The best energy balls packed with rolled oats, peanut butter, pretzels, and chocolate chips. Sweet and salty for the perfect pick me up!

2 cups oats (regular or quick cooking)
2/3 cup reduced fat peanut butter (or regular)
1/4 cup honey
1/2 cup crushed pretzels
1/4 cup chocolate chips (mini chips work best)
2 tsp water (only if needed)

Steps:

  • Stir together the oats, peanut butter, and honey.
  • Crush the pretzels in a ziploc bag until they are in small pieces.
  • Add the crushed pretzels and chocolate chips to the mixture.
  • Form into balls. If the mixture is not sticking together for you, add water, 1 tsp at a time, until it does.
  • Place in the refrigerator for about 30 minutes. Store in an airtight container.

Easy, no-bake Chocolate Peanut Butter Pretzel Bites are the best sweet and salty dessert, and my favorite snack. These creamy and crunchy, yummy little bites are so addictive! Chocolate covered pretzel bites are great for anything from an after-school snack to a family party!

1 cup creamy peanut butter
2 Tbsp. unsalted butter-softened
3 Tbsp. light brown sugar
½ cup powdered sugar
1 teaspoon vanilla
2 cups crushed pretzels (about 5-6 oz.)
5 oz. milk chocolate-finely chopped
5 oz. semisweet baking chocolate-finely chopped
2 tbsp. salted roasted peanuts-crushed

Steps:

  • Pulse pretzels in a food processor to make small pieces, or place them in a zip-lock bag and crush them with a rolling pin, set aside.
  • In a bowl combine peanut butter, softened butter, brown sugar and vanilla, stir well.
  • Add powdered sugar, stir well.
  • Add crushed pretzels and stir until evenly combined. Cover and place in the fridge for 20-30 minutes.
  • Roll 1 inch balls and arrange them onto tray lined with baking paper. If the dough falling apart when you roll it between your palms, take 1 heaping Tbsp. of the dough, first squeeze it gently with your fingers, then roll to make nice round shape. Freeze until firm.
  • Melt the chocolate and dip each ball into melted chocolate, then place back on a trey lined with baking paper. Sprinkle with crushed peanuts and place in the fridge until the chocolate has set.
  • Store in an airtight container in the fridge up to 1 week or freeze for longer storage.
  • This recipe makes about 26-28 truffles.

1/2 cup mini chocolate chips
2/3 cup coconut flakes (unsweetened)
1/2 cup peanut butter
1/3 cup honey
1 tsp vanilla extract

Steps:

  • In a large bowl, mix together the oats, chocolate chips, and coconut.
  • Add the peanut butter, honey, and vanilla. Mix well until evenly combined. I prefer to use my stand mixer or a hand mixer for this-stirring by hand never seems to incorporate all of the ingredients well enough for me.
  • Chill mixture in the refrigerator for an hour, then roll out balls about an inch in diameter. Keeping the mixture in the fridge before rolling helps them to roll easier.
  • Store in an airtight container-I prefer the refrigerator!

4 ounces cream cheese (softened)
1 cup creamy peanut butter
1 tsp vanilla extract
1 cup powdered sugar
1 cup crushed pretzels
½ cup mini chocolate chips
1 cup semi-sweet chocolate chips
16 oz chocolate candy coating (CandiQuik, Ghirardelli melting wafers, etc.)
chocolate sprinkles (crushed peanuts, crushed pretzels (optional))

Steps:

  • Line a large baking sheet with parchment paper and set aside.
  • In a large bowl, beat cream cheese until nice and fluffy.
  • Add peanut butter and beat until combined.
  • Add vanilla extract and continue beating just until incorporated.
  • Stir in powdered sugar, crushed pretzels and mini chocolate chips. (You can use your hands here to really work it all together. It's actually much faster. Likewise, you could put it all in stand mixer and mix it that way as well.)
  • Shape into 1-inch balls and place on prepared baking sheet. (You will need to give them a good squeeze in your hand before rolling into balls.)
  • Refrigerate for one hour or freeze for 15 minutes.
  • Combine chocolate chips with candy coating and melt according to package directions. (30 second intervals on high, stirring in between, usually does the trick.)
  • Dip balls into melted chocolate, and place back on parchment-lined baking sheet.
  • Sprinkle with chocolate sprinkles, crushed peanuts, or crushed pretzels if desired.

1 cup creamy peanut butter
2 tablespoons butter, softened
¾ cup brown sugar
½ cup powdered sugar, or more as needed
100 miniature pretzels
1 (6 ounce) bag semisweet chocolate chips

Steps:

  • Line a baking sheet with waxed paper.
  • Combine peanut butter and butter in a large bowl; beat with an electric mixer until combined. Add brown sugar and 1/2 powdered sugar and mix until well combined. Roll batter into 50 small balls, mixing in a bit more powdered sugar if batter sticks to your hands.
  • Sandwich each ball between 2 pretzels and place on the prepared baking sheet. Place in the freezer.
  • Melt chocolate chips in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each interval, 1 to 3 minutes.
