ROASTED GREEN BEANS - WW CORE

Roasted Green Beans - Ww Core image

These are wonderful, and they go fast! This is a great recipe for fresh green beans, even when the beans are out of season and might be a little tough. The natural sugar in the beans caramelizes, giving this dish lots of flavor.

Provided by CoreChick

Categories     Vegetable

Time 25m

Yield 4 serving(s)

Number Of Ingredients 5

1 lb fresh green beans
1 teaspoon olive oil
1/2 teaspoon garlic, minced
salt
pepper

Steps:

  • Rinse the beans, breaking off the ends. Leave them long, don't break down into smaller pieces.
  • Line a baking sheet with foil. Preheat oven to 425 degrees.
  • Place beans on foil, sprinkle with garlic then drizzle with oil. Toss the beans until they are coated with oil. Sprinkle with salt and pepper, you can also add a little red pepper if you want to add heat.
  • Bake for 20 minutes, shaking the sheet a couple of times during baking to flip the beans. Beans will shrink slightly and look wrinkled, with dark spots. This is how they should look!
  • Serve hot, as a side dish or snack.

ROASTED STRING BEANS

Roasted String Beans image

Here is a delicious side dish that goes great with steak. The shallots and garlic start to caramelize adding a depth to the dish. These green beans certainly are not your typical beans. If you really want to add something to dish roast some cherry tomatoes along with the beans, they add a great burst of flavor. I hope you enjoy!

SAUTEED STRING BEANS WITH ALMONDS (WEIGHT WATCHERS)

Sauteed String Beans With Almonds (Weight Watchers) image

This recipe was published on the WW site last year. I made it for Thanksgiving dinner and everyone loved it. According to WW, a 3/4 cup serving is 1 point. Prep time includes snapping the fresh green beans. If you're faster than me or you're using frozen green beans, it won't take as long. For variety, you can substitute pine nuts for the almonds. Toast the pine nuts the same as the almonds.

Provided by JackieT78

Categories     Vegetable

Time 42m

Yield 3/4 cup servings, 8 serving(s)

Number Of Ingredients 7

1/2 cup slivered almonds or 1/2 cup pine nuts
2 teaspoons olive oil
3 medium garlic cloves, minced
8 cups fresh green beans, snapped and trimmed or 8 cups frozen green beans, thawed
1/2 cup canned chicken broth or 1/2 cup canned vegetable broth
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper, freshly ground (or to taste)

Steps:

  • Place almonds (or pine nuts) in a large, dry skillet and place over medium heat. Cook until nuts are golden brown, shaking pan frequently, about 2 to 4 minutes. Remove nuts from pan and set aside.
  • Heat oil in same skillet over medium heat.
  • Add garlic and cook, stirring, 1 minute.
  • Add string beans and saute 1 minute.
  • Add broth to pan; cover and steam until beans are crisp-tender, about 3-5 minutes.
  • Add salt and pepper; stir to coat.
  • Remove from heat; stir in toasted almonds.

SIMPLY SPICED STRING/ GREEN BEANS

Simply Spiced String/ Green Beans image

A very simple recipe, yet a bit different from your regular string bean side dish. You can serve this warm or chilled, I always serve it chilled as a salad.

Provided by Mirj2338

Categories     Vegetable

Time 40m

Yield 8 serving(s)

Number Of Ingredients 6

3 lbs fresh string beans
2 teaspoons salt
1/4 cup water
1/4 cup oil
1/4 teaspoon turmeric
1/2 teaspoon cumin

Steps:

  • Wash and trim the string beans.
  • I usually start out with more string beans than the 3 pounds called for in the recipe since I eat a lot raw and not all of them make it into the pot.
  • Combine with all the other ingredients in a 3 quart pot and mix.
  • Cook, covered on a small flame for 30 minutes.
  • Drain.
  • Serve warm or chilled.
