CHILI-BEEF TACOS

Our lean, chili-spiced beef is the perfect filler for all your Mexican cooking needs. Try it in burritos, quesadillas or over baked tortilla chips. Or for more of a veggie forward meal, spoon the mixture into crisp romaine hearts for lettuce wraps or sprinkle it over a bed of mixed greens to make a taco salad. We call for ground chili powder, but you could also use a Mexican seasoning blend. If you choose to use a blend that contains salt, omit the salt called for in the recipe. You could also substitute black beans for the pintos if you'd like.

0.5 tsp Ground cumin
1 tsp Olive oil
1 small Uncooked onion(s) chopped
2 medium clove(s) Garlic clove(s) minced
8 oz Uncooked 93% lean ground beef
8 oz Canned tomato sauce
8 oz Canned kidney beans rinsed and drained
8 medium Store-bought taco shell(s)
4 Tbsp Reduced-fat sour cream
4 tsp Cilantro fresh, chopped

Steps:

  • Toast chili powder and cumin in a medium skillet over medium heat until fragrant, about 30 seconds. Add oil to skillet and heat; add onion and cook until tender, about 3 minutes. Add garlic and cook until fragrant, about 3 minutes. Add beef and cook until cooked through, about 5 minutes. Add tomato sauce and beans; cook 5 minutes more or until heated through. (Note: To turn up the heat, toss in some chopped chipotle peppers with the tomato sauce.)
  • To assemble, fill each taco shell with 1/4 cup of beef mixture; top each with 1/2 tablespoon of sour cream and 1/2 teaspoon of cilantro. Yields 2 tacos per serving.

2 dried ancho chiles, stemmed and seeded
4 dried chile de arbol peppers, stemmed and seeded
4 pounds beef chuck roast
salt and freshly ground black pepper to taste
1 tablespoon olive oil, or as needed
4 Roma tomatoes
2 tablespoons white vinegar
2 garlic cloves
2 teaspoons ground black pepper
4 whole cloves
1 pinch ground cinnamon
1 pinch ground cumin
1 pinch ground thyme
1 pinch dried marjoram
1 pinch dried oregano
18 corn tortillas
1 large white onion, finely chopped
1 bunch fresh cilantro, chopped

Steps:

  • Fill a pot with water and bring to a boil. Add guajillo, ancho, and arbol chile peppers; boil for 5 minutes. Remove pot from heat and allow peppers to soak until cool. Drain, reserving 1/4 cup of the water.
  • Preheat the oven to 325 degrees F (165 degrees C).
  • Rinse meat and pat dry with paper towels. Season with salt and pepper.
  • Heat oil in a Dutch oven over medium-high heat. Add meat and cook until browned on all sides, about 10 minutes. Remove from heat.
  • Line a heavy cast-iron grill pan or griddle with aluminum foil and place over high heat. Arrange tomatoes in a single layer on top. Grill until tomato skin is burned on all sides and begins to peel, 3 to 5 minutes.
  • Combine soaked chile peppers, cooked tomatoes, vinegar, garlic, 2 teaspoons black pepper, cloves, cinnamon, cumin, thyme, marjoram, oregano, and salt to taste in a blender. Pour in reserved 1/4 cup of chile water; blend until smooth.
  • Strain chile sauce through a mesh strainer and pour over the browned meat in the Dutch oven, turning roast so it is completely covered with sauce. Cover the Dutch oven and place in the preheated oven.
  • Bake, basting meat every 45 minutes with the sauce, until birria begins to fall apart, 3 to 4 hours. Remove lid and bake uncovered until birria is crispy on top, about 20 minutes. Remove from oven, cover with 2 layers of aluminum foil, and allow to rest in a warm area for 10 minutes.
  • Meanwhile, warm tortillas on a griddle. Fill each tortilla with birria and top with chopped onion and cilantro.

1 large onion, diced
2 (15 ounce) cans chili beans
1 (15 ounce) can zesty beans (I use S&W chili beans in a zesty sauce)
1 (15 ounce) can black beans, drained
1 (15 ounce) can corn, undrained
1 (15 ounce) can tomato sauce
1 1/2 cups water
1 (4 1/2 ounce) can chopped green chilies
1 (1 1/4 ounce) package taco seasoning
1 (1 ounce) envelope ranch dressing mix

1 small onion
1 (16 ounce) can black beans

  • Chop onion, combine with ground beef. Brown and drain the ground beef.

  • At this point, it is ready to serve. Additionally, you may let the mixture simmer until reduced and you may enjoy this dish as more of a chili instead of a soup.

Weight Watchers beef enchiladas are made with shredded carne asada and homemade red sauce for a tasty and authentic enchilada recipe. Healthy, skinny, beef enchiladas that no one will know are lightened up!

12 corn tortillas
1 lb carne asada (Or meat of your choice)
2 cups cheese (shredded )
1/2 cups enchilada sauce

Steps:

  • Preheat your oven: 350º F.
  • Grease a casserole pan lightly, the bottom only.
  • Use 1/4 cup of enchilada sauce and cover the bottom of the pan after it is greased.
  • Rolling the enchiladas: put some cheese and your carne asada meat into the center of a corn tortilla. Mine are made with 3/4 C meat for two tortillas and 1/3 C cheese for four enchiladas.
  • To make a full pan of enchiladas you'll need to place them down one by one and fold the side over. Seam side should go down in your pan and I find it helps to place the filling slightly off center so there's more of a "flap" to fold over the top!
  • The last 3/4 C of enchilada sauce goes on top, after that is done you can top will the remaining cheese as well!
  • These delicious Weight Watchers enchiladas need to bake for about 20-25 minutes. When the cheese starts looking melty and a bit crispy you'll know they're ready to come out. Top with fresh cilantro and serve!
