KERI'S BAKED BEANS (THE WORLD'S BEST!)

Keri's Baked Beans (The World's Best!) image

I was trying to find a good baked bean recipe to bring over to a friends house for a party. I love barbecue, and I frequent a website called The Smoke Ring. The members on the site kept saying over and over again that Keri's Baked Beans were the best, so I decided to give them a try. Let me tell you, they are the BEST. Don't let the apple pie filling scare you... A big thank you goes to Keri for developing this recipe. Enjoy

Provided by StayHome Chef

Categories     Beans

Time 1h30m

Yield 1 pot, 12 serving(s)

Number Of Ingredients 12

3 -4 slices bacon, diced
2 (28 ounce) cans baked beans, mostly drained (used Bush's Baked Beans. This was modified from the original 2 (16 oz)
1/2 cup barbecue sauce (I make my own sweet & spicy BBQ sauce, but Blues Hog was used in the original recipe)
1 lb pork sausage (The original called for leftover smoked pork or beef, I didn't have any BBQ leftover so I used this)
1 (21 ounce) can apple pie filling (chop up the big chunks some)
1 medium onion, chopped
1/2 green pepper, chopped
1/2 cup brown sugar
2 tablespoons Worcestershire sauce
2 tablespoons mustard (prepared)
1 teaspoon dried chipotle pepper (or cayenne pepper optional, to taste*)
1 teaspoon your favorite barbecue rub (Blues Hog rub was used in the original)

Steps:

  • Brown pork sausage and remove from pan. When cooled, break into smaller bits.
  • Brown bacon and remove from pan.
  • Saute onion and green pepper in bacon grease and remove from pan.
  • Mix all ingredients into a large baking dish and bake at 325º for 1 hour, or simmer on stove top in large pot for 30 minutes if you don't have time to do them in the oven.
  • This is a rather spicy recipe due to the chipotle/cayenne powder. Feel free to leave it out if you'll be feeding those who prefer a less spicy taste.

BEST EVER COWBOY BAKED BEANS

Best Ever Cowboy Baked Beans image

BEST EVER Cowboy Baked Beans are the perfect hearty side dish for your summer BBQ, Father's Day, Picnic or July 4th celebration!

Provided by Kathleen Pope

Categories     Side Dishes and Condiments

Time 2h10m

Number Of Ingredients 16

2 - 28 oz cans Pork & Beans (I used B&M original baked beans)
1/2 large sweet onion (diced (Vidalia or other sweet onion is fine))
1 large bell pepper (finely diced (I used yellow, use whatever color you like))
1/2 lb bacon (uncooked chopped into pieces (I prefer uncured, nitrate, nitrite free))
8 oz 1 cup organic tomato sauce (or 1/2 15 oz can)
1 cup organic Ketchup
1/2 cup molasses (unsulphured)
1/4 cup apple cider vinegar (or replace with white vinegar)
1/8 cup spicy brown mustard (heaping)
1/8 cup yellow mustard (heaping (making with only yellow mustard increase to rounded 1/3 cup))
2 Tablespoons Worcestershire Sauce
1 teaspoon garlic powder
1 teaspoon onion powder
Dash of Cayenne Pepper (more if you like heat)
Pinch of Kosher Salt
Couple Grinds of Black Pepper

Steps:

  • Preheat oven to 350°F. In a large mixing bowl, add all of the sauce ingredients and stir to combine, whisking if needed.
  • Add pork and beans (undrained), tomato sauce, and diced onion and bell pepper. Using a large spoon or spatula stir to combine beans with sauce.
  • Pour into casserole baking dish or cast iron skillet or dutch oven. Bake uncovered for 1 1/2 - 2 hours until bubbly and bacon is crispy. If crisper bacon is desired, with beans on middle rack, broil for 2-3 minutes until desired crispness is reached. Allow to rest for 10 minutes and serve warm.
  • Baked beans can be made ahead of time, refrigerate. Remove from fridge for 1 hour prior to baking, bake as directed.
  • Baked beans may be frozen, but only after they've been baked. Cool completely and transfer to freezer storage container. Beans are good up 7 days refrigerated; 6 months frozen.

