WEIGHT WATCHERS TACO CASSEROLE

Steps:
- Saute meat, beans, onions, taco seasoning, sauce, and corn on medium-high heat until meat is browned (or soy crumbles are thoroughly cooked).
- Spoon half your meat mixture into your casserole dish in an even layer, top with a thin layer of sour cream, then sprinkle with some cheese.
- Repeat. Cover with cheese.
- Bake at 350 for 15 minutes, then serve topped with diced tomatoes and green onions.

- In a large skillet, cook the beef over medium heat until meat is no longer pink; drain. Stir in the beans, tomatoes, Mexicorn, soup, water and chili powder. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes., Spoon beef mixture into taco shells; serve with toppings of your choice.

WW HEALTHY BEEF-AND-BEAN TACOS
This is a great recipe out of my Weight Watchers "Take-Out Tonight!" cookbook. This also makes an excellent dip for veggies or baked tortillas. This has 6 points per serving, I also like to add in some 0 point things like salsa, pickled jalapenos and cilantro. DH who isn't watching points likes to throw on some shredded cheese. :)

Steps:
- Preheat the oven to 400 degrees F.
- Place the taco shells on a baking sheet and warm them in the oven, about 8 miuntes; keep warm.
- Meanwhile, heat a large nonstick skillet over medium-high heat.
- Swirl in the oil, then add the beef, onion, garlic, and seasoning mix.
- Cook, breaking up the beef with a wooden spoon, until browned, about 8 minutes.
- Stir in the water.
- Cook, until the liquid has evaporated, about 3 minutes.
- Stir in the beans and heat through.
- Spoon about 1/4 cup of the beef mixture into each taco.
- Top each with the lettuce, tomato, olives, onion, and sour cream.

TERRIFIC TACO SOUP ( WW )
A very satisfying meal; also a great choice for those on a diet. One cup is equal to two Weight Watchers points. If the diet isn't too much of a concern, try topping this with some shredded cheddar and a dollop of sour cream or even enjoy it with some Tostitos Scoops. Yummy and guilt free!

Steps:
- Chop onion, combine with ground beef. Brown and drain the ground beef.
- Dump all of the cans, undrained into a 3 quart pan along with the taco and dressing packets and ground beef and onion. Stir to combine and heat on medium heat until a low boil has been achieved.
- At this point, it is ready to serve. Additionally, you may let the mixture simmer until reduced and you may enjoy this dish as more of a chili instead of a soup.
- For a real dump and go, this is a real hit with our family. Enjoy!

Steps:
- Toast chili powder and cumin in a medium skillet over medium heat until fragrant, about 30 seconds.
- Add oil to skillet and heat; add onion and cook until tender, about 3 minutes.
- Add garlic and cook until fragrant, about 3 minutes.
- Add beef and cook until cooked through, about 5 minutes.
- Add tomato sauce and beans; cook 5 minutes more or until heated through.
- (Note: to turn up the heat, toss in some chopped chipotle peppers with the tomato sauce.).
- To assemble fill each taco shell with 1/4 cup of beef mixture; top each with 1/2 tablespoon of sour cream and 1/2 tsp of cilantro.

- In a large pan over medium-high heat add ground beef and black beans and sprinkle with some salt. Break up the meat and beans while cooking.
- When the meat has browned add in the taco seasnoing and stir to coat. Let it cook for a couple minutes then add in the tomato sauce and water. Bring to a boil while stirring and then simmer for about 10-15 minutes to let the flavors really get to know each other.
- When the meat is done then add it as a delicious filling to tacos, burritos, taquitos, enchiladas or throw it on top of some nachos or a salad! Enjoy.

- Combine flank steak, beer, orange juice, lemon juice, chili powder, paprika, cumin, salt, and pepper in 5- or 6-quart slow cooker. Cover and cook until beef is fork-tender, 4–5 hours on High or 8–10 hours on Low.
