Substitutes for high-fat mayonnaise and sour cream help give this salad its classic flavour, without the classic fat content.

4.5 cup(s) Cooked macaroni kept warm
0.75 cup(s) Fat free mayonnaise
0.25 cup(s) Fat free sour cream
3 tbsp(s) Sweet pickle relish
1 medium Sweet red pepper(s) diced
1 medium Green pepper(s) diced
1 medium Uncooked carrot(s) diced
0.25 cup(s), sliced Uncooked red onion(s) minced
0.125 tsp(s) Table salt or to taste
0.125 pinch Black pepper or to taste

Steps:

  • While macaroni is still warm, add mayonnaise, sour cream and relish; toss to coat. Add peppers, carrot and onion; toss to combine. Season to taste with salt and pepper.
  • Serve warm or chilled.
  • Yields about 1/2 cup per serving.

2 cups whole wheat elbow macaroni
1/2 cup fat-free mayonnaise
1/4 cup nonfat sour cream
1/4 cup dill pickle, sliced
1/4 teaspoon onion powder
1/2 cup diced celery
1 cup red pepper, chopped
1/2 cup frozen peas and carrot
1/2 cup shredded fat-free cheddar cheese
1/2 cup scallion, chopped

Steps:

  • Cook macaroni according to package directions without added salt or fat. Drain and rinse with cold water; drain again.
  • Meanwhile, to make dressing, combine mayo, sour cream, pickles and onion powder in a small bowl; mix well.
  • Combine macaroni, celery, pepper, peas and carrots, cheese and scallions in a large mixing bowl. Pour dressing over macaroni salad; toss lightly to coat. Cover and chill for a least 2 hours.
  • 1/2 cup per serving.

1 tablespoon red wine vinegar
1 teaspoon Dijon mustard
1/2 teaspoon garlic powder
1 cup celery, chopped
1/3 cup red onion, finely chopped
2 tablespoons fresh parsley, chopped
1/8 teaspoon table salt (or more)
1/8 teaspoon black pepper, freshly ground (to taste)

Steps:

  • Cook macaroni according to package directions; drain and transfer to a large bowl.
  • In a medium bowl, whisk together mayonnaise, vinegar, mustard and garlic powder; stir mixture into cooked macaroni.
  • Fold in celery, red onion and parsley.
  • Season to taste with salt and black pepper.
