Xi-Fan - Easy Breakfast Fried Rice image

Xi-fan means "watery rice" and it's often eaten for breakfast in Northern China, usually made with rice but can be millet, barley, or some other grain. It is often accompanied by peanuts, pickled vegetables, thousand year old eggs, or shredded pork. This easy modern version is one of the only breakfasts I can eat before working out for two hours that keeps me going! You can use any spices you like.

Number Of Ingredients 7

1 cup brown rice (may include parts green split peas, whole green lentils, whole grain, barley flakes and pearl barley)
2 slices turkey bacon, cooked and chopped (or canadian bacon)
1/3 cup frozen peas and carrot, defrosted (or any fresh or frozen veggie)
1/4 cup egg white (or two whole eggs)
garlic powder
pepper
non-fat cooking spray

Steps:

  • Spray skillet with non-fat cooking spray and heat on high; add rice, bacon and veggies and mix together.
  • Once heated through, add egg white and turn heat down to medium. After it starts to cook, stir through rice mixture.
  • Sprinkle with spices to taste and serve.

Turn your day-old rice into this delicious Chao Fan. This Chinese-style vegetable-studded fried rice is super easy to make and is as good as anything you've had at your fave Chinese restaurants!

Number Of Ingredients 10

4 cups cooked rice (day old and refrigerated)
3 tablespoon butter (or margarine)
3 cloves garlic (minced)
2 cups mixed vegetables (diced (frozen or fresh))
2 tablespoon soy sauce
2 tablespoon oyster sauce
1 tablespoon oil (or butter)
2 large eggs (beaten)
½ cup green onions (- optional)
½ teaspoon sesame oil (- optional)

Steps:

  • Mash the rice gently with your hands to break apart lumps and loosen each grain. Set aside.
  • In a large pan or wok, heat butter or margarine over high heat until melted.
  • Add garlic and saute until golden. Add the frozen mixed vegetables and cook for 2 minutes or until no longer frozen and liquid evaporates.
  • Add the cooked rice, soy sauce, and oyster sauce and toss to mix. Cook for another minute, stirring from time to time.
  • Move everything to the sides and make room in the middle. Add a tablespoon of oil or butter then add the beaten eggs and stir and cook until scrambled. Make sure there are no big lumps.
  • Toss everything together several times to combine. Season with salt and pepper and stir. Cook for another minute or two without stirring.
  • Then add green onions and sesame oil and stir one last time before removing from heat.
  • Transfer to a serving plate.

4 large egg whites
1/4 cup cooked brown rice (certified gluten-free if necessary)
1/4 teaspoon chili-garlic sauce (certified gluten-free if necessary)
1 tablespoon thinly sliced green onion top
salt and pepper, to taste

Steps:

  • In a small bowl, whisk the egg whites until they are slightly frothy.
  • Place a small nonstick skillet over medium heat. When warm, lightly mist the pan with cooking spray, and pour the egg whites into the pan. Scramble the whites until almost set, about 3-5 minutes.
  • Stir in the rice, chili-garlic sauce and green onion. Cook, stirring constantly, for 1-2 minutes, or until the eggs are completely cooked. Season with salt and pepper. Serve immediately.

Wetting your hands with warm water can prevent the rice from sticking to them.
  • Next, lay 1 piece of Chinese fried dough in the center, along with ½ of the pork sung, and ½ of the Chinese preserved vegetables. If you’d like, you can also sprinkle over chopped cilantro, scallions, and sesame seeds at this step. Roll up the filling in the “sheet” of rice by rolling the sushi mat. Squeeze the sushi mat to ensure that the roll stays in tact. Repeat these steps to assemble the second roll. Cut each one in half, and breakfast is served!
