaffir lime leaf, dried, chopped
1 cup water
2 green onions, chopped
2 garlic cloves, rushed
2 teaspoons lemon rind, grated
1 tablespoon lemongrass, chopped
1 teaspoon ginger, grated
1 tablespoon oil
1 1/2 lbs flank steaks (or marinating steak, dish will be a bit tougher)
6 ounces bamboo shoots, drained & sliced into smaller pieces if necessary
1 fresh red chili, chopped
1 fresh green chile, chopped
1 tablespoon fish sauce
1 kaffir lime leaf, dried
1 teaspoon brown sugar
2 tablespoons fresh basil, chopped

Steps:

  • Curry Paste:.
  • First prepare curry - soak chillies, galangal and peel in a bowl, cover with water and let stand for 1-2 hours or more.
  • Drain peel mixture and reserve 1/2 cup of the liquid.
  • Blend/process peel mixture, reserved liquid, green onions, garlic, lemon rind, lemon grass and ginger until smooth.
  • Stirfry:.
  • heat oil in wok or large deep pan, add steak and stir fry until browned. Add 1/2 cup (or more!) of curry paste and stir for 2 minutes.
  • add bamboo shoots, chilies, fish sauce, lime leaf and sugar, stirfry until steak is tender.
  • Stir in basil and serve over white sticky rice.

One of my all time favorite Chinese dishes is stir-fried black mushrooms and bamboo shoots on a bed of spinach. Since one of the RSC #6 contest ingredients is chicken, it was easy to incorporate chicken pieces into this recipe. I suggest serving this tasty asian dish with white rice, Chinese tea and fortune cookies.

12 -16 small shiitake mushrooms, soaked and cut in half
10 ounces fresh spinach, washed and chopped
8 tablespoons peanut oil (substitute vegetable oil)
3 garlic cloves, chopped
1 teaspoon salt
7 ounces chicken breasts, cut into bit size pieces
2 tablespoons cornstarch
1/2-3/4 cup stock
2 tablespoons light soy sauce
1 tablespoon dark soy sauce
2 tablespoons oyster sauce
1 tablespoon white wine (sweet, not "dry" wine)
1/4 teaspoon sugar
2 teaspoons red wine vinegar
1 tablespoon ginger, chopped
5 ounces bamboo shoots (8oz. tin, Companion Brand Half and Chunk in Water)
1 tablespoon sesame oil
1/4 cup cashews (not raw, not salted)

Steps:

  • Preparation "A": Place the shitake/black mushrooms in a bowl and fill to the top with medium-hot water; Use a dish to cover in order to keep the mushrooms submerged in the water; soak for 30 minutes (turn after 15 minutes); Next drain and squeeze excess water from mushrooms; Then cut away the stem and cut each mushroom in half; Set aside.
  • Preparation "B": Place chicken pieces in a bowl, add 1 teaspoon cornstarch, 2 teaspoons soy sauce, 2 teaspoons red vinegar and 1 tablespoon oil...stir; Set aside.
  • Preparation "C": In a cup add 1/3 stock, 1 tablespoon light soy sauce, 1 tablespoon dark soy sauce, 2 tablespoons oyster sauce, 1 tablespoon wine, 1/4 teaspoon sugar...stir; set aside.
  • Preparation "D": Dissolve in a cup 2 tablespoons stock and 1 tablespoon cornstarch, stir; Set aside.
  • Preparation "E": Cut up bamboo shoots into bite size pieces; set aside.
  • In a wok add 2 tablespoons oil, 1 teaspoon salt and 2 cloves chopped garlic, stir-fry for 30 seconds; Next add the chopped spinach; Stir-fry for about 3+ minutes until al dente; Drain, squeeze out some of the liquid from the spinach; Place on a serving plate and keep warm.
  • In a wok add 2 tablespoons oil, 1 chopped garlic and stir-fry for 30 seconds; Then add the chicken pieces; Stir-fry for about 3-5 minutes until the chicken is thoroughly cooked but not overcooked (stir often); Add cashews, stir briefly, then remove to a bowl and set aside.
  • In a clean wok add 2 tablespoons oil, then 1 tablespoon chopped ginger and stir-fry 30 seconds; Next add the shitake mushrooms and stir-fry for about 1-2 minutes (add a little stock if needed); Next add the bamboo shoots and stir-fry another minute; Add Preparation "C" soy sauce and oyster sauce liquid, stir occasionally and cook for about 2-3 minutes.
  • Stir Preparation "D" cornstarch and stock once again and add a small amount "As Required" (not all) until you have a thick coating on the mushrooms & bamboo shoots (That is, not a liquid sauce).
  • Add the cooked chicken pieces & cashews and blend together for about 1 minute.
  • Add 1 tablespoon sesame oil and then one quick stir.
  • Place the chicken, mushrooms and bamboo shoots on top of the bed of spinach.
  • Serve with sticky white rice, Chinese tea and fortune cookies.
  • Note:.
  • I prefer to use a non-sweet oyster flavored sauce, such as Hop Sing Lung Brand; However, most brands contain sugar (often second ingredient listed on bottle) which is perfectly acceptable.

2 1/2 lbs ground pork
8 anchovy fillets, finely chopped
2 1/4 teaspoons sweet paprika
3/4 teaspoon pure chile powder
1/4 teaspoon cayenne
1 1/4 cups coconut milk
1 medium jicama, peeled and coarsely grated
1 tablespoon fresh lime juice
12 flour tortillas
1 small eggplant, cut into very thin,1 & 1/2 inch long strips
1/2 small green cucumber, peeled and coarsely grated
5 pickling cucumbers, peeled and coarsely grated
1/2 cup fresh mint leaves

Steps:

  • Place the pork, anchovies, paprika.
  • chili powder and cayenne in a large ungreased frying pan.
  • Cook over medium high heat.
  • Stirring occasionally to break up the chunks of meat about 5 minutes until the pork is browned.
  • Add the coconut milk and cook until almost all the liquid evaporates, about 10 minutes.
  • Mix the jicama and the lime juice to assemble.
  • Spread about 1/3 cup of the pork filling in the center of a tortilla.
  • Top with the jicama, eggplant, cabbage, cucumbers, and mint.
  • Fold and serve.

1 lb diced boneless chicken
1 -2 tablespoon red curry paste
3/4 cup unsweetened coconut milk
1/2 cup sweet basil
5 kaffir lime leaves, halved
1 -3 fresh hot red chili pepper, sliced lengthwise into narrow strips (amount to taste)
1/2 cup sliced zucchini
2 tablespoons fish sauce
1/3 cup water
5 ounces sliced bamboo shoots
1 1/2 teaspoons palm sugar or 1 1/2 teaspoons brown sugar

Steps:

  • Heat about 1/2 the coconut milk to a boil in a large pan.
  • Stir in the red curry paste.
  • Add the chicken, reduce heat, and simmer until chicken is cooked through, 5-7 minutes.
  • Add the rest of the coconut milk, water, bamboo shoots, sugar, and fish sauce and return to a boil.
  • Stir in the zucchini, kaffir lime leaves, and hot chillies.
  • Cook several minutes or until zucchini are done to your liking.
  • Garnish with sweet basil before serving.
  • Serve with hot rice, if desired.
