TEQUILA-JALEPEñO CHICKEN



Tequila-Jalepeño Chicken image

Serve this spicy Southwestern-style dish with a large salad on the side. You could also toss some peppers, eggplant or zucchini onto the grill with the chicken.

0.25 medium Uncooked onion(s) white, chopped
2 tsp Olive oil
0.25 cup(s) Fresh lime juice
1 fl oz Tequila about 2 tbsp
4 medium clove(s) Garlic clove(s) minced
1 tsp Unpacked brown sugar
2 Tbsp Mineral water
0.5 tsp Table salt
1 medium Jalapeño pepper(s) seeded and diced
1 pound(s) Uncooked boneless skinless chicken breast(s) four 4-oz pieces

Steps:

  • Purée onion through to pepper in a blender until smooth. Marinate chicken breasts for at least 1 hour. They can be marinated for several hours, if desired.
  • Heat grill. Pat excess marinade off chicken and grill until cooked through, about 4 minutes per side.
  • Serve with a fresh garden salad.

This is out of a WW Cookbook called "Quick Cooking for Busy People" It has only 2 WW Points. DH gave it an excellent rating. Hope you enjoy! For a quick meal serve with grilled slices of veggies (zucchini, yellow squash, onion or peppers). For additional flavor, brush vegetables with remaining marinade before placing them on the grill. Cooking time does not include marinating time.

1/3 cup steak sauce (such as Heinz 57)
1/3 cup jalapeno jelly, melted
2 tablespoons low-sodium worcestershire sauce
1 teaspoon garlic powder
4 (4 ounce) boneless skinless chicken breast halves
cooking spray

Steps:

  • Combine first 4 ingredients in a large heavy-duty, zip-top plastic bag.
  • Add chicken; seal bag, and shake until chicken is coated well.
  • Marinate in refrigerator 8 hours or overnight, turning bag occasionally.
  • Remove chicken from marinade, discarding marinade.
  • Coat grill rack with cooking spray, and place on grill over medium-hot coals (350-400 degrees).
  • Place chicken on rack; grill, covered, 5 minutes on each side or until done.

¼ cup honey
⅓ cup fresh lime juice
2 tbsp soy sauce
2 tbsp fresh cilantro
3 jalapeno peppers (halved & seeded)
¼ tsp salt
¼ tsp pepper
3 cloves garlic (chopped)
6 6 oz skinless chicken breast ((bone in))

Steps:

  • In a blender, add honey, lime juice, soy sauce, cilantro, jalapeno pepper, salt, pepper, and garlic. Process until blended and smooth.
  • Pour contents of the blender into a ziploc bag. Add chicken to the bag. Seal, place in the refrigerator and let marinate for a minimum of hour or up to 8 hours.
  • Preheat grill
  • Remove the chicken from ziploc and set aside the bag with marinade for later.
  • Coat grill rack with Pam cooking spray. Place the chicken on the grill rack. Cover and grill approx 12 minutes - baste with marinade every once in a while, flip chicken and grill an additional 12 minutes or until done.

4 -8 jalapeno peppers, seeded and chopped or
1 (4 ounce) can chopped green chilies
2/3 cup lemon juice, divided
1/4 cup minced parsley
6 -10 minced garlic cloves
2 teaspoons dried rosemary, crushed
2 teaspoons dried thyme
8 bone-in chicken breast halves
2/3 cup chicken broth
2 teaspoons pepper
1/2 teaspoon grated lemon peel

Steps:

  • In a bowl, combine peppers, chiles, 1/3 cup lemon juice, parsley, garlic, rosemary and thyme. Gently stuff pepper mixture under the skin of each chicken breast. Place in a greased 13in. x 9 inches x 2-in. baking dish. Combine the broth, pepper, lemon peel and remaining lemon juice: pour over chicken. Cover and refrigerate for at least 6 hours. Drain and discard marinade.
  • Place chicken skin side up on grill. Grill, covered, over medium heat for 45 minutes or until juices run clear, turning once during grilling.

I found this recipe on another web site and decided to make it for dinner last evening. Everyone loved it. Chicken breasts are wrapped around a cheese stuffed jalapeno, then sealed with bacon and grilled. Yummy!

6 boneless skinless chicken breasts, pounded to 1/4 inch thickness
1 (16 ounce) bottle Italian dressing
3 fresh jalapeno peppers, halved lengthwise and seeded
2 cups water
1 (3 ounce) package cream cheese, softened
6 slices bacon

Steps:

  • In a sealable bag, pour Italian dressing over chicken and refrigerate 2 to 4 hours.
  • Bring a small saucepan water to a boil and add jalapenos.
  • Return to a boil and shut off heat allowing jalapeno to seep for 5-10 minutes.
  • Pour off water and drain jalapenos on a paper towel.
  • Once cool to handle, stuff each jalapeno with cream cheese.
  • Remove chicken from marinade; discard marinade.
  • Roll chicken breast around jalapeno peppers.
  • Wrap each chicken breast with a slice of bacon.
  • Secure with toothpicks.
  • Prepare the grill, by lightly oiling the grill grate and heating the grill to medium high heat.
  • Arrange wrapped chicken breasts on the prepared grill.
  • Grill for 20 minutes turning frequently, or until bacon is browned and the chicken juices run clear.
  • UPDATE: I tried baking the chicken at 375 degrees for 30 to 40 minutes and it came out very good as well.

  • Stir together first 5 ingredients; reserve 1/4 cup mixture, and chill.
  • Pour remaining lemon juice mixture into a heavy-duty zip-top plastic bag.
  • Add chicken breast halves; seal and chill 30 minutes.
  • Remove chicken, discarding marinade.
  • Grill chicken, cover with grill lid, over medium-high heat (350° to 400°) 7 minutes on each side, basting with reserved lemon juice mixture.
  • Top each with cheese slice; cover and grill 30 seconds or until cheese melts.
  • Serve over yellow or white rice.
