THE BEST RICE KRISPIE TREATS

Steps:

• Grease a 9x13 casserole pan with butter, set aside.
• In a large, light colored, heavy bottomed pot, like an enameled dutch oven, melt butter over medium heat. (If you want to brown your butter for a richer flavor, follow these directions before continuing on to step 3: How To Brown Butter)
• Once melted, add 2 bags of the marshmallows and stir until marshmallows are melted and the mixture is completely melted and smooth.
• Remove from heat, then immediately stir in the vanilla extract and salt. Fold in crispy rice cereal, moving quickly and then fold in remaining bag of mini marshmallows.
• Pour mixture into prepared pan. Using a buttered spatula, lightly press them into pan. Do not press them down too much, just spread them out. If you press them down too much they will become very dense and not as fluffy.
• Allow treats to rest for at least 1 hour at room temperature too cool. Slice into squares or cut into shapes and store any leftovers in an airtight container for up to 4-5 days.

• Slowly melt the butter in a large pan, low heat.
• Once butter is melted, add vanilla and 6 cups of marshmallows. Melt the marshmallows slowly.
• Right before the marshmallows are fully melted, add milk and the other 2 cups of marshmallows. Stir until the added marshmallows are starting to melt. (we don't want them fully melt so you will have a lumpy fluff)
• Add the Rice Krispie Cereal. Stir until the cereal is fully coated with the marshmallow fluff.
• Dump into an 8x11 dish. Use a greased spatula to spread out the treats and press down just a bit (you don't want them to so compact that they become rock hard).
• Allow to fully cool before cutting and serving.

• Grease a large mixing bowl with butter or baking spray and pour in the cereal.

• Grease an 8x8x2-inch pan with cooking spray.
• Melt butter in a large pot over medium heat. Add sweetened condensed milk. Stir with a rubber spatula until butter and milk are uniformly combined and small bubbles are forming in the center of the mixture, about 2 minutes. (When you first begin stirring they will look separated.) Add the bag of marshmallows and stir until melted and smooth. Add vanilla extract and salt and stir again. Remove from heat.
• Stir rice cereal and remaining cup of marshmallows into the pot to combine. Transfer to the prepared pan and press down lightly with a sheet of plastic wrap; don't pack them down too hard or they will lose their inherently soft and gooey texture. Sprinkle with flaky sea salt.
• Let set up on the counter for at least 1 hour. Cut into 16 squares.
