4 ounces uncooked rice noodles or 4 ounces rice
2 tablespoons low sodium soy sauce, divided
1 (1 lb) pork tenderloin, trimmed and thinly sliced
3/4 cup reduced-sodium fat-free chicken broth
1/4 cup hoisin sauce
1 tablespoon cornstarch
1 tablespoon honey
4 teaspoons dark sesame oil, divided
3 cups snow peas, trimmed (about 1/2 pound)
1/2 cup sliced red bell pepper
1 tablespoon bottled ground fresh ginger
1 teaspoon bottled minced garlic
1/2 cup chopped green onion

Steps:

  • Prepare rice noodles according to package directions, omitting salt and fat. Drain and keep warm.
  • Combine 1 tablespoon soy sauce and pork, tossing to coat. Set aside.
  • Combine remaining 1 tablespoon soy sauce, broth, hoisin, cornstarch, and honey in a medium bowl, stirring with a whisk until smooth.
  • Heat 1 tablespoon sesame oil in a large nonstick skillet over medium-high heat. Add pork mixture to pan; sauté 3 minutes or until browned. Remove pork from pan.
  • Add remaining 1 teaspoon sesame oil to pan. Stir in peas, bell pepper, ginger, and garlic; sauté 30 seconds. Return pork mixture to pan; stir in broth mixture.
  • Simmer 2 minutes or until thick, stirring occasionally. Remove from heat, and stir in green onions. Serve pork mixture over the noodles.

This is my favourite stir-fry recipe from one of my Australian Weight Watchers cookbooks called Recipe Collection 2003

4 small chicken breast fillets, no skin sliced
2 1/2 teaspoons Chinese five spice powder
1 tablespoon fresh ginger, shredded
1 tablespoon sesame seeds
6 shallots, chopped
2 tablespoons soy sauce
2 tablespoons honey
2 tablespoons hoisin sauce
500 g snow peas, trimmed

Steps:

  • Roll chicken in five-spice powder, coat a pan with cooking spray and cook chicken until browned, Remove from pan. Recoat the pan and add ginger, sesame seeds and shallots.
  • Stir-fry for 2-3 minutes, add the combined soy, honey and hoisin sauces, then add the snow peas cook until peas are bright green and tender-crisp.
  • Return the chicken to the pan and cook until heated through.
  • Serve with noodles or rice.

1 cup chicken broth, low sodium
2 tablespoons hoisin sauce
1 1/2 tablespoons dry sherry
2 teaspoons cornstarch
cooking spray
1 teaspoon peanut oil (or vegetable oil)
3 cups fresh snow peas, trimmed
1 cup red pepper, cut in strips
2 teaspoons dry roasted peanuts, unsalted, finely chopped

Steps:

  • Combine chicken broth, hoisin sauce, sherry, and cornstarch in a small bowl; stir well, and set aside.
  • Coat a large nonstick skillet with cooking spray; add peanut oil, and place over medium-high heat until hot.
  • Add snow peas and bell pepper strips; saute' 3 minutes or until vegetables are crisp-tender.
  • Add broth mixture, and cook 2 minutes or until mixture is thick, stirring constantly.
  • Sprinkle with peanuts.
