The Best Meatloaf I've Ever Made image

When I was growing up, my mom never ever made meatloaf and I always wanted to try it - I finally tried it at a restaurant and loved it. When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

Number Of Ingredients 14

1 tablespoon butter
¼ cup minced onion
2 cloves garlic, minced
1 ½ teaspoons salt
1 ½ teaspoons freshly ground black pepper
2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 ½ tablespoons sour cream
1 ½ tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
¼ cup milk
3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
  • In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
  • Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
  • In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.

2 large eggs
2/3 cup whole milk
3 slices bread, torn
1/2 cup chopped onion
1/2 cup grated carrot
1 cup shredded cheddar or part-skim mozzarella cheese
1 tablespoon minced fresh parsley or 1 teaspoon dried parsley
1 teaspoon dried basil, thyme or sage, optional
1 teaspoon salt
1/4 teaspoon pepper
1-1/2 pounds lean ground beef
TOPPING:
1/2 cup tomato sauce
1/2 cup packed brown sugar
1 teaspoon prepared mustard

Steps:

  • In a large bowl, beat eggs. Add milk and bread; let stand until liquid is absorbed. Stir in the onion, carrot, cheese and seasonings. Crumble beef over mixture and mix well. , Shape into a 7-1/2x3-1/2x2-1/2-in. loaf in a shallow baking pan. Bake, uncovered, at 350° for 45 minutes. , Combine the topping ingredients; spoon half of the mixture over meat loaf. Bake 30 minutes longer or until meat is no longer pink and a thermometer reads 160°, occasionally spooning remaining topping over loaf. Let stand 10 minutes before serving.

Amazing homemade Meatloaf Recipe. The meatloaf is so tender and juicy on the inside with a sweet and tangy sauce that glazes the meatloaf and adds so much flavor!

2 lbs ground beef (85% or 90% lean)
1 med onion (finely chopped)
2 large eggs
3 garlic cloves (minced)
3 Tbsp ketchup
3 Tbsp fresh parsley (finely chopped)
3/4 cup Panko breadcrumbs
1/3 cup milk
1 ½ tsp salt (or to taste)
1 ½ tsp Italian seasoning
¼ tsp ground black pepper
½ tsp ground paprika
3/4 cup ketchup
1 ½ tsp white vinegar
2 ½ Tbsp brown sugar
1 tsp garlic powder
½ tsp onion powder
¼ tsp ground black pepper
¼ tsp salt

Steps:

  • Line a 9"x5" loaf pan with parchment paper and preheat oven to 375°F.
  • In a large bowl, add all of the ingredients for the meatloaf. Mix well to combine.
  • Add meat to the loaf pan, gently press meat down and shape evenly and bake meatloaf at 375˚F for 40 minutes.
  • In a small bowl, mix all of the ingredients together for the sauce. Spread the sauce over meatloaf then return to oven and bake additional 15-20 minutes or until the internal temperature is 160˚F. Rest meatloaf 10 minutes before slicing. Drizzle with baking juices from the pan.

1 cup milk
1 egg, lightly beaten
3/4 cup soft bread crumbs
1 medium onion, chopped
1 tablespoon chopped green pepper
1 tablespoon ketchup
1-1/2 teaspoons salt
1 teaspoon prepared horseradish
1 teaspoon sugar
1 teaspoon ground allspice
1 teaspoon dill weed
1-1/2 pounds lean ground beef (90% lean)
Additional ketchup

Steps:

  • In a large bowl, combine the first 11 ingredients. Crumble beef over mixture and mix well. Press into an ungreased 8x4-in. loaf pan. , Bake at 350° for 1 hour. Drizzle top of loaf with ketchup; bake 15 minutes longer or until a thermometer reads 160°.

3 T butter
3/4 c. chopped onion
3/4 c. scallions
1/2 c. chopped carrots
1/4 c. chopped celery
1/4 c. chopped green pepper
1/4 c. chopped red pepper
2 t garlic
salt
1 t black pepper
1/2 t white pepper
1/4 t cayenne pepper
1 t cumin
1/2 t. nutmeg
3 eggs
1/2 c. ketchup
1/2 c. half and half
2 lbs. ground beef
1/2 - 3/4 lb. ground pork
3/4 c. bread crumbs

Steps:

  • Preheat oven to 375. Melt the butter in a heavy skilled and add the onions, scallions, carrots, celery, bell peppers and garlic. Cook, stirring often, until the moisture from the vegetables has evaporated, 10 minutes. Set aside to cool; then refrigerate, covered, until chilled, at least 1 hour. Combine the salt, black pepper, white pepper, cayenne, cumin, nutmeg and eggs in a mixing bowl, and beat well. Add the ketchup and half and half and blend thoroughly. Add the beef and pork and bread crumbs to the egg mixture. Then add the chilled vegetables and mix thoroughly with your hands, kneading for 5 minutes. With damp hands, form the mixture into an oval, resembling a long loaf of bread. Place the meat loaf in a baking dish, and place the dish inside a larger pan. Pour boiling water into the larger pan until it reaches halfway up the sides of the baking dish. Place the pan inthe oven and bake for 45-60 minutes. Remove the baking dish from the water bath, and let the meat loaf rest for 20 minutes before slicing and serving.

This recipe was my great grandmother's and to this day everybody who tries it just loves it. The secret is the sauce: it is just the right balance of sweetness. Mmm it's just so yummy.

750 g beef mince (depending on the amount of people being fed)
1 cup breadcrumbs
1 teaspoon curry powder
1 egg
1 onion (finely chopped)
milk (enough to make the misture very moist)
1 cup tomato sauce
1/4 cup Worcestershire sauce
1 teaspoon coffee
1 teaspoon butter
1 tablespoon vinegar
1/2 cup sugar
1/2 cup water
3 drops lemon juice

Steps:

  • MEATLOAF:.
  • Combine all meatloaf ingredients except the milk in a large bowl (I find this is easiest to do with hands).
  • Add the milk until the mixture is very moist
  • Form the mixture into a loaf shape and place in a baking/casserole dish big enough for the loaf to fit with additional room.
  • Place into 180º pre-heated oven for 30 minutes. Then pour sauce over meatloaf ensuring the entire surface gets a coating of sauce and replace in oven for another 30 minutes.
  • Remove from oven and serve.
  • SAUCE:.
  • Combine all ingredients in a saucepan on a medium heat until it just begins to come to the boil.
  • Pour over meatloaf.
