Here's a perfect party dip that you can prepare for almost any occasion during the year. When served with tortilla chips or fresh vegetables like cherry tomatoes, carrot sticks, and cucumber slices, it's a total crowd pleaser. This dip combines all those favorite Mexican flavors like salsa, avocado and cilantro, using fat-free Greek yogurt instead of sour cream. It also makes a wonderful topping for tacos and makes serving them super easy because you don't have to set out separate bowls of salsa, sour cream, avocado, cilantro and onion. For variation, you could make Mexican turkey burgers and use it as spread.

1 cup(s) Plain fat free yogurt Greek-variety recommended
0.5 cup(s) Fat free salsa hot chipotle variety suggested
0.5 item(s), medium Avocado diced
0.333 cup(s) Cilantro fresh, chopped
0.5 small Uncooked red onion(s) chopped
0.5 tsp Ground cumin
0.5 tsp Table salt or more to taste Garnish
0.25 item(s), medium Avocado diced
1 Tbsp Cilantro fresh, chopped
1 Tbsp, chopped Uncooked red onion(s)

Steps:

  • In a medium bowl, stir together yogurt and salsa until blended; stir in remaining ingredients except garnishes. Cover and refrigerate up to 1 day.
  • When ready to serve, transfer to a serving bowl and sprinkle with garnishes. Yields about 1/4 cup per serving.

1 lb ground chicken breast or turkey
1/2 diced white onion
1 can whole kernel corn
1 can black beans
1 tbsp taco seasoning
2 tbsp taco sauce
1/4 cup fat free sour cream
1/2 cup fat free shredded cheddar cheese
1 cup diced fresh tomatoes
1/3 cup green onions

Steps:

  • Saute meat, beans, onions, taco seasoning, sauce, and corn on medium-high heat until meat is browned (or soy crumbles are thoroughly cooked).
  • Spoon half your meat mixture into your casserole dish in an even layer, top with a thin layer of sour cream, then sprinkle with some cheese.
  • Repeat. Cover with cheese.
  • Bake at 350 for 15 minutes, then serve topped with diced tomatoes and green onions.

I got this dip from the WW site...it is absolutely delicious and just ONE POINT per serving! I serve it with baked Tostitos chips for a guilt-free treat, but no one would ever guess it's low fat if you served it to guests. Keep in mind, the creamy ingredients cool down the salsa, so a hot salsa will yield a nice medium dip. Great way to get your mexican dip fix. Enjoy!

1 cup fat-free Greek yogurt, plain
1/2 cup salsa
3/4 cup avocado, diced
1/3 cup fresh cilantro, chopped
1/4 cup red onion, finely chopped
1/2 teaspoon ground cumin
1/2 teaspoon salt (to taste)

Steps:

  • In a medium bowl, stir together yogurt and salsa until blended.
  • Stir in remaining ingredients. Cover and refrigerate up to 1 day.
  • Before serving, garnish with additional cilantro, chopped avocado and chopped red onion.

This Weight Watchers Buffalo Chicken Dip with Greek Yogurt is a high protein recipe that's easy to make in the Instant Pot, Crock Pot, or right on the stove.

2 lbs chicken breasts ( frozen)
¾ cup cottage cheese (1%)
¾ cup Greek yogurt plain (fat free)
½ tsp garlic powder
½ tsp onion powder
½ tsp dried dill
½ tsp dried parsley
¼ tsp black pepper
¾ cup hot sauce (Frank's Hot Sauce, not buffalo sauce )

Steps:

  • Add your frozen chicken breasts to the Instant Pot and cover with 1 cup of water. Close and lock the lid and turn the pressure valve to sealing. Select Pressure Cook (high) and set the cook time for 12 minutes.
  • Add cottage cheese, greek yogurt, garlic powder, onion powder, dill, parsley, black pepper, and Frank's Hot Sauce to your blender or food processor. Blend on high until well combined and smooth. This will take about a minute. You may have to stop and scrape the sides to evenly mix.
  • Once the cooking time is complete, allow the pressure to naturally release. When the pressure valve drops remove the lid. Drain and shred your chicken. I love using a stand mixer to shred it, but two forks work as well.
  • Turn your Instant Pot to Sauté and add the contents of your blender. Once the sauce begins to bubble turn off the heat and add your shredded chicken.
  • Top as desired with shredded cheese, goat cheese, or green onions. Serve immediately or refrigerate and serve cold. This is a great recipe for meal prep. Place individual servings in separate containers and refrigerate or freeze until ready to eat.
  • Place chicken in the crockpot and cook on high for 4 hours.
  • While your chicken cooks prepare your buffalo ranch sauce by adding cottage cheese, greek yogurt, garlic powder, onion powder, dill, parsley, black pepper, and Frank's Hot Sauce to your blender or food processor. Blend on high until well combined and smooth. This will take about a minute. You may have to stop and scrape the sides to make sure all of the ingredients mix.
  • Shred your cooked chicken and stir in the sauce from your blender.
  • Top as desired with shredded cheese, goat cheese, or green onions and serve immediately or allow to chill in the refrigerator and serve cold.
  • Place your chicken in a large pot and cover with water. Boil over high heat for about 20 minutes or until chicken is cooked and reaches 165°F.
  • While your chicken cooks prepare your buffalo ranch sauce by adding cottage cheese, greek yogurt, garlic powder, onion powder, dill, parsley, black pepper, and Frank's Hot Sauce to your blender or food processor. Blend on high until well combined and smooth. This will take about a minute. You may have to stop and scrape the sides to mix evenly.
  • Drain and shred your chicken and stir in the sauce from your blender.
  • Top as desired with shredded cheese, goat cheese, or green onions and serve immediately or allow to chill in the refrigerator and serve cold.
