CRAB AND SPINACH QUESADILLAS

Ooey, gooey cheesy quesadillas always hit the spot! This seafood version features crab meat although you could use any leftover cooked chicken or beef if that's what you have on hand. Serve them hot with lime wedges and fresh salsa for a burst of fresh flavor. Traditionally cooked in skillet, we've simplified the method by baking them all together on a sheet pan. If you'd rather make them in the stove top, use a skillet, which has been sprayed with nonstick spray, over medium heat for about 3 minutes on each side. Most skillets will hold 2 quesadillas at a time.

Number Of Ingredients 6

2 tsp Olive oil
1 medium Uncooked onion(s) thinly sliced
2 cup(s) Fresh spinach baby leaves variety or arugula leaves
6 oz Canned crabmeat drained
4 medium Whole-wheat tortilla(s) about 12" each
8 oz Reduced-fat shredded Monterey Jack cheese (about 1 cup)

Steps:

  • Preheat the oven to 500°F. Spray a large nonstick baking sheet with nonstick spray.
  • Heat the oil in a large nonstick skillet over medium-high heat. Add the onion, and cook, stirring occasionally, until golden, about 3 minutes. Add the spinach and cook, stirring, until wilted, about 1 minute. Remove from the heat and stir in the crabmeat.
  • Place the tortillas on a work surface. Top one-half of each tortilla with 2 tablespoons of the cheese, one-fourth of the crabmeat mixture, then 2 tablespoons more of the cheese. Fold the top halves of the tortillas over the filling to form semi circles, lightly pressing the edges to seal, making 4 quesadillas.
  • Place the quesadillas on the baking sheet; spray the tops of the quesadillas lightly with nonstick spray and bake until lightly browned and the cheese melts, about 3 minutes on each side. Yields 1 quesadilla per serving.

1/2 cup shredded monterey jack cheese or 1/2 cup cheddar cheese
1 (4 ounce) can diced green chilies
1/4 cup chopped tomato
2 tablespoons chopped green bell peppers
4 (8 inch) tortillas

Steps:

  • Preheat oven to 425 degrees.
  • Mix all ingredients together, except tortillas.
  • Spray one side of tortilla with nonstick cooking spray.
  • Spoon 1/4 mixture onto unsprayed side and fold in half.
  • Place on baking sheet.
  • Bake uncovered 10 minutes, turn and bake additional 5 minutes until cheese melts.

3/4 cup cooked and chopped crabmeat
1/2 cup monterey jack cheese, shredded & divided
1/4 cup mozzarella cheese, shredded
1/4 cup cheddar cheese, shredded
1/2 cup favorite seafood cocktail sauce, divided
1 green onion, thinly sliced
1/2 tablespoon garlic, minced
tortilla
2 tablespoons butter

Steps:

  • Combine crabmeat, Monterey Jack cheese, mozzarella cheese, cheddar cheese, 1/4 cup cocktail sauce, green onions and garlic in medium bowl; mix well.
  • Spread about 1/2 cup mixture onto 2 tortillas; sprinkle evenly with remaining Monterey Jack cheese.
  • Top with remaining tortillas.
  • Melt 1 tablespoons butter on cast iron griddle over medium-high heat.
  • Add one quesadilla; cook for 2 minutes on each side or until golden brown.
  • Repeat.
  • Cut each into eight wedges.
  • Serve with cocktail sauce for dipping.

With no plans for dinner and a package of surimi in my fridge that needed to be used up, I made this up using the ingredients I had on hand. It turned out pretty tasty! It think I'll scramble the rest of the filling with some eggs for breakfast burritos tomorrow. Next time I make it, I'll make sure I have some cilantro on hand to use in place of the basil, and I'll definitely add avocado!

4 ounces cream cheese
8 ounces surimi, separated into pieces
1/2 red pepper, thinly sliced
1/2 onion, thinly sliced
1 tablespoon freshly minced basil
2 cups shredded cheddar cheese
1/4 teaspoon mrs. dash southwest chipotle seasoning
1/2 teaspoon salt
1/4 pepper
8 soft taco-size flour tortillas
2 tablespoons butter
salsa, for dipping

Steps:

  • Soften the cream cheese in the microwave.
  • In a large bowl, mix the cream cheese, spices, surimi, shredded cheese and vegetables until well combined.
  • Spread one tortilla with 1/4 c cream cheese mixture, and top with another tortilla.
  • Melt the butter in a flat pan (I used a grill pan with a panini press), and carefully place the quesadilla in the pan.
  • Cook for 1-2 minutes, or until the cheese starts to melt, but before the bottom gets too brown.
  • Flip and cook the other side until browned also.
  • Remove to a cutting board, cut into quarters (or eighths) with a pizza wheel.
  • Arrange on serving dish, with salsa for dipping.

1/4 teaspoon ground red pepper (cayenne)

Steps:

  • In medium bowl, mix cream cheese, corn, cilantro, onions, pimientos, pepper and red pepper. Fold in crabmeat.

8 ounces lump crabmeat (imitation also works well)
1/2 cup sour cream
2 teaspoons freshly squeezed lime juice
4 green onions, finely chopped
salt
fresh ground pepper
2 cups queso fresco, grated ("or" other white farmer's cheese)
4 tablespoons chopped fresh cilantro
8 8-inch fat-free flour tortillas

Steps:

  • Shred crab meat; mix together with sour cream, lime juice, and green onions in a small bowl.
  • Season to taste with salt and pepper.
  • Heat griddle or small frying pan with a small amount of oil or cooking spray.
  • Take a tortilla, place about 1/8 of crab mixture on it and spread evenly.
  • Top with 1oz.
  • (about 1/4 cup) cheese and sprinkle with some chopped cilantro.
  • Place on hot griddle; when cheese starts to melt, fold in half.
  • Allow to heat through and brown nicely, then remove from heat.
  • Repeat with other tortillas.
  • Quesadillas can be kept warm on a stoneware plate or baking dish in the oven on warm while you are busy with the others.
  • Serve topped with a dallop of sour cream or guacamole, and wedges of lime, if you wish.
