- In a bowl, mix 3 tablespoons of the flour, salt and pepper.
- Dip the beef in the seasoned flour one at a time and shake off any extra flour.
- In a heavy frying pan, melt 2 tablespoons of the butter over a high heat and the brown the beef quickly on both sides.
- Put the meat aside on a plate and add the remaining butter to the pan.
- Drop in the onions and cook over a medium heat for 5-8 minutes.
- Add the paprika, peppercorns, allspice, bay leaf and clove.
- Pour in the water and bring it to a boil.
- Return the meat to the pan, lower the heat and cover tightly.
- Simmer for 1 1/2 to 2 hours, basting occasionally with the liquid.
- When the meat can be easily pierced with a fork, transfer to a plate and cover to keep warm.
- Strain the cooking liquid through a sieve into a small bowl, pressing down hard on the onions before discarding them. There should be 1 1/2 to 2 cups of liquid. If there is less then add beef stock to make up the difference.
- Return the liquid to the skillet, bring to a simmer, then lower the heat.
- With a whisk, beat the remaining flour into the sour cream.
- A bit at a time, beat the sour cream into the liquid and cook, whisking all the time, until it thickens slightly.
- Don't let it boil.
- Return the beef to the skillet, baste it well with the sauce and cook just long enough to heat it through.
- Stir in the Madeira and taste for seasoning.
- Serve with dumplings or boiled or mashed potatoes.

BEEF AND MUSHROOMS IN SOUR CREAM SAUCE
Use a tender cut of beef for this, I just use already sliced stir-fry beef from the grocery store, it works well for this recipe! Pat your beef dry with a paper towel before starting this recipe, make certain there is no excess moisture in the beef.

Steps:
- To make the roux: melt 4 tablespoons butter in a saucpan, add in flour and whisk for 2 minutes.
- Slowly add in the broth, whisking constantly; bring to a simmer.
- Add in Parmesan cheese (if using) reduce heat and cook for about 3 minutes until thickened, remove from heat; set aside and keep warm.
- Season beef with salt and pepper.
- Heat oil in a skillet and saute the beef until browned on all sides; transfer to a plate or bowl using a slotted spoon.
- Add in more butter or oil to the skillet if needed and saute the onion and garlic for about 3-4 minutes.
- Add in sliced mushrooms and saute for about 8 minutes, until they release all of their moisture.
- Return the beef to the skillet; stir to combine with the mushrooms, then transfer to a serving platter.
- Reheat the sauce and then whisk in the sour cream, mustard, dill, salt and pepper.
- Immediately pour over the beef/mushroom mixture.
- Sprinkle with more grated Parmesan cheese if desired.
- Serve with hot cooked egg noodles.
- Delicious!

- Spread 1/2 tablespoon mustard over one side of each piece of meat. Sprinkle the onion, paprika, salt, and pepper evenly over the steaks. Lay one slice of bacon on each piece. Roll the steaks jelly-roll style and secure with toothpicks.
- Heat the canola oil in a skillet over medium heat. Cook meat on all sides until browned. Add the beef broth and water; bring to a boil. Reduce heat to medium low; cover and simmer until tender, about 30 minutes.
- Remove the meat rolls. Strain the broth mixture and return liquid to the skillet. Whisk together the cornstarch and 1 cup of water. Slowly pour the cornstarch slurry into the skillet, stirring continually until the sauce has thickened, 2 to 3 minutes. Stir in the sour cream. Return rolls to the sauce; serve immediately.

- In a shallow bowl, combine 1/3 cup flour, salt, pepper, paprika and ground mustard; dredge the steak. , In a large skillet, heat oil and butter. Cook steak on both sides until browned. Carefully add water; cover and simmer for 30 minutes., In a bowl, combine the sour cream, onion, garlic, soy sauce, brown sugar and remaining flour; stir until smooth. - Place the beef into a large bowl. Stir in the red wine, salt, and black pepper. Marinate for 10 minutes, then remove the beef and pat dry with a paper towel. Reserve the remaining marinade.
- Heat the olive oil in a large skillet over medium heat. Stir in the beef; cook and stir until browned, then transfer to a plate, 5 to 7 minutes. Drain any remaining grease from the skillet. Melt 2 tablespoons butter over medium heat. Stir in the onion, garlic, and a pinch of salt. Cook and stir until the onion is soft and translucent. Transfer the onion mixture to the plate with the prepared beef; set aside.
- Melt another 2 tablespoons butter in the same skillet over medium heat, and stir in the mushrooms. Cook and stir until the mushrooms are tender, about 10 minutes. - Set oven to 300 degrees.
- Cut the steaks into serving-size pieces.
- Lightly dust the beef pieces with flour, then pound with a meat mallet until thin and flattened.
- In a small cup mix together salt, cayenne, black pepper (if using) paprika and dry mustard powder, then season the flattened beef with the spice mixture.
- Heat oil and butter in a large oven-proof skillet over medium heat.
- Add in the steaks and lighty brown/sear on one side, turn over and brown on the other side; transfer to a plate.
