BOILERMAKER TAILGATE CHILI
This is the chili recipe the gang eats at Purdue Boilermaker football games. I always prep and cook the chili the night before and then reheat the next day. This is a combination of many different tomato-based chili recipes. Good luck and enjoy.

Steps:
- Heat a large stock pot over medium-high heat. Crumble the ground chuck and sausage into the hot pan, and cook until evenly browned. Drain off excess grease.
- Pour in the chili beans, spicy chili beans, diced tomatoes and tomato paste. Add the onion, celery, green and red bell peppers, chile peppers, bacon bits, bouillon, and beer. Season with chili powder, Worcestershire sauce, garlic, oregano, cumin, hot pepper sauce, basil, salt, pepper, cayenne, paprika, and sugar. Stir to blend, then cover and simmer over low heat for at least 2 hours, stirring occasionally.
- After 2 hours, taste, and adjust salt, pepper, and chili powder if necessary. The longer the chili simmers, the better it will taste. Remove from heat and serve, or refrigerate, and serve the next day.
- To serve, ladle into bowls, and top with corn chips and shredded Cheddar cheese.

C. V. WOODS WORLD CHAMPIONSHIP CHILI CON CARNE
Award winning chili recipe. I think I would kick it up a bit by adding chicken bouillon and a bouquet garni to the broth. Being a fan of cilantro, I would increase the amount considerably. Also, topping a serving with a small amount of cheese would be great.

WORLD CHAMPION TEXAS CHILI
This recipe is extensive but if you want to win, you need to thorough. The balance of flavors and contrasting textures in this bowl of red chili make your mouth water until the last spoon is gone. I do my prep by making each step in the recipe a separate Ziplock bag. This makes it easy to cook by dumping the bags of spices into...

- Choose the Right Cookware. "I like to use a thick-walled pot with copper diffuser rings in the base, which help distribute the heat evenly. Even heat makes a smooth pot of chili.
- Opt For Fresh. "Fresh produce! Wegmans has the best produce section in the area. Only the freshest will do." — Willis.
- Use High-Quality Meats. "The most important part of making anything including chili is to use high-quality ingredients. This means making sure that all of your produce is nice and fresh, and that you are using high-quality meat."
- The Type of Meat is Key. "For great-tasting chili, select chili grind at your local supermarket or butcher. You can also use tri-tip cut into bite-sized cubes.
- Choose a Meat That Will Stand Up to Heat. "Chili takes a long time to cook and develop the right flavor, so you need a meat that will stand up to extensive cook times.
- Cut Meats Evenly. "Whatever meat you decide to use should be cut as evenly as possible. If you have meat that is of varying sizes, the different size pieces will not cook evenly."
- Experiment With Spice Blends. "Play around with different spice blends to find a few you like that work well together. I order most of my spices from Mild Bill's Spices.
- Grind Spices The Old-School Way. "Proper equipment makes the difference! Use a mortar and pestle to bring out the flavor of your spices! Before adding spices to your chili, be sure to grind them, and then fold them in gently to create a savory taste.
- Prevent Grittiness. "To make sure that the sauce of the chili is not gritty, you can put all of your dry spices in a spice grinder or a coffee grinder. This will help to make sure the spices are broken down so when you add them to your chili, the sauce will be nice and smooth."
- Space Out Your Spices. "Using fresh spices is crucial to ensuring a hearty chili taste. Do you like your chili mild, hot, or somewhere in between? Don't be afraid to experiment with fresh spices from your grocery market, or online at Pendery's or Mild Bill Spices.
