My favorite meat loaf recipe, healthy and delicious that can be varied all kinds of ways. Just 7 Freestyle SmartPoints and works with Simply Filling/No Count Technique.

2 teaspoons canola oil
1 cup finely chopped white mushrooms
1 cup finely chopped onion
1 carrot, peeled and finely chopped
1 stalk celery, finely chopped
1 pound lean ground beef (7% or less)
1/2 cup quick cooking or old-fashioned oats (not instant)
2 large egg whites (I use 1 whole egg instead)
3 tablespoons ketchup (plus more for brushing on top)
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme leaves (not ground thyme)
1 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder (or 1 teaspoon minced fresh)

Steps:

  • Preheat oven to 350F degrees. Spray a 4-1/2 x 8-1/2-inch loaf pan with cooking spray.
  • Heat the oil in a large nonstick skillet set over medium heat. Add the mushrooms, onion, carrot, and celery. Cook, stirring frequently, until the onion is softened, about 5 minutes. Transfer this mixture to a large bowl.
  • Add the remaining ingredients to the vegetables in the bowl and mix well. Press the meatloaf into the prepared loaf pan.
  • Bake the meatloaf for 30 minutes. Brush additional ketchup on top of the loaf, if desired.
  • Cook until done, an additional 30 to 45 minutes. (An instant read thermometer inserted into the center of the loaf should read 160F degrees.)
  • Remove from the oven and let rest for about 5 minutes. Cut into 8 slices.

Are you looking for a super yummy, quick dinner to make? If you haven't tried my skinny meatloaf yet, I think you're going to love it! It's low in calories, very moist, and has a divinely rich sweet ketchup glaze. It's a whole lot skinnier than most meatloaf recipes because I'm using extra lean ground beef, homemade whole wheat bread crumbs, and egg whites. By the way, making your own crumbs is really simple to do. Each serving, has 214 calories, 5 grams of fat. Any leftovers make great sandwiches!

1 pound 96% extra lean ground beef, see shopping tips
1½ slices whole wheat bread (remove crusts (I used Milton's Multigrain bread))
1 cup onions (chopped)
2 egg whites
3 tablespoons ketchup
1 tablespoon spicy brown or yellow mustard
1 tablespoon Worcestershire sauce
¼ teaspoon salt
Fresh ground pepper (to taste)
¼ cup ketchup
1 tablespoon spicy mustard or yellow mustard
2 teaspoon brown sugar (packed)

Steps:

  • Preheat oven to 350 degrees. Line a baking sheet with foil and set aside.
  • In a large bowl, add the ground beef.
  • To make bread crumbs: remove the crust, break up the bread, and add to a blender or food processor. Process until the bread turns into crumbs.
  • To the beef, add the bread crumbs, onions, egg whites, ketchup, mustard, Worcestershire sauce, salt, and pepper, to taste. Using your hands, mix together all the ingredients.
  • Place the meat mixture on the baking sheet and free form a loaf by hand. It should be about 12"x4."
  • In a small bowl, mix together the topping ingredients. Spread all over the top of the meatloaf.
  • Bake for 55 minutes. Remove from the oven and let rest for at least 10 minutes before slicing. Cut into 10 slices.
  • Makes 5 servings. Each serving, 2 slices.

This easy to make, moist & flavourful meatloaf is perfect for anyone wanting a healthier version of this American classic. Perfect for anyone following the Weight Watchers plan, low in WW Personal Points. It was just 6 SmartPoints on the Green plan and 5 SmartPoints on the Blue or Purple plan.

