This is a tasty side dish which also works well as a take-to-work lunch reheated in the microwave the next day. Makes 2 lunches or serves 2-3 as a side dish. The figures may be different between countries, but by British Weight Watchers, this recipe is a total of 10 points, so if you make 2 servings out of it, they would be 5 points each.

1 cup long-grain white rice, uncooked
1 small onion, finely diced
2 chicken stock cubes
2 cups hot water
1 1/2 cups canned chopped tomatoes
1 1/2 teaspoons italian seasoning
2 teaspoons finely grated reduced-fat parmesan cheese
2 garlic cloves, crushed
salt and pepper, to taste

Steps:

  • Heat the oven to 350°F or 180°C.
  • Put the rice in an ovenproof casserole dish. Add the finely diced onion.
  • Crumble in the chicken stock cubes and pour over the boiling water. Stir to dissolve the stock.
  • Add the chopped tomatoes, italian seasoning, parmesan cheese and garlic. Season with salt and pepper if desired. Stir to mix well.
  • Cover with a lid or tin foil and bake in the oven for 45 minutes.
  • Uncover after 45 minutes. Stir and bake a further 10 minutes uncovered or until the rice is cooked and most of the liquid has been absorbed.
  • Serve hot or allow to cool and store in the fridge to be reheated.
  • NB: If reheating in the microwave the next day, add a little water before heating, to avoid the rice drying out.

1 cup chopped onion
2 garlic cloves, minced
2 tablespoons olive oil
1 cup thinly sliced celery
1 teaspoon dried thyme
1/2 teaspoon dried marjoram
1 cup diced green bell pepper
1 (15 ounce) can tomatoes, drained and reserve liquid
1 tablespoon tomato paste
salt and pepper
3 cups cooked rice

Steps:

  • In a big skillet, over medium heat, cook the onions and garlic in oil for 5 minutes, stirring frequently.
  • Add in the celery, thyme, and marjoram; cook and stir for 2 more minutes.
  • Add in the bell pepper; continue cooking and stirring for 2-3 more minutes.
  • Add in the drained tomatoes and tomato paste; stir to combine, crushing the tomatoes as you stir.
  • Add salt and pepper to taste;.
  • Add in the rice and stir to mix thoroughly.
  • If mixture is too dry, add some reserved tomato juice until you reach desired consistency.
  • When the rice is hot, the dish is ready to serve.

This is a very versatile Brazilian side dish. If serving with chicken, use chicken broth, if serving with beef, use beef broth. This isn't spicy, just a nice colorful side dish.

1 cup basmati rice (may use any long grain rice)
1/2 cup onion, chopped
2 garlic cloves, minced
2 tablespoons cooking oil
2 cups broth, beef (depends on what you are serving this with) or 2 cups chicken (depends on what you are serving this with)
1 large tomatoes, peeled and chopped
1 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • In a 2 quart saucepan cook the uncooked rice, onion, and garlic in hot oil for 5 to 8 minutes or until the rice is golden and the onion is tender, stirring constantly. Remove from heat.
  • Carefully stir in broth, tomato, salt, and pepper. Return to heat. Bring to a boil; reduce heat. Cover and simmer for 20 minutes or until the rice is tender.

1 cup uncooked instant rice (I prefer regular cooked rice)
1 cup chopped onion
2/3 cup diced green bell pepper
1/2 teaspoon chili powder
1/4 teaspoon ground cumin
1/4 teaspoon pepper
1/8 teaspoon salt
1 (14 1/2 ounce) can whole tomatoes, undrained and chopped
1 (5 1/2 ounce) can tomato juice

Steps:

  • Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot.
  • Add rice, onion, and bell pepper; saute 5 minutes.
  • Add remaining ingredients; simmer, uncovered, 5 minutes or until liquid is absorbed.
  • If using regular rice cook rice first.
  • Add rice to sauteed ingredients.
  • Add remaining ingredients and cook until heated through.