BEST BARBECUED BEANS ON THE PLANET

Best Barbecued Beans on the Planet image

Inventor, restaurateur, rub manufacturer, and winner of barbecue contests too numerous to mention, "Oklahoma" Joe Davidson isn't given to false modesty. So when the Oklahoma pit master proclaims these to be the "best barbecued beans on the planet," you'd best sit up and take notice. Joe's secret is to start with a mix of beans-baked, red, and black-then cook them in a smoker. Enriching the beans with a pound of chopped smoked brisket doesn't hurt either! I've tinkered with Joe's recipe a little, but I think you'll find that these live up to their name. ShareTweetPin216 Shares

Provided by Steven Raichlen

Number Of Ingredients 1

1 pound smoked brisket or bacon, cut into 1/4-inch slivers 1 can (15 ounces) black beans 1 can (15 ounces) dark red kidney beans 3 cans (each 15 ounces) baked beans or pork and beans 1 large sweet onion, finely chopped 1 red bell pepper, cored, seeded, and finely chopped 1 poblano pepper or green bell pepper, seeded and finely chopped 4 cloves garlic, minced 3 to 6 jalapeño peppers, seeded and diced (for hotter beans, leave the seeds in) 2 cups sweet red barbecue sauce 1 1/2 cups firmly packed light brown sugar, or more to taste 1/2 cup Dijon mustard, or more to taste 2 teaspoons liquid smoke (optional) Coarse salt (kosher or sea) and freshly ground black pepper

Steps:

  • Step 1: If using bacon instead of brisket, place it in a large skillet over medium heat and fry until crisp and golden brown, about 5 minutes. Pour off all the bacon fat, saving a few tablespoons for the beans, if desired. ShareTweetPin216 Shares Step 2: Empty the cans of black and kidney beans into a colander and drain. Rinse the beans under cold running water and drain again. Place all the beans in a large nonreactive mixing bowl and add the onion, bell and poblano peppers, garlic, and jalapeños and stir to mix. Add the barbecue sauce, brown sugar, mustard, liquid smoke, if using, and brisket or fried bacon and stir to mix. Taste for seasoning, adding more brown sugar and/or mustard as necessary, and salt and black pepper to taste; the beans should be very flavorful. Transfer the bean mixture to the aluminum foil pan or pans. (If you used bacon, you can drizzle a few tablespoons bacon fat over the beans for extra flavor.) ShareTweetPin216 Shares Step 3: Set up the grill for indirect grilling and preheat to medium-low. If using a gas grill, place all of the wood chips or chunks in the smoker box or in a smoker pouch and run the grill on high until you see smoke, then reduce the heat to medium-low. If using a charcoal grill, preheat it to medium-low, then toss all of the wood chips or chunks on the coals. ShareTweetPin216 Shares Step 4: When ready to cook, place the pan of beans in the center of the hot grate, away from the heat, and cover the grill. Cook the beans until they are thick and richly flavored, about 1 hour. If the beans start to dry out, cover them loosely with aluminum foil. Remove the beans from the grill and let them rest for 15 minutes, then serve. ShareTweetPin216 Shares

THE BEST BAKED BEANS

The Best Baked Beans image

If you think baked beans only come from a can, you're in for a treat. Bacon, molasses and bourbon add depth and flavor to our classic recipe that's perfectly spiced with paprika, mustard and Worcestershire. A bit of brown sugar adds just the right amount of sweetness and to keep things easy, the beans require no soaking! They get tender and delicious right in the oven.

Provided by Food Network Kitchen

Time 5h

Yield 8 servings

Number Of Ingredients 12

8 ounces thick-cut bacon, cut into 1/2-inch strips
1 large yellow onion, diced
3 cloves garlic, minced
1 teaspoon paprika
One 8-ounce can tomato sauce
1/3 cup molasses
1/4 cup bourbon
2 tablespoons packed light brown sugar
1 tablespoon Worcestershire sauce
2 teaspoons prepared yellow mustard
Kosher salt and freshly ground black pepper
1 pound dried navy beans, picked through

Steps:

  • Preheat the oven to 300 degrees F. Cook the bacon in a large Dutch oven over medium-high heat until browned and crisp, about 8 minutes. Add the onion and garlic and cook until softened, 4 to 5 minutes. Add the paprika and toast, stirring, about 30 seconds. Add the tomato sauce, molasses, bourbon, brown sugar, Worcestershire sauce, mustard, 2 teaspoons salt and 1/2 teaspoon pepper. Bring to a simmer and cook 5 minutes.
  • Add the beans and 8 cups water. Bring to a boil, then cover the pot and transfer to the oven. Bake until the beans are tender, about 3 hours. (If the beans are still slightly firm, continue cooking, stirring every 45 minutes and adding more water if necessary to just cover.)
  • Once the beans are tender, uncover and increase the oven temperature to 325 degrees F. Bake until the beans are thick and browned, about 1 more hour. (Again, if the beans need more time, continue cooking, stirring occasionally and adding more water if necessary.) Remove from the oven and thin with water if necessary.
