Easy, delicious and very steak-like. I've given options for either fresh or dried herbs, but these 'shrooms really shine with the fresh stuff!

6 medium portabella mushrooms
1 teaspoon fresh rosemary or 1/2 teaspoon dried rosemary
3 tablespoons extra virgin olive oil
3 tablespoons balsamic vinegar
1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
2 garlic cloves, thinly sliced
salt and pepper

Steps:

  • Remove stems of mushrooms and wipe them with a damp cloth.
  • Preheat the broiler or grill.
  • Mix oil, vinegar, herbs and garlic in a bowl.
  • Brush mushrooms with the mixture.
  • Grill or broil the mushrooms 3-5 minutes per side or until soft and brown.

This is from Mayo-clinic. I loved that it was easy, healthy and tasty! I broiled baby portabellos on a cookie sheet.

4 large portabella mushrooms or 8 baby portabella mushrooms
1/4 cup balsamic vinegar
1/2 cup pineapple juice
2 tablespoons chopped fresh ginger, peeled
black pepper (optional)
1 tablespoon chopped fresh basil

Steps:

  • Clean mushrooms with a damp cloth and remove their stems. Place in a glass dish, stemless (gill) side up.
  • To prepare the marinade, in a small bowl whisk together the vinegar, pineapple juice and ginger. Drizzle the marinade over the mushrooms. Cover and let marinate in the refrigerator for about 1 hour, turning mushrooms once.
  • Prepare a hot fire in a charcoal grill or heat gas grill or broiler. Away from the heat source, lightly coat the grill rack or broiler pan with cooking spray. Position the cooking rack 4 to 6 inches form the heat source.
  • Grill or broil the mushrooms on medium heat, turning often, until tender, about 5 minutes on each side. Baste with marinade to keep from drying out. Using tongs, transfer the mushrooms to a serving platter. Garnish with basil and serve immediately.

4 large fresh portabella mushroom caps
1/4 cup balsamic vinegar
2 tablespoons shallots (minced) or 2 tablespoons red onions (minced)
3 fresh garlic cloves (chopped)
2 tablespoons olive oil
1 tablespoon fresh rosemary (chopped)
1 tablespoon thyme (chopped)
salt and pepper, to taste
shaved fresh parmesan cheese, for garnish (optional)

Steps:

  • Place mushrooms in a quart size zip lock bag combine remaining ingredients except cheese and pour over the top of the mushrooms.
  • Marinate for 1-2 hours, tossing once or twice.
  • Remove from marinade and cook on hot grill for 3 minutes on each side watching carefully not to burn.
  • Serve as a side dish, main course, or on a roll (burger substitute).
  • Topped with shaved cheese.

1/2 cup shredded kraft low-moisture part-skim mozzarella cheese
1/4 teaspoon garlic powder
8 leaves fresh basil
1 teaspoon dried oregano
2 medium plum tomatoes, sliced into 1/4 inch thick slices
olive oil flavored cooking spray
4 portabella mushrooms, medium-sized, stems removed, wiped clean with a damp paper towel

Steps:

  • Heat a grill or grill pan to medium-high heat. Place mushrooms on a tray and lightly coat with cooking spray.
  • Place mushrooms on grill, underside (gill) down, and cook, covered, 4 minutes. Uncover and using tongs, flip mushrooms; cook for 4 minutes more.
  • Meanwhile, in a small bowl, combine cheese, garlic powder and oregano.
  • After mushrooms have cooked for 8 minutes, remove them to a tray and reduce grill heat to medium-low. Fill each mushroom cap with about 2 tablespoons of seasoned cheese. Place mushrooms back on grill and cook, covered, until cheese melts, about 2 minutes.
  • Remove mushrooms to a serving plate and top each with 4 slices of tomato and 2 basil leaves. Yields 1 mushroom per serving.

Easy and so delicious, great for a quick dinner and your vegetarian guest will love it! This would also be great for busy college students.I have added a few more spices to the mix. Great served with whole wheat pasta or/and garlic bread, or try it over creamy polenta! Add more cheese and sauce if you like.

3 tablespoons extra-virgin olive oil, plus extra for greasing the grill pan
4 -6 large portabella mushrooms (or you can use more smaller ones or even sliced)
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 teaspoon italian seasoning
1/4-1/2 teaspoon red pepper flakes (optional if you like a little heat and zing)
1 cup marinara sauce (store bought or homemade)
4 garlic cloves, minced (optional)
1/2 cup shredded mozzarella cheese (or you could also use Fontina, Monterey Jack, even goat cheese)
1/4 cup grated parmesan cheese
2 tablespoons butter, cut into small pieces

Steps:

  • Place a grill pan over medium-high heat or preheat a gas or charcoal grill.
  • Drizzle 3 tablespoons of olive oil over both sides of the mushrooms, coating well. Sprinkle the mushrooms with Italian seasoning, red pepper flakes if using, and salt and pepper.
  • Drizzle olive oil on the grill to prevent the mushrooms from sticking. Grill until the mushrooms are heated through and tender, about 5-8 minutes per side.
  • Preheat the oven to 400 degrees F.
  • Chop the garlic cloves into very small pieces(mince), if using, and add to marinara sauce.
  • Spread 1/2 cup of the marinara sauce on the bottom of a 9 by 13-inch baking dish. Place the grilled mushrooms on top of the marinara sauce and top with the remaining marinara sauce. Sprinkle with the cheeses and top with the butter pieces. Bake until the cheese melts and the top is golden, about 15 minutes. Serve. Enjoy.
