1 lb boneless pork chop
1/4 teaspoon pepper
2 tablespoons vegetable oil
1 large red bell pepper, cut in 1 inch squares
8 scallions, trimmed in 2 inch lengths
1 large tart apple, sliced 1/2 inch thick
2 teaspoons finely chopped fresh ginger
1 garlic clove, finely chopped
1 cup sweet and sour sauce
2 teaspoons lemon juice

Steps:

  • Cut pork into think strips and season with pepper. Heat oil over high heat. Add pork and cook until white throughout.
  • Add bell pepper, scallions, and apple slices. Stir fry until scallions turn bright green. Add ginger and garlic and stir fry 1 minute longer.
  • Reduce heat. Add sweet and sour sauce, lemon juice and ½ cup water. Cook until sauce is hot and coats meat and vegetables, about 2 minutes.

1 lb pork tenderloin, trimmed of all visible fat, cut into 1/2-inch cubes
2 tablespoons cornstarch
1/3 cup water
1/4 cup rice vinegar
1/4 cup sugar
3 tablespoons ketchup
2 tablespoons reduced sodium soy sauce
1 tablespoon canola oil
1 tablespoon minced peeled fresh ginger
2 garlic cloves, minced
1 green bell pepper, seeded and cut into 1/2-inch pieces
1 (8 ounce) can pineapple chunks in juice, drained

Steps:

  • Combine the pork with 1 tablespoon of the cornstarch in a medium bowl; toss well to soat and set aside. Combine the remaining 1 tablespoon cornstarch, the water, vinegar, sugar, ketchup, and soy sauce in a small bowl; set aside.
  • Heat a nonstick wok or a large, deep skillet ower medium-high heat until a drop of water sizzles. Swirl in the oil, then add the pork. Stir-fry until almost cooked through, 2-3 minutes. Add the ginger and garlic. Stir-fry until fragrant, about 30 seconds. Add the bell pepper and pineapple; stir-fry until crisp-tender, about 3 minutes. Add the vinegar mixture and cook, stirring constantly, until the mixture boils and thickens and the pork is cooked just through, 1-2 minutes.

1 1/2 lbs lean pork tenderloin, cut into thin strips
15 ounces canned unsweetened pineapple chunks
1/2 cup water
1/3 cup rice wine vinegar
1/4 cup packed brown sugar
2 tablespoons cornstarch
1/2 teaspoon table salt
1 tablespoon low sodium soy sauce
2 medium green peppers, sliced
1 small onion, sliced
3 cups cooked brown rice, kept warm

Steps:

  • Heat a nonstick skillet coated with cooking spray over medium-high heat.
  • Add pork and cook until golden brown, about 8 to 10 minutes; remove from skillet and set aside. Drain any remaining fat from skillet.
  • Drain pineapple chunks, reserving juice; set aside.
  • Combine water, vinegar, sugar, cornstarch, salt, soy sauce and reserved pineapple juice in a small bowl; add to skillet and cook until sauce is slightly thickened, about 2 minutes. Add pork; cook covered over low heat until meat is tender, stirring occasionally, about 30 minutes.
  • Add peppers, onion and pineapple chunks; cook 5 minutes. Serve over rice. Yields about 1 cup of pork and 1/2 cup of rice per serving.

5 ounces sweet and sour sauce, LaChoy
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
8 ounces pineapple chunks in juice, drained (reserve 1/4 cup juice)
1 tablespoon brown sugar
16 ounces of frozen stir fry vegetables

Steps:

  • Cut the raw chicken breast into bite sized pieces.
  • Spray your crock-pot with cooking spray.
  • Add chicken, garlic powder and onion powder; stir.
  • Stir in sweet and sour sauce, pineapple chunks, brown sugar and the 1/4 cup of pineapple juice.
  • Cover and cook on low for 6-7 hours.
  • Add frozen vegetables during the last 30 minutes of cooking and cook on high.
  • Makes four servings at 5 WW pts per serving.
