GARDEN-FRESH TOMATO BRUSCHETTA
This bright, colorful tomato appetizer is bursting with summery goodness, but what's great is that you can still serve it all year long. And the fact that it takes just a few minutes of prep time is an added bonus. Cutting the garlic in half and rubbing it on the side of the bread slices with a little nonstick spray eliminates the need for any added butter. Remember to cool the bread first before assembling the bites. The tomato mixture should also rest first to have all the ingredients blend together. This recipe is generous and yields 24 pieces, perfect for any party.

Steps:
- Preheat oven to 375°F. Coat large baking sheet with nonstick spray.
- Slice 1 garlic clove in half. Rub cut sides of garlic over one side of each bread slice; place bread on baking sheet and spray lightly with nonstick spray. Bake until lightly browned, flipping once, 8−10 minutes. Place bread on wire rack to cool.
- Meanwhile, mince remaining garlic clove. Combine tomatoes, basil, onion, oil, vinegar, salt, pepper, and minced garlic in large bowl and toss. Let sit 10 minutes for flavors to blend. Spoon tomato mixture evenly onto bread slices.

Steps:
- For tomato mixture: Heat olive oil in a small skillet or saucepan over medium-low heat. Add garlic and saute until just starting to turn golden (don't brown it), about 1 minute.
- Pour into a large mixing bowl. Let cool while you chop the tomatoes and basil.
- Pour tomatoes into bowl with cooled oil mixture. Add parmesan, basil, balsamic vinegar, salt and pepper. Toss mixture well. Serve right away over toasted bread (spoon some of the juices along with it). Garnish with more parmesan if desired.
- To toast bread*: position oven rack a few inches below broil and preheat broiler. Align bread slices on an 18 by 13-inch baking sheet. Broil first side until golden brown, about 1 minute (don't walk away and keep and eye on them they'll brown quickly), then flip slices to opposite side and broil opposite side until golden brown.

Steps:
- Combine garlic, balsamic vinegartte in a bowl and whisk, then add tomatoes. Let sit at room temp for at least thirty minutes.
- Mean while, preheat the oven to 450F.
- Slice the bread into 12 slices about 1/2 inch thick.
- Spray tops lightly with the olive oil cooking spray
- On a cookie sheet bake in the oven 5-10 minutes until lightly toasted.
- While the bread toasts, tear the basil into small pieces.
- Once the bread is toasted, remove from the oven and divide the tomato mixture evenly among the bread slices.
- Top with salt and pepper as desired.
- Top with basil.
- Top with cheese.
- Put back in the oven on broil for 30 seconds to a minute to lightly toast/melt the cheese.
- Enjoy!

- Heat vinegar in a small skillet over medium-low heat. Simmer until reduced by about half, 8 to 10 minutes. Remove from heat and allow to cool to room temperature.
- Prepare a grill for high heat. Place bread slices on a foil-lined baking sheet and drizzle with olive oil.
- Combine strawberries and thyme in a small bowl and set aside.
- Grill bread on the preheated grill until browned, about 3 minutes per side.
