CHICKEN CORDON BLEU

Steps:
- Preheat oven to 400ºF (205ºC). Coat a baking sheet with olive oil cooking spray.
- Place chicken breasts between two pieces of plastic wrap and pound to 1/4-inch thickness; remove plastic wrap. Arrange 1 slice of ham and 1 slice of cheese on each chicken breast.
- Starting from shorter end of chicken, roll up breast into a tight pinwheel. Tuck in ends. Secure with toothpicks.
- Place flour, honey mustard and bread crumbs in 3 separate shallow bowls. Add chicken to flour; turn to coat. Transfer chicken to honey mustard; turn to coat. Place chicken in bread crumbs; turn to coat.
- Transfer chicken to prepared baking sheet and coat with cooking spray. Bake until chicken is golden brown and cooked through, about 40 minutes. Remove toothpicks and serve.

Steps:
- Preheat oven to 400*F.
- Coat a baking rack with cooking spray, then place the rack on a baking sheet and set aside.
- Butterfly each piece of chicken by slicing into the breast horizontally so you can open it like a book.
- Lay one quarter of the ham and cheese on one side of each breast, leaving 1/2 inch at edge uncovered, then close each piece.
- In a medium bowl, combine egg whites, buttermilk and mustard and blend until creamy.
- In a shallow bowl, combine bread crumbs, parmesan cheese, salt and pepper.
- Gently dip each piece of chicken in the crumb mixture, then into the egg white mixture, then again in the crumb mixture.
- Set on baking rack.
- Bake 30 to 35 minutes or until crisp and lightly browned, and chicken is no longer pink inside.
- Serve with lemon wedges.

- Working one at a time, place a chicken breast half on a work surface. Top with one slice of the ham, then one slice of the Swiss cheese. Roll up, jelly-roll style, and secure with a toothpick. Repeat with the remaining chicken, ham and cheese.
- Combine 2 tablespoons of the flour, 1⁄4 teaspoon of the salt, and a grinding of the pepper on a sheet of wax paper. Place the egg in a shallow bowl, and the cornflake crumbs in another shallow bowl.

Bake until a thermometer inserted into the thickest part of each roll reaches 160ºF, 30–35 minutes.
