WW BAKED APPLE FOR ONE
I have a hard time finding sweets that satisfy me when I'm on Weight Watchers. This is a good, easy, and quick recipe that does the trick! The way I make this, it's 2 pts (It could be 3, depending on the brand of margarine you use).

- Wash and core the apple. Remove some of the skin from around the cored center. Place apple in a microwave safe bowl.
- Mix brown sugar, cinnamon, and margarine. Use mixture to fill the hole in the apple. Pour the water around the outside of the apple.
- Microwave for 3 1/2 minutes or until you can easily prick it with a fork. Allow apple to sit for a couple of minutes before you dig in- it's HOT!

- Use a melon baller to core the apples: Start at the top by the stem and scoop down into the flesh, pulling up the core and hollowing out the apple without breaking through the sides or the bottom. Leave at least 1/2 inch apple flesh at the bottom. Rub the lemon juice over the exposed apple flesh.
- In a small bowl, mix the prunes, walnuts, honey, and cinnamon; stuff a quarter of the mixture into each apple. In a 9-inch baking dish or other small roasting pan, set apples. In a small bowl, whisk together water and orange juice, and pour over the apples.
- Bake until soft, basting often with the pan juices, about 1 hour. Cool at least 10 minutes before serving. Yields 1 stuffed apple per serving.

- Cut a 1/4-in slice off top of apple; use a melon baller to core apple about 3/4s of way to bottom. Place apple in a ramekin; add water to base of ramekin.

- Preheat the oven to 400 degrees. Put about ½ inch deep of water in a baking dish and set aside.
- Combine the oats, flour, brown sugar, cinnamon, vanilla extract and salt in a mixing bowl and stir together. Add the chopped butter and use your fingers or a fork to mush the butter into the other ingredients to form crumbles.
- Use a paring knife and/or a spoon to scoop out the center of your apples, removing the core and seeds but allowing the bottom of the apple to stay intact. I used the knife to get started and then scooped with a spoon. Fill each apple with the filling you made in step two and place the apples into the prepared baking dish.
- Place the dish in the oven and bake for 15-20 minutes until your apples are softened but not mushy/still firm and the top of the filling is crispy. Serve warm.
