ULTIMATE BAKED BEANS
This recipe uses a variety of beans, including butter beans. It is always a hit at family gatherings. This dish may be made a day ahead and refrigerated. You may also add brown sugar to make it sweeter if you wish. Enjoy!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large casserole dish.
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown; drain. Reserve 3 strips whole, crumble remainder and set aside. Add the mushrooms and onions; cook until tender.
- In a large bowl, combine the crumbled bacon, mushrooms, onion, pork and beans, kidney beans, butter beans, ketchup, brown sugar, dry mustard, cider vinegar, Worcestershire sauce, and salt and pepper. Scoop bean mixture into prepared casserole dish. Place 2 or 3 strips of bacon on top of the bean mixture, if desired.
- Bake uncovered in a 350 degree oven until thick and bubbly, about 2 hours.

- Fry up the bacon and crumble in pieces. Cut up the green pepper and onion and cook in the bacon grease until soft. Combine all ingredients together. Let simmer in pan on low for at least an hour.
- Preheat oven to 350 degrees. Fry up the bacon and crumble in pieces. Remove the bacon with a slotted spoon and discard some grease. Add the green pepper and onion and fry until tender.
- Combine bacon, green pepper, and onion, pork and beans, ketchup, brown sugar, and Worcestershire sauce in a 9x13 inch pan. Bake covered for 1 hour. You can also simmer in a large pot on the stove for 1 hour.

KERI'S BAKED BEANS (THE WORLD'S BEST!)
I was trying to find a good baked bean recipe to bring over to a friends house for a party. I love barbecue, and I frequent a website called The Smoke Ring. The members on the site kept saying over and over again that Keri's Baked Beans were the best, so I decided to give them a try. Let me tell you, they are the BEST. - Brown pork sausage and remove from pan. When cooled, break into smaller bits.
- Brown bacon and remove from pan.
- Saute onion and green pepper in bacon grease and remove from pan.
- Mix all ingredients into a large baking dish and bake at 325º for 1 hour, or simmer on stove top in large pot for 30 minutes if you don't have time to do them in the oven.
- This is a rather spicy recipe due to the chipotle/cayenne powder. Feel free to leave it out if you'll be feeding those who prefer a less spicy taste.

- Adjust oven rack to lower-middle position and heat oven to 325 degrees.
- Fry bacon in large, deep sauté pan skillet until bacon has partially cooked and released about 1/4 cup drippings. Remove bacon from pan and drain on paper towels.
- Add onions and peppers to drippings in pan and sauté until tender, about 5 minutes.

- Add dry beans to a large container and fill with cold water. Soak overnight. The following day, add beans and their soaking water to a large pot and bring up to a simmer. Cook until tender, between 1 and 2 hours. Drain the beans while reserving the liquid.
- Preheat your oven to 325 degrees F.
- Pour your beans into a large casserole dish and spread evenly, layer bacon and onion on top.
- In a small saucepan add the molasses, salt, pepper, dry mustard, ketchup, Worcestershire sauce, and brown sugar. Slowly bring the sauce up to a boil, simmer for a minute or two. Pull sauce off the heat and pour over the beans. Pour in reserved cooking water from the beans until beans are just covered. Tightly cover the casserole dish with aluminum foil.

- Preheat oven to 350°F. In a large mixing bowl, add all of the sauce ingredients and stir to combine, whisking if needed.
- Add pork and beans (undrained), tomato sauce, and diced onion and bell pepper. Using a large spoon or spatula stir to combine beans with sauce.

- Preheat the oven to 300 degrees F. Cook the bacon in a large Dutch oven over medium-high heat until browned and crisp, about 8 minutes. Add the onion and garlic and cook until softened, 4 to 5 minutes. Add the paprika and toast, stirring, about 30 seconds.
