Cajun-Style Chicken Fingers image

These are so savory, really spicy too! If you don't like them so hot, you can cut down on the pepper in the recipe but that red pepper doesn't hurt that bad! ;)

1 lb boneless skinless chicken breast
3 tablespoons olive oil
2 teaspoons garlic powder
2 teaspoons onion powder
1 1/2 teaspoons dried thyme
1/2 teaspoon salt
1/2-1 teaspoon cayenne pepper
1/4 teaspoon white pepper
1/4 teaspoon black pepper
1 cup breadcrumbs

Steps:

  • Cut chicken into 1 inch strips, or"fingers" about 3 inches in length.
  • Mix together remaining ingredients, (except breadcrumbs and 3 tbsp. margarine), in a bowl and add chicken and mix well, insuring that chicken is coated on all sides.
  • Allow chicken to marinate in this for at least 20 minutes.
  • Coat chicken in breadcrumbs, shaking off excess, and place chicken fingers on plate.
  • Heat margarine in skillet over medium heat; add chicken fingers, and cook until browned and crispy, about 5 minutes per side.
  • Add more margarine to the skillet if necessary.
  • Drain fingers on paper toweling.
  • Serve hot with Tabasco sauce, if desired.

  • Preheat oven to 425*F.
  • Spray baking sheet with nonstick spray.
  • In shallow dish, mix wheat germ and spices.
  • In another shallow dish, whisk egg whites with 2 tbsp water.
  • Dip chicken into egg mixture, then into the wheat germ mixture.
  • Transfer to baking sheet.
  • Bake until cooked, about 10 minute.

This is the enchilada recipe my mom used when I was growing up. It is different in that is uses cream cheese. Oh it is so yummy....the memories just flood back. I believe it comes from a Pace Picante Tex Mex recipe. I like to serve it with my Lone Star Spanish Rice. Check it out in my recipes.

1 large onion, chopped
4 tablespoons butter or 4 tablespoons margarine
3 cups shredded cooked chicken
1 1/2-2 cups salsa or 1 1/2-2 cups picante sauce, divided
6 ounces cream cheese, softened
2 teaspoons ground cumin
3 cups shredded monterey jack cheese or 3 cups cheddar cheese
16 corn tortillas
vegetable oil

Steps:

  • Saute onion in butter until tender but not brown.
  • Stir in chicken, 1/2 cup salsa, cream cheese, and cumin; heat through.
  • Remove from heat; stir in 1 cup shredded cheese.
  • Heat about 1/2 inch oil in skillet until hot. Quickly fry each tortilla in oil to soften; drain on paper towels.
  • Spoon 1/3 cup mixture down center of each tortilla and sprinkle a little bit of cheese.
  • Spread enough picante sauce or salsa to cover bottom of lightly greased 9x13 pan.
  • Place enchiladas in pan and spoon salsa over top.
  • Sprinkle with remaining cheese.
  • Bake at 350 for 15-20 minutes.

My personal rendition of a WW recipe that I love because it packs all the flavors of NOLA while managing to be both fast and light. The level of heat here varies so much based on your brand of Cajun spice and sausage - so taste and adjust accordingly. For those who *do* count points, try finding the lowfat chicken andouille sausage. Half the points of the regular so you can add more to the dish. (Points confirmed on WW Recipe Builder.)

cooking spray
1 lb boneless skinless chicken breasts or 1 lb chicken breast tenders, 1 inch pieces
1/4-1/2 teaspoon cajun spices (try Cajun Spice Rub Mix Recipe)
1/4 teaspoon garlic powder
1/4 lb andouille sausage, thinly sliced
1 red pepper, cut into 1/4 inch slices
1 onion, cut into 1/4 inch slices
1 (14 1/2 ounce) can diced tomatoes
1 tablespoon tomato paste or 1 tablespoon ketchup

Steps:

  • Cut chicken into 1 inch or slightly smaller cubes. Season with garlic powder and Cajun spice mix.
  • Place nonstick over medium high heat. Give a quick shot of cooking spray and add the seasoned chicken. Cook for a minute and add the andouille sausage. Continue to cook for three to four minutes until the chicken is opaque.
  • Remove chicken and sausage from pan and cover to keep warm. Gently wipe the pan to remove the excess oil. Add the onions and peppers to the pan and cook for four to five minutes.
  • Stir the canned tomatoes and tomato paste into the skillet. Return the chicken and sausage and simmer for six to eight minutes.
  • Serve with hot cooked rice for additional points.

1 cup dry bread crumbs
2 tablespoons grated Parmesan cheese
1 teaspoon salt
3/4 teaspoon garlic powder

1 large egg
1 cup buttermilk
1-3/4 pounds boneless skinless chicken breasts, cut into strips
Oil for deep-fat frying

Steps:

  • Combine the first 6 ingredients in a shallow bowl. In a second shallow bowl, whisk egg and buttermilk. Dip a few pieces of chicken at a time in buttermilk mixture, then in flour mixture; toss to coat., In an deep cast-iron or electric skillet, heat oil to 375°. Fry chicken, a few strips at a time, until chicken is no longer pink and crust is golden brown, 2-3 minutes on each side. Drain on paper towels.