35 oz extra lean ground beef / mince ((1kg) 5% fat)
4 slices low calorie bread (toasted & made into breadcrumbs *)
2 medium eggs
1 tablespoon Worcestershire sauce
1 medium onion (grated)
3 cloves garlic (minced)
2 beef stock cubes / bouillon cubes (crumbled)
1/2 teaspoon black pepper
1/3 cup skimmed milk ((70ml))
6 tablespoons Heinz tomato ketchup - 50% less sugar or no sugar added (divided)
1 handful fresh chopped parsley (chopped (optional))
1 tablespoon light brown sugar
1 tablespoon white wine vinegar
1 - 2 tablespoon yellow mustard
5 sprays of calorie controlled spray oil

Steps:

  • Preheat the oven to 180°C / 160°C Fan / 350°F.
  • Use 5 pumps of calorie controlled spray oil to grease a loaf tin (approx 9 inches by 5 inches)
  • Place the ground beef, breadcrumbs, eggs, Worcestershire sauce, grated onion, minced garlic, black pepper, crumbled stock cubes/bouillon, milk and 2 tablespoons of the tomato ketchup into a large bowl.
  • Mix with a wooden spoon (or your hands if you prefer) to combine all of the ingredients.
  • Stir in the chopped parsley if using.
  • The mixture will be wet but this leads to a moist, succulent meatloaf that is less inclined to crumble once cooked.
  • Place the meat loaf mixture into the pre greased loaf tin and smooth the top.
  • Mix the remaining 4 tablespoons of ketchup with the sugar, white wine vinegar and mustard to make a glaze.
  • Spread half of the glaze on top of the meatloaf and set aside the rest for later.
  • Place the meatloaf on the middle shelf of the preheated oven and cook for 50 minutes.
  • Remove the meatloaf from the oven and spread over the remaining glaze.
  • Place back in the oven for a further 25 minutes.
  • Remove from the oven and let the loaf stand for 10 minutes or so before slicing it into 8 generous slices.

3/4 cup uncooked oatmeal
1/2 cup reduced-sodium chicken broth
1/2 cup carrot, shredded
1/4 cup onion, diced
1 egg, beaten
3 tablespoons fresh parsley, minced
2 garlic cloves, minced
2 teaspoons Dijon mustard, musard
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
3/4 lb ground turkey breast
3/4 lb extra lean ground beef

Steps:

  • Combine everything except meat in large mixing bowl; mix to combine.
  • Add meat; mix lightly until vegetables are evenly distributed.
  • Spoon into lightly greased loaf pan; bake at 350 for 60-70 minute.
  • Let stand five minutes before cutting.

2 Tbsp fennel seeds, toasted
1 med onion, diced
1/2 tsp olive oil
Salt
3 garlic cloves, minced
2 lb 93% lean ground beef
2/3 cup rolled oat
2 eggs, whisked
1 Tbsp Worcestershire sauce
1 Tbsp Italian seasoning
1/2 Tbsp garlic powder
1 tsp salt
1 tsp black pepper
15 oz canned tomato soup, divided

Steps:

  • Preheat oven to 350 degrees F. Place fennel seeds in a small, non stick pan over medium high heat on your stove top to roast. Occasionally stir or shake seeds as they roast. Roast until seeds start to appear a bit golden in color instead of greenish, about 2 minutes. Be careful, they will go from toasted to burnt very quickly.
  • Place the diced onion and olive oil in a non stick pan, sprinkle with salt and saute. To avoid burning, add the minced garlic to the onions after a few minutes. Saute onions and garlic until tender.
  • In a large bowl, combine ground beef, oats, whisked eggs, sauteed onion and garlic, fennel seed, Worcestershire sauce, Italian seasoning, garlic powder, salt, black pepper, and about 3 tablespoons of the canned tomato sauce, reserving the remaining sauce. Combine well using your hands or a large spoon.
  • Spray the bottom of a 9x13 baking dish with cooking spray. Turn meat mixture out into the baking dish and form into a rectangular loaf that ends about an inch and a half from the sides of the pan. I like to flatten the top of the loaf and then form an indentation around the top to make a lip. This helps to keep the tomato sauce on top of the loaf. Pour the remaining tomato sauce on top of the loaf spooning some onto the sides of the loaf.
  • Bake for approximately 55 minutes.

This is a very flavorful meatloaf that qualifies as a core recipe for Weight Watchers. I love onions, so there are lots, but obviously you can adjust the onions and the spices to taste. I rarely measure spices unless following a recipe, so all measurements for spices are approximate. Also, I almost always use ground turkey, but this could be made with ground beef. There are a lot of steps here, but none of them are very hard and can be done quite quickly. Don't be afraid of using oats. Once cooked, you cannot tell the oats are there.
